1 container Betty Crocker™ Rich & Creamy vanilla frosting
Betty Crocker™ green and red gel food colors

Steps:

  • Line 8-inch square pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
  • In large microwavable bowl, microwave white chips uncovered on High 1 minute. Spoon frosting over chips. Microwave on High 30 seconds; stir. If necessary, continue to microwave in 15-second increments until mixture can be stirred smooth.
  • Place 3/4 cup fudge mixture into each of 2 small bowls, leaving remaining untinted fudge mixture in bowl. Tint 1 bowl green and 1 bowl red by stirring in each food color to desired color.
  • Drop heaping tablespoons of green, red and white fudge mixture in bottom of pan to create random pattern. Pull table knife through layers for marbled design. Refrigerate uncovered until set, about 1 hour.
  • Remove from pan by lifting foil; peel foil away. Cut into 8 rows by 8 rows. Store covered in refrigerator.

2-1/2 cups confectioners' sugar
2/3 cup milk
12 ounces white baking chocolate, chopped
1/4 teaspoon almond extract
3/4 cup sliced almonds, toasted
1/4 cup chopped dried apricots
1/4 cup dried cherries
1/4 cup dried cranberries

Steps:

  • Line a 9-in. square pan with foil and grease the foil with 1 teaspoon butter; set aside. , In a large heavy saucepan, combine the confectioners' sugar, milk and remaining butter. Cook and stir over medium heat until combined. Bring to a boil; boil for 5 minutes without stirring. Reduce heat to low; stir in white chocolate. 1 3/4 cups sugar
1/2 cup butter
3/4 cup prepared dairy eggnog
1 (12 ounce) package premium white chocolate chips
1/2 teaspoon grated nutmeg
1 (7 ounce) jar marshmallow creme
3 tablespoons Captain Morgan's spiced rum (or 1 teaspoon rum extract)

Steps:

  • Bring the sugar, butter and eggnog to a full boil in a heavy medium-size saucepan.
  • Continue to boil for 8 to 10 minutes over medium heat, or 234°F on a candy thermometer, stirring constantly to prevent scorching.
  • Remove from heat and stir in the white chocolate chips and the grated nutmeg, stirring until the chocolate is melted.
  • Add marshmallow creme and the rum or rum extract; beat until well blended.
  • Pour into a buttered 8 or 9-inch square pan.
  • Cool at room temperature, then cut into squares.
  • Store in an airtight container in the refrigerator. May be frozen for up to three weeks.

We have been making this fudge at the holiday season for years, if cooking time is followed directly this will produce a wonderful fudge that tastes just as good maybe even better than the fudge prepared with a candy thermometer but you won't need one for this! --- this is sure to become a favorite at the holiday season --- use only store-bought full-fat eggnog for this :)

1/8 cup butter (no substitutes)
2 3/4 cups white sugar
1 cup commercial good quality eggnog (not low fat)
6 ounces white chocolate chips
1 1/2 cups mini marshmallows
1 cup almonds, chopped coarsely
1/2 teaspoon cinnamon
1 pinch nutmeg (optional)

Steps:

  • Line a 9x9-inch pan with aluminum foil; set aside.
  • In a heavy bottomed saucepan, add eggnog and sugar, bring to a rolling boil over medium to med-high heat (watch that mixture does not boil over the pot, if boiling to hard, turn down heat slightly, but continue a rapid boil), stirring constantly; boil for 2 minutes (this must be timed for exactly 2 minutes).
  • Remove from heat; stir in the marshmallows, cinnamon and pinch of nutmeg (if using).
  • Put saucepan back on element; bring back to a rolling boil for another 6 minutes, stirring constantly, again, turn down the heat if mixture is boiling to hard.
  • The mixture will start to turn a brown colour, which is normal.
  • After boiling for the full 6 minutes; remove from heat; add the butter, vanilla chips and nuts.
  • Stir rapidly, until mixture has a glossy appearance, and the chips and butter are well mixed.
  • Pour the mixture into the prepared foil-lined pan.
  • Cool at room temperature.
  • Remove from pan lifting up sides of foil.
  • Remove the foil from the fudge; cut in small squares.

My grandma always made this at Christmas. Then my mom, and when I started baking, I also made this. It's easy and uses cranberry concentrate instead of the usual dried or fresh. It is now a family tradition with us and I hope you enjoy it as much as we do.

1 (12 ounce) package white chocolate chips
1/2 teaspoon orange extract
7 ounces marshmallow cream
1/3 cup evaporated milk
1/3 cup frozen cranberry juice concentrate (or mix)
2 1/2 cups sugar
1/4 cup butter

Steps:

  • Butter or spray a 9x9 pan.
  • In a 3-4 quart bowl put the white chips, orange extract, and marshmallow cream; set aside.
  • In a medium size sauce pan put the milk, sugar and cranberry concentrate; stir. Bring this to a boil and cook to 235°F on candy thermometer (about 9 minutes).
  • When mixture reaches 235°F, take off the heat and add butter. Stir and mix it well, and then pour over the white chips, extract, and marshmallow cream. Stir this well till all the chips are melted.
  • Put into prepared pan.
  • Let it cool and then refrigerate till nice and firm.

