Easy Quiche image

The best easy quiche recipe packed with spinach, ham, and cheese, or any other fillings you prefer! Great for breakfast, brunch, or dinner.

10 ounces frozen chopped spinach (thawed)
1 refrigerated pie crust
5 large eggs
3/4 cup milk ((I used 1%; or use whole milk or a combo of milk and cream for more richness))
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon hot sauce (such as Tabasco (optional))
1 cup diced cooked ham
3/4 cup 1/4-inch-diced melty cheese (such as Gruyere or white cheddar* (about 3 ounces))
2 green onions (finely chopped)

Steps:

  • Preheat the oven to 375 degrees F. If your frozen spinach is not already thawed, thaw it in the microwave per the directions. Place the spinach in a colander and squeeze out as much liquid as possible. Set aside.
  • Blind Bake the Crust (If your crust comes pre-formed in a disposable pan). Place the pie dish on a baking sheet and bake for 3 minutes. Remove it from the oven, prick it all over with the tines of a fork, then return to the oven and bake until light golden, about 10 minutes more. Reduce the oven temperature to 350 degrees F. See notes if you use a pie dough sheet or make your own dough.**
  • Prepare the Filling: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, nutmeg, and Tabasco.
  • Squeeze and blot more water out of the spinach (you want it as dry as possible), then scatter it evenly over the bottom of the blind-baked crust. Sprinkle the ham, cheese, and onion over the top of the spinach.
  • Carefully pour the egg mixture over the top.
  • Bake the Quiche: Bake the quiche on the baking sheet, until a knife inserted 1 inch from the edge of the crust comes out clean and the center is set, about 40 to 50 minutes. If at any point the crust begins to brown more than you would like, protect it with foil or a pie crust shield. Let the baked quiche rest for 5 to 10 minutes, then slice and serve.

1 unbaked Pam's Pie Crust, recipe follows
All-purpose flour, for rolling
8 slices bacon, fried until chewy
2 yellow onions, sliced
2 tablespoons salted butter
8 large eggs
1 1/2 cups heavy cream
Kosher salt and freshly ground black pepper, to taste
2 cups grated sharp Cheddar
2 1/2 cups all-purpose or pastry flour
1 teaspoon kosher salt
1 tablespoon sugar
1 cup (2 sticks) cold salted butter, cut into chunks

Steps:

  • Preheat the oven to 400 degrees F.
  • Roll out the pie dough on a floured surface. Gently lay it in a deep-dish pie pan and press it into the grooves of the pan. Cut off the excess. Set aside.
  • Chop up the bacon into bite-sized pieces.
  • Fry the onions in the butter in a heavy skillet over medium-low heat until deep golden brown, 12 to 15 minutes.
  • Meanwhile, mix the eggs, cream and some salt and pepper together in a large bowl. Add the bacon, onions and cheese and stir to combine.
  • Pour the mixture into the pie shell. Cover lightly with aluminium foil, place on a sheet pan and bake for 45 minutes.
  • Remove foil and bake until the quiche is set and the crust is golden brown, about 10 minutes more.
  • Allow to sit for 10 minutes. Fit for a king or a cowboy.
  • Lightly mix 2 cups of the flour with the salt and sugar in a mixing bowl or a food processor. Cut the butter into the flour using a pastry cutter or by pulsing the food processor. (The mixture should look like large crumbs and begin to cling together in clumps.)
  • Add the remaining 1/2 cup flour and mix lightly or pulse two or three times so as not to overmix the flour. Tip into a bowl. Sprinkle 1/4 cup cold water over the dough and mix with your hands or a wooden spoon until the dough holds together. Shape the dough into two discs.
  • Wrap the dough in plastic wrap and store in the fridge until ready to use. It can also be frozen for up to 6 months.

This easy Crustless Low Carb Quiche is light, fluffy, and absolutely delicious! You only need 7 ingredients to whip up this recipe for the perfect breakfast, brunch, or week of meal prep.

1 1/2 cup milk
1 1/2 cup grated cheese ((cheddar cheese, Swiss cheese, or mozzarella))
1 lbs. bacon ((cooked))
1 red onion ((chopped))
Handful of fresh spring onions ((chopped))
1 teaspoon ground nutmeg
Salt & pepper to taste

Steps:

  • Preheat your oven to 375F (190°C). Grease a 9 inch (23 cm) tart pan with butter and set aside.
  • Cook the bacon in a pan until it's slightly crispy.
  • Chop the bacon, red onion, and green onion.
  • Combine the milk and eggs in a large mixing bowl. Whisk together well.
  • Add the remaining ingredients and seasoning to the egg and milk mixture. Stir to combine.
  • Pour the mixture into the prepared tart pan. If necessary, stir to make sure the fillings are evenly distributed throughout the quiche batter.
  • Bake the quiche for 45 - 50 minutes until golden and set.
  • Remove from the oven and allow to cool for at least 30 minutes before slicing and serving.

Chock-full of ham, broccoli, and cheese, with just enough eggs to hold it together, this is no girly food. Shared with us by a college student, it is one of the few dishes he knew how to prepare. But if one only knows three recipes, this is certainly a great one to have in the set!

1 - crust for 9
8 ounce(s) broccoli florets, steamed, cut small
8 -10 ounce(s) cooked ham, diced
8 - 10 ounce(s) colby jack cheese, shredded
1 tablespoon(s) flour
3 - 5 - large eggs
12 ounce(s) evaporated milk

Steps:

  • Steam broccoli; drain. Make certain it is cut into small pieces.
  • Line a pie plate with prepared pie dough. ( I use a deep dish glass pie plate with a Pillsbury refrigerated pie crust.)
  • Sprinkle flour into crust-lined pie plate.
  • Mix together ham, broccoli, and shredded cheese; spread evenly into crust.
  • Beat together eggs and evaporated milk. Pour it evenly over ham mixture. (Note: Sometimes I throw in some extra cheese or ham here, depending on how much I have on hand and how much space remains in pie plate.)
  • Bake at 375 degrees F for 55 minutes, checking after 45 minutes to ensure color isn't getting too dark. If quiche darkens too quickly, cover edges with foil, then continue baking until quiche is set. Allow quiche to rest 10 - 15 minutes before serving.
