This is a very soft fudge that Mom made when we were young. Rather than "pieces" of fudge, we got "spoonfuls". It's rich and chocolate-y, very candy-like.

Number Of Ingredients 8

2 cups sugar
3/4 cup evaporated milk
2 ounces unsweetened chocolate, chopped
2 tablespoons light corn syrup
2 tablespoons butter
1/4 teaspoon salt
1/2 cup chopped nuts (optional)
1 teaspoon vanilla

Steps:

  • Combine all ingredients except nuts and vanilla in a saucepan.
  • Stir over medium heat until the sugar is dissolved and the chocolate is melted.
  • Continue cooking until it reaches the soft ball stage (236 degrees) stirring occasionally to prevent sticking.
  • Remove from heat and let stand, without stirring, until the bottom of the pan is lukewarm.
  • Beat until the candy loses its gloss, then quickly stir in nuts and vanilla.
  • Pour into buttered 8" or 9" pan.
  • When cool, eat by the spoonful!

Old-Fashioned Chocolate Fudge image

This fudge is easy to make and very delicious. Enjoy this with your loved ones. For best results be sure to use a candy thermometer.

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

3/4 cup(s) chocolate chips
3/4 cup(s) butterscotch chips
1 1/2 cup(s) chow mein noodles (placed in a zip lock baggy)
1 cup(s) graham cracker crumbs (placed in a zip lock baggie)

Steps:

  • Layer in a 1 qt wide mouth canning jar. Decorate and attach a tag saying:
  • Chow on this Fudge Needed Items 1/2 cup peanut butter (smooth or chunky) Take out the 2 baggies and set a side. place all the chips in a bowl, add peanut butter and microwave for 30 seconds. stir and mic again for 20 seconds if it wasn't all melted. Stir in crumbs from the baggie and stir well then add the chowmein noodles and stir again. Drop by spoonfuls onto wax paper and allow to sit an hour to harden. Makes 36 teaspoon sized pieces of fudge