9 ounces butterscotch chips (3/4 of a 12-ounce bag)
1 (14 ounce) can sweetened condensed milk

8 ounces walnut halves
1/2 cup currants (a couple of handfuls) (optional)
candied red cherries, for garnish
green glazed cherries, for garnish

Steps:

  • Lightly grease a 8-inch cake pan with softened butter.
  • Place a heavy pot on the stove and preheat it over low heat.
  • Add chips and milk and stir until chips are melted and milk combined.
  • Save the empty condensed milk can.
  • Stir in vanilla and remove fudge from heat.
  • Add nuts and currants and stir in immediately.
  • Cover empty condensed milk can with plastic food wrap and center it in the greased cake pan.
  • Spoon fudge into pan around can, making sure to recenter can if it drifts.
  • The fudge will set up almost immediately.
  • Garnish can only be added in the first minute or 2 the fudge is in the pan, so work quickly.
  • Decorate your wreath with"holly" made from cut candied red and green cherries.
  • A wreath left plain can be garnished with a pretty fabric bow when serving.
  • Chill covered in the refrigerator and slice fudge very thin when ready to serve, as a little goes a long way.

1 cup heavy cream
1 teaspoon maple flavored extract

  • In a large glass bowl, stir together the white sugar, brown sugar, cream and maple extract. Place in the microwave, and cook for 11 minutes on full power, or until a candy thermometer registers 234 - 240 degrees F (112 - 115 degrees C). Do not microwave the thermometer.

(You'll use the excess paper to pull the fudge out of the pan.) Place the condensed milk, butter, and salt into a medium-size saucepan. Cook over medium-low heat until the butter is melted and the mixture is hot. Do not boil. Remove the saucepan from the heat, add the chocolate and vanilla and stir until the chocolate has melted completely. Pour the mixture into the prepared baking pan and quickly insert a bamboo skewer or toothpick into the red gel food coloring jar and dot the fudge about 12-14 times. Repeat the process with the green food coloring. (You'll need to dip the bamboo skewers or toothpicks at least 2 times each into the gel colorings to have enough color in the fudge.) As quickly as possible, with a clean toothpick, swirl the fudge until most of the color has blended and a pretty pattern has formed. Press a piece of plastic wrap against the surface to prevent a skin from forming. Let it cool completely for at least 12 hours, or overnight.

3 cups white sugar
⅔ cup heavy cream
¾ cup butter
1 (7 ounce) jar marshmallow creme
1 (11 ounce) package white chocolate chips
red food coloring, as desired
green food coloring, as desired

Steps:

  • Grease a 9x13 inch pan.
  • In a medium saucepan combine sugar, cream and butter. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Stir in marshmallow creme and white chocolate chips; mix well. Reserve 2 separate 1/2 cups of mixture and set aside.
  • To one of the reserved 1/2 cups mixture add red food coloring until desired shade of red is achieved. To the other 1/2 cup of mixture add green food coloring until desired shade of green is achieved.
  • Pour white mixture into prepared pan. Pour dots of both the red and green mixtures across the top. Using a toothpick or knife, swirl colors throughout the white.
  • Chill for 2 hours and cut into 2 inch squares.

1 small can (5 oz.) evaporated milk (about 2/3 cup)
3 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, chopped
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 tsp. vanilla
1/4 cup green sprinkles

Steps:

  • Line 9-inch square pan with foil, with ends of foil extending over sides. Bring sugar, butter and evaporated milk to full rolling boil in 3-qt. saucepan on medium heat, stirring constantly. Cook 4 min. or until candy thermometer reaches 234°F, stirring constantly. Remove from heat.
  • Add chocolate and marshmallow creme chocolate is completely melted and mixture is well blended. Stir in vanilla.
  • Pour into prepared pan; spread to cover bottom of pan. Cool 5 min. Top with sprinkles. Use foil handles to lift fudge from pan. Cut into 40 small Christmas tree shapes with 1-inch cookie cutter.

A fantastic fudge recipe. It is easier to make than the cooked varieties that require a candy thermometer, but it sets up better than some of the other recipes I've tried that use marshmallows or marshmallow cream. The best of both worlds!! I rich, dense fudge that's fairly simple to prepare. NOTE: I prefer to use dark chocolate chips for a richer, fudgier taste. See the bottom of the instructions for variations.

½ cup good-quality unsweetened cocoa (such as Guittard Cocoa Rouge), not packed
½ cup real maple syrup
1 teaspoon vanilla extract
1 pinch salt
½ cup refined coconut oil, melted
½ cup chopped walnuts
1 teaspoon unsweetened cocoa powder for dusting, or as needed

Steps:

  • Place 1/2 cup cocoa powder into a mixing bowl and stir in maple syrup, vanilla extract, and salt. Pour in melted coconut oil and stir until thoroughly combined. Continue to stir until coconut oil hardens and the mixture looks grainy and thick.
  • Place walnuts into a dry skillet over medium heat; shake skillet until walnuts are hot and smell nutty and fragrant, 30 seconds to 1 minute. Turn off heat and let walnuts cool slightly, about 1 more minute.
  • Stir warm walnuts into fudge; mixture will soften from the walnuts' heat. Stir fudge until smooth and glossy.
  • Pour fudge into a silicone mold for making small ice cubes. Scrape any excess fudge back into the mixing bowl. Smooth the tops of the fudge pieces.
  • Wrap mold in plastic wrap and freeze until fudge is firm and set, at least 30 minutes. Remove plastic wrap and pop each fudge piece out of the mold. Dust pieces lightly with 1 teaspoon cocoa powder before serving or packaging as gifts. Serve cold; freeze leftovers.
