BUTTERSCOTCH CRUNCHIES

1 Pkg 11oz Butterscotch Morsels
1/2 cup Peanut Butter
4 cups Corn flakes

Steps:

  • In a large pan, melt butterscotch morsels over low heat.
  • Add peanut butter, stir well. Continue cooking over low heat until melted and blended well.
  • Remove from heat. Add corn flakes and mix until well coated.
  • Line two cookie sheets with wax paper.
  • Drop by spoonful onto prepared cookie sheets.
  • Optional, top with festive/seasonal sprinkles.
  • Put in fridge until chilled about 30-45 minutes.
  • Once chilled, remove from fridge.
  • Store in the fridge in an air tight container with wax paper between each layer of crunchies.
  • Enjoy!

1/2 cup butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1/2 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1 cup oatmeal (dry)
1/2 cup coconut
1/2 cup walnuts, chopped
1 cup corn flakes

Steps:

  • Preheat oven to 350 degrees.
  • Cream butter and sugars together.
  • Beat egg and vanilla, add to creamed mixture.
  • Sift flour, soda, salt and baking powder together.
  • Add dry ingredients to wet, and stir to blend.
  • Add remaining ingredients and combine.
  • Roll dough into 1 inch balls and place on greased cookie sheet, 2 inches apart.
  • Bake 10-15 minutes, until browned.

Several years ago, I took a basic shortbread recipe and turned it into a much more festive Christmas cookie. These gems are now a family favorite and are among the best Christmas cookies of the holiday season. -Heather Carter, Wasilla, Alaska

1 cup butter, softened
1/2 cup sugar
1 teaspoon peppermint extract
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
Red and green paste food coloring
8 ounces dark chocolate candy coating, melted
3/4 cup crushed peppermint candies

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in extracts. Gradually beat in flour. Divide dough in half; tint 1 portion red and the other green. Wrap each in waxed paper; refrigerate 2 hours or until easy to handle., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake 8-10 minutes or until firm. Remove from pans to wire racks to cool completely., Dip half of each cookie into melted candy coating; allow excess to drip off. Sprinkle with crushed candies. Place on waxed paper; let stand until set.
