Steps:

  • Mix ingredients together until well blended.
  • Hand form into small balls.
  • Bake at 300° up to 15 minutes. (These will not brown).
  • While balls are still warm, roll into powdered sugar.

These balls are so quick and easy to make. They make a nice addition to the baked goodies that you give as gifts. Make these about a week before you want to serve them as they mellow and the sharp strong alcohol taste blends in more with the other ingredients. Store in a tin with a tight lid. This year I couldn't find the Vanilla wafers so I used chocolate and I like them even more. To form the balls I use two teaspoons as the dough is quite moist. I store them in the freezer - they don't go hard and they are so good ice cold

2 1/2 cups vanilla wafers, crushed (a 250g box of Christies vanilla wafers equals 2 1/2 cups)
2 tablespoons cocoa
1 1/4 cups icing sugar
1/2 cup spiced rum (the rum is called Spiced Rum) or 1/2 cup Bourbon
2 tablespoons white corn syrup (one brand is Karo)
1 cup pecans or 1 cup walnuts, broken

Steps:

  • Sift the cocoa with 1 cup sugar.
  • Stir in the spiced rum mixed with the syrup.
  • Add crushed vanilla wafers and nuts.
  • Mix thoroughly.
  • Shape mixture into walnut sizes balls and dredge with remaining sugar or leave them plain.
  • Store in a tin.

1 cup semi-sweet chocolate chips
1 can (5 ounces) evaporated milk
1 1/4 cups vanilla cookie crumbs
1 1/4 cups ginger snap cookie crumbs
1/2 cup confectioners' sugar, sifted
1/2 cup finely chopped walnuts
1/3 cup Kahlúa liqueur
1 teaspoon pure vanilla extract
2 cups shredded coconut

Steps:

  • 1. Melt the chocolate chips in evaporated milk in a pot over low heat, stirring constantly, until well blended. Remove from the heat and set aside to cool for about 30 minutes. Combine all remaining ingredients except the coconut; stir into the chocolate mixture, blending well.
  • 2. Shape the mixture into 1- to 1 1/2-inch balls (if the dough is too moist, add up to 1/3 cup more cookie crumbs), then roll in coconut. Let air-dry for 2 hours on waxed paper. Transfer to an airtight container; store in refrigerator. Serve in pleated, brown-paper candy cups.

4 cups shredded cheddar cheese
1 cup chopped pecans
1/4 cup evaporated milk
1 can (4-1/4 ounces) chopped ripe olives, drained
2 garlic cloves, minced
1/2 teaspoon salt
Minced fresh parsley, chopped pecans and paprika
Assorted crackers

Steps:

  • In a small bowl, beat cream cheese and cheddar cheese. Stir in the pecans, milk, olives, garlic and salt. Divide into thirds; roll each into a ball. , Roll 1 ball in parsley and 1 in nuts. Sprinkle the third with paprika. Cover and refrigerate. Remove from the refrigerator 15 minutes before serving. Serve with crackers.

700 g crisp rice cereal (Christmas colored Rice Krispies)
400 g large marshmallows
40 caramel squares
14 ounces Eagle Brand Condensed Milk
2 tablespoons butter

Steps:

  • In a double boiler, melt caramels, butter, and milk. Keep water in the bottom of pot to a minimum boil.
  • Dip one marshmallow into melted mix using a fork (or something sharp).
  • Remove, and roll in Christmas colored Rice Krispies.
  • Place on tray covered with wax paper.
  • Repeat until bag of marshmallows is finished.
  • Freeze marshmallow balls if desired.
  • Enjoy.

1 stick butter (softened)
1 1/3 c peanut butter (smooth or crunchy)
4 c powdered sugar
24 maraschino cherries (chopped fine)
2 c coconut
DIPPING CHOCOLATE
6 oz chocolate chips (milk, semi-sweet or dark, your choice)
6 Tbsp paraffin

Steps:

  • 1. Using a mixer, combine butter, peanut butter, powdered sugar, maraschino cherries, and coconut.
  • 2. Roll in very small balls.
  • 3. Put in freezer for several hours or preferably overnight.
  • 4. Melt in a double boiler 6 oz chocolate chips and 6 tbsp paraffin.
  • 5. Dip frozen balls in and drain over waxed paper on a rack.
  • 6. Can double dip if you want. I usually double the cherry mixture and the chips mixture making enough for dipping a double batch. Enjoy!

