1 pound ground pork sausage
1 (8 ounce) package refrigerated crescent roll dough, or as needed
8 ounces mild Cheddar cheese, shredded
6 eggs
½ cup milk
½ teaspoon salt
ground black pepper to taste

Steps:

  • Heat a skillet over medium heat. Crumble sausage into skillet; cook and stir until browned and crumbly, 5 to 7 minutes; drain and discard grease. Cool sausage.
  • Grease a 9x13-inch baking dish. Line the baking dish with crescent roll dough.
  • Sprinkle cooled sausage and Cheddar cheese over crescent roll dough. Cover the baking dish with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and black pepper together in a bowl. Pour egg mixture over sausage and cheese in the baking dish. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove and discard aluminum foil and reduce oven temperature to 325 degrees F (165 degrees C). Continue baking until egg mixture is set, 15 to 25 minutes.

Well, that and the actual sauce of onion and anchovies--ingredients you might want to keep secret from guests. Also key is the extremely sticky dough, which bakes into a feather-light, spongy crust that contrasts perfectly with the crumbly topping. Garnish with the customary dried oregano if desired.

2 cups warm water (100 to 110 degrees F (40 to 45 degrees C))
1 (.25 ounce) package active dry yeast
1 ½ teaspoons kosher salt
1 teaspoon white sugar
3 tablespoons olive oil
4 ⅔ cups all-purpose flour, or more as needed
2 tablespoons olive oil
2 large yellow onions, diced
salt to taste
1 teaspoon red pepper flakes
1 teaspoon freshly ground black pepper
1 tablespoon tomato paste
1 teaspoon dried oregano
9 oil-packed anchovy fillets, drained and 1 tablespoon oil reserved
1 ½ cups marinara sauce
¼ cup water
¾ cup fine plain dry bread crumbs
1 cup grated Pecorino Romano cheese
6 tablespoons olive oil, divided
3 ounces shredded mozzarella cheese
3 ounces shredded aged provolone cheese

Steps:

  • Pour warm water into the bowl of a stand mixer fitted with the dough hook. Sprinkle yeast on top and let bloom. Add salt, sugar, olive oil, and flour. Knead, scraping down sides as necessary, until dough is very elastic and sticky, 6 to 7 minutes. Cover and let rise in a warm place until doubled in size, about 90 minutes.
  • Heat olive oil over medium heat. Add onions and salt. Saute, stirring occasionally, until onions soften, sweeten, and turn translucent, 6 or 7 minutes. Add red pepper flakes, black pepper, tomato paste, oregano, and anchovies; mix until anchovies dissolve. Add marinara sauce, rinse out the container with water, and add the water. Stir and let simmer on medium-low heat until flavors come together, about 20 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine bread crumbs and Pecorino Romano cheese in a bowl; toss together with a fork. Add the reserved anchovy oil and 2 tablespoons olive oil. Mix until bread crumbs are well moistened.
  • Generously coat a rimmed 13x18-inch sheet pan with up to 3 tablespoons olive oil. Oil your hands and turn dough out onto pan. Pull, stretch, and press it to the sides of the pan, pausing to let dough rest whenever it shrinks back too quickly.
  • Spoon sauce over the dough and spread up to about 1/2 inch from the edges. Add mozzarella and provolone cheeses. Sprinkle bread crumb mixture evenly on top; do not press down. Drizzle remaining olive oil on top.
  • Bake in the preheated oven until pizza is well browned is bottom is cooked, about 35 minutes. Bake for as as long as you can without the crumbs on top burning so that the crust cooks as much as possible.
  • Slide pizza onto a cooling rack to prevent the bottom from getting soggy. Transfer to a cutting board once cooled.

1 + 1/4 teaspoons salt
2 teaspoons instant yeast
2 tablespoons olive oil
3/4 cup + 2 tablespoons to 1 cup + 2 tablespoons lukewarm water*
Topping
3 large yellow onions, thinly sliced
olive oil, for sauteing
1 teaspoon brown sugar
Sea salt and fresh black pepper
28-ounce can chopped or diced tomatoes
3 or 4 anchovies, chopped, optional
1 pound mozzarella cheese, shredded
1 cup Parmesan cheese, grated
2 + 1/2 cups dried bread crumbs, like Panko or seasoned Italian
6 tablespoons olive oil
2 teaspoons oregano, divided

Steps:

