CHOURICO AND QUINOA SALAD



Chourico and Quinoa Salad image

Salada de Quinoa com Chourico. A Portuguese dish. You may substitute chorizo for the chourico.

Number Of Ingredients 9

1 - avocado, peeled and chopped in medium size pieces
1/2 cup(s) halved grape tomatoes
1/4 cup(s) chopped fresh parsely
1 cup(s) quinoa, uncooked
2 cup(s) water
3 tablespoon(s) olive oil
1 - link chourico sausage, sliced into rounds
1/2 teaspoon(s) lemon juice
- salt and pepper, to taste

Steps:

  • Mix avocado, tomatoes and parsley in a large bowl and set aside.
  • Place the quinoa in a saucepan along with water and 1 tablespoon of olive oil and bring to a boil. Cover and cook on medium-low heat for about 12-15 minutes or until done.
  • As it is cooking place the sliced chourico in a skillet with the rest of the olive oil and let it cook on low heat until the quinoa is done.
  • Once the quinoa is done, place the finished quinoa in the skillet with the chourico.
  • Fry the quinoa and chourico in the skillet on high heat for about 5 minutes until the chourico has browned.
  • Once done place the chourico and quinoa into the bowl with the tomatoes, avocado, and parsley and quickly toss them together. Add salt and pepper to taste along with lemon juice.
  • Serve warm.

1 cup uncooked quinoa
2 cups water
1/2 medium English cucumber, diced (1 cup)
1 medium bell pepper, chopped (1 cup)
1 baby bok choy, chopped (2 cups)
1 cup additional grated or chopped veggies like carrots or broccoli stems, optional
1/2 cup (65 grams) nuts and seeds like walnuts, pine nuts, pepitas or sunflower seeds
1/4 cup (35 grams) dried fruit, blueberries or cranberries
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill or mint
1 (15-ounce) can chickpeas or 1 1/2 cups cooked chickpeas
1/4 cup (60 ml) extra-virgin olive oil
1/4 cup (60 ml) apple cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon honey or maple syrup
1/2 teaspoon fine sea salt, plus more to taste
1/4 teaspoon fresh ground black pepper
Juice from 2 to 3 lemon wedges, optional

Steps:

  • Add quinoa to a fine mesh strainer, and then rinse under cool water for 30 seconds to a minute. Alternatively, add the quinoa to a bowl and cover with cool water. Move the quinoa around the bowl, and then drain the water and repeat once more, so the quinoa has been rinsed.
  • Shake the quinoa of any excess liquid. Combine the rinsed quinoa and water in a medium saucepan over medium-high heat. Bring to a boil then reduce to a low simmer and cook, uncovered, until the liquid is absorbed by the quinoa, 10 to 15 minutes.
  • Move the saucepan off of the heat and cover for five minutes. This extra time allows the quinoa to steam and "fluff up." Uncover, and then fluff the quinoa with a fork. Set aside to cool slightly.
  • When the quinoa has cooled slightly, in a large bowl, combine the quinoa, chickpeas, cucumber, bell pepper, bok choy, nuts, seeds, dried fruit, and the herbs.
  • In a small bowl, whisk the olive oil, apple cider vinegar, mustard, honey (or maple syrup), salt, and pepper until blended.
  • Pour the dressing over the salad and toss well. Taste then adjust with additional salt and pepper as needed. For an extra pop of flavor, spritz the juice from a few lemon wedges over the salad. Serve.

Serve this cold salad as a delicious summer side to your favorite grilled meat or try it alone as a great light lunch. I have been experimenting a lot with quinoa recently, and this is by far my favorite recipe. It's such a nice, healthy alternative to pasta and rice!

2 cups water
1 cup quinoa
1 teaspoon chicken bouillon granules
½ cup frozen baby lima beans
water to cover
salt and freshly ground black pepper to taste
⅓ cup slivered almonds
3 Campari tomatoes, diced
2 tablespoons thinly sliced scallions
2 ounces fresh mozzarella cheese, cut into small chunks
3 tablespoons balsamic vinegar
3 tablespoons almond oil
2 tablespoons extra-virgin olive oil
2 teaspoons Italian seasoning
2 teaspoons dried basil
1 teaspoon minced garlic
¼ teaspoon salt

Steps:

  • Bring 2 cups water, quinoa, and bouillon granules to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Spread quinoa onto a baking sheet and refrigerate until cooled, about 30 minutes. Rinse saucepan.
  • Place lima beans into the saucepan and add enough water to cover beans by 1 inch; season with salt and pepper. Cover saucepan with a lid and bring water to a boil. Reduce heat to medium and simmer until beans are cooked through but still tender, 3 to 4 minutes. Drain water and rinse beans under cold water to stop the cooking process; refrigerate until cool, about 10 minutes.
  • Cook and stir almonds in a skillet over medium heat until toasted, about 5 minutes. Remove skillet from heat and cool almonds to room temperature, about 5 minutes.
  • Mix quinoa, lima beans, almonds, tomatoes, scallions, and mozzarella cheese together in a large bowl.
  • Whisk vinegar, almond oil, olive oil, Italian seasoning, basil, garlic, and salt together in a bowl until smooth; pour over quinoa mixture and stir to coat.