85g pack sage & onion stuffing mix
300g sausagemeat
90g cooked chestnuts , chopped
50g dried cranberries
12 rashers smoked streaky bacon or pancetta

Steps:

  • Put the stuffing mix in a bowl and pour over 150ml boiling water. Leave the mix to absorb. When cool, add the sausagemeat, chestnuts and cranberries and bring everything together with your hands. Cut each rasher of bacon in half lengthways so you get 24 long strips of bacon.
  • Cross two bacon strips, then roll a walnut-sized ball of the stuffing mix and sit it on the cross. Wrap the stuffing in the bacon and sit on a lightly oiled baking tray, cross-side up. Repeat to make 12 stuffing balls. Can be made up to two days ahead and chilled. Heat oven to 200C/180C fan/gas 6 and roast the stuffing balls for 25-30 mins until the bacon is crisp and the stuffing is cooked.

1 cup butter, 2 sticks
1 cup packed dark brown sugar
1 (8 oz.) pkg. chopped dates
1 egg beaten
3 cups rice krispies
1 cup sweetened flaked coconut
1/2 cup chopped maraschino cherries, red and green
1 tsp. vanilla
*powdered sugar, for rolling

Steps:

  • 1. In dutch oven, or heavy bottomed pot, melt butter over medium heat. Watch, don't brown. Stir in dark brown sugar and dates. Stir til melted a little. Remove from heat and add egg whisking in *QUICKLY* so you don't scramble the egg. Whisk til mixed well. Return to heat and stir constantly til boiling. Boil and stir one minute. Remove from heat, add rest of ingredients, cool til cool enough to handle. Roll into balls. Roll in powdered sugar. Makes 3-4 dozen depending on size. 1 - 1 1/2" balls. Store airtight. Freezes well.

1 c sugar
2 eggs
1/2 c milk
2 1/2 tsp baking powder
1/2 tsp salt

5-5 1/2 c all-purpose flour
nuts, chopped
red food coloring
FOR ICING
1 1/2 c powdered sugar
1/2 tsp almond extract
enough cherry juice and water to thin the glaze to proper consistency

Steps:

  • 1. Preheat oven to 350 degrees. Mix together oil, eggs, milk, cherry juice, and vanilla or almond flavoring.
  • 2. Sift together flour, sugar, baking powder, and salt in a separate bowl.
  • 3. Add red food coloring to color desired. Then gradually add the dry ingredients to the wet.
  • 4. Stir in chopped cherries and nuts. The dough will be very thick.
  • 5. Form into balls.
  • 6. Bake 10-12 minutes.
  • 7. Frost with your favorite frosting or glaze when cookies are completely cooled. Add sprinkles if desired.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg. (8.6 oz.) BAKER'S White Chocolate Cookie Ball Kit
1/8 tsp. green gel food coloring
1 tsp. red decorating gel
1/3 pretzel rod (3-inch piece)

Steps:

  • Mix cream cheese and cookie crumbs until blended. Shape into 10 (1-inch) balls, using a level tablespoon for each. Place on a waxed paper-covered baking sheet. Shape remaining cream cheese mixture into 2 cubes. Add to baking sheet. Freeze 15 minutes.
  • Microwave white chocolate in microwaveable bowl on HIGH for 30 seconds; stir. Microwave 30 seconds more; stir. Continue heating and stirring in 10-second increments until completely melted.
  • Dip each cube-shaped cookie ball into white chocolate using a fork, letting any excess drip back into the bowl; return to baking sheet. Stir green food coloring into remaining chocolate. Dip each of the remaining cookie balls into the tinted chocolate; return to baking sheet. Top immediately with sprinkles. Refrigerate 15 minutes or until chocolate is firm.
  • Decorate cube-shaped pieces with red decorating gel to resemble presents. Arrange green cookie balls on a platter to resemble a Christmas tree. Add pretzel piece for the trunk. Place cookie ball presents under the tree.