  • .1. Combine all of the crust ingredients and mix and knead to make a smooth, soft dough, using a stand mixer, bread machine, or your hands. 2. Place the dough in a lightly greased bowl and allow it to rise until puffy about 90 minutes. 3. While the dough rises get your toppings ready. Fry the onions in a large skillet over medium heat with a few tablespoons of olive oil, sugar, and season with salt and pepper. Stir every five minutes until browned, about 25-30 minutes. 4. Add in the tomatoes, anchovies and a teaspoon of oregano, simmer for 20 minutes. Turn off heat and allow to cool. 5. Stir together the bread crumbs, oil and oregano, set aside. 6. Spray a large rimmed baking sheet (a 13″ x 18″ half sheet pan) with non-stick spray. Drizzle it with olive oil, tilting the pan so the oil spreads out a bit. 7. Gently deflate the risen dough, and stretch it into an oval in your hands. Put it on the baking sheet and gently knead and stretch it out to fit the pan. If you have a hard time stretching it leave it alone for five minutes and try again. 8. Cover the dough, and let it rise again for about 90 minutes. 9. Preheat oven to 425 degrees F. Uncover the dough and sprinkle the mozzarella evenly over top, then spread the tomato/onion sauce over top, sprinkle with Parmesan, then the bread crumbs. 10. Bake the pizza for 35 minutes, or until the crust and crumbs are brown. Remove from the oven and let set for 5 minutes before slicing. To keep the crust crispy cut pizza in half or in quarters and place on a wire cooling rack. Slices can be cut with kitchen shears. Serve hot or cold. I

1 pizza crust dough, homemade or store bought (for these, prepared pizza crust located in the refrigerated area works well.)
1 can of pizza sauce, or your own homemade
1 bag of shredded mozzarella
assorted pizza toppings, such as sausage, pepperoni, green and red pepper, red onion, olives, mushrooms, yellow banana pepper rings, etc. chopped fairly small

Steps:

  • 1. Roll out your dough, as for pizza, on a lightly floured surface. Cut into desired Christmas cookie cutter shapes. If serving as appetizers, don't make them too large. If you want to make these for a cute lunch, larger is fine.
  • 2. Transfer to prepared cookie sheet. Add sauce, then cheese, then toppings, as for pizza.
  • 3. Bake at 350 degrees until crust is golden and cheese has melted and is bubbly. Make enough... they will go very quickly!

1 (12 ounce) package real milk chocolate chips (or dark, if you prefer)
1 lb white almond bark, cut into small (1-inch)
2 cups miniature marshmallows
1 cup crisp rice cereal
1 cup salted peanuts or 1 cup unsalted peanuts
1 (6 ounce) jar red maraschino cherries, drained, and cut in half
3 tablespoons green glazed cherries, drained and quartered
1/3 cup angel flake coconut
1 tablespoon oil

Steps:

  • Microwave chips and 14 oz almond bark in a 2 qt microwave-safe bowl on HIGH for 2 minutes. Stir. Continue microwaving 1 to 2 minute or until smooth when stirred, stirring every 30 seconds.
  • Stir in marshmallows, cereal and peanuts. Pour onto greased 12-inch pizza pan. Top with cherries; sprinkle with coconut.
  • Microwave remaining 2 oz. almond bark and oil in a 1 cup measure for 1 minute and stir. Continue microwaving 30 seconds to 1 minute or until smooth when stirred, stirring every 15 seconds. Drizzle over coconut.
  • Refrigerate until firm (usually 3+ hours). Store at room temperature. Cut into wedges. Makes about 12 large slices.

145g pizza base mix
6 tbsp tomato pasta sauce
large handful (about 100g) leftover stuffing (a sausage stuffing works well for this)
large handful (about 100g) leftover cooked turkey , shredded
100g mozzarella , sliced
small pack sage , leaves picked
1 tbsp olive oil

Steps:

  • Heat oven to 220C/200C fan/gas 7. Prepare the pizza base mix following pack instructions. Once rolled out, leave to rest for 10 mins, then top with the pasta sauce.
  • Scatter over the stuffing and turkey, then top with the mozzarella. Toss the sage leaves with the oil, then scatter over the pizza, drizzling over any remaining oil. Bake for 10-12 mins until the crust is crisp and the cheese has melted.

1/2 cup mixed salted nuts
1/2 cup miniature marshmallows
1/2 cup crispy rice cereal

Steps:

  • In top of double boiler, melt 6 oz. of the almond bark with all of the chocolate. Stir in nuts, marshmallows and cereal.

1/4 lb sliced pepperoni
1/2 lb ground beef, browned
1 medium onion, chopped

1 green pepper, chopped
16 ounces tomato sauce, divided
1 cup grated swiss cheese, divided
16 ounces sliced mozzarella cheese, divided
4 ounces canned chopped mushrooms, drained
1/2 teaspoon oregano
1/2 teaspoon basil

Steps:

  • Cook spaghetti according to package directions.
  • Boil pepperoni in water for 5 minutes to remove fat; drain.
  • In medium skillet, saute onion in one tablespoon butter until soft.
  • Remove from skillet and saute bell pepper in 1 tablespoon butter until partially soft.
  • Preheat oven to 350 degrees.
  • Pour remaining butter into 9 x 13 baking dish.
  • Toss spaghetti in butter.
  • Cover with 8 ounces tomato sauce.
  • In order, add half of Swiss cheese, pepperoni, half of mozzarella, all mushrooms and onions.
  • Next spread browned ground beef, oregano, basil and green peppers.
  • Top with remainder of Swiss cheese, sauce and mozzarella. Bake 20 to 25 minutes.
