1 1/2 pounds ground beef sirloin
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
1 shallot, finely chopped
1 clove garlic, finely chopped
3 tablespoons finely chopped parsley leaves
1/2 teaspoon ground mustard
2 tablespoons panko bread crumbs
1/4 cup all-purpose flour
Kosher salt and freshly ground pepper
1 tablespoon canola oil
1 tablespoon butter
2 tablespoons butter
8 ounces crimini mushrooms, cleaned well and quartered
1 small onion, minced
1 teaspoon finely chopped thyme leaves
Salt and freshly ground black pepper
1/4 cup all-purpose flour
1/2 cup brandy
2 cups low-sodium beef stock

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the ground beef, egg, Worcestershire, shallots, garlic, parsley, ground mustard, bread crumbs, flour, and salt and pepper, to taste, in a large bowl. Shape the mixture into 6 equal-sized oval patties and set aside on a plate.
  • Heat a large frying pan over medium heat and add the canola oil and butter. When the butter foams add the patties and brown, about 3 to 4 minutes per side. Transfer the patties to a 13 by 9-inch baking dish. Drain all of the fat from the pan but leave any browned bits.
  • Return the pan to medium heat and melt the butter for the gravy. Add the mushrooms, onion, and thyme and season with salt and freshly ground black pepper, to taste. Cook, stirring rarely, until the mushrooms are slightly browned and soft, about 4 minutes. Sprinkle in the flour and mix until fully incorporated. Stir occasionally, until the flour is lightly toasted, about 3 minutes. Add the brandy and stir, scraping up any browned bits from the bottom of the pan. Slowly pour in the stock and stir until smooth. Let the mixture come to a boil and cook until sauce is reduced and thickened, about 8 minutes.
  • Taste and add salt and freshly ground black pepper, if needed. Lots of pepper is good in this dish! Pour the sauce over the patties in the baking dish and cover with aluminum foil. Bake until the meat is tender and slightly pink in the middle, about 20 minutes. Remove the dish from the oven and serve.

I am such a sucker for a classic, stuffy, old-fashioned iceberg wedge salad with blue cheese dressing and a big ol' steak dinner. What happens when we put these two wondrous creations together? Steak House Chopped Salad night, baby! This blue cheese lover met my husband halfway with a Danish-style mild blue cheese (he prefers a sharp Cheddar) but feel free to crank it up with something more pungent, like a Stilton or Roquefort. To make up for the absence of the baked potato and heaping pile of creamed spinach (other quintessential steakhouse dishes), I've subbed in crunchy radishes, creamy avocado and sweet grape tomatoes.

2 pounds ground beef, 80/20 blend
1/4 cup minced onion
2 tablespoons minced garlic
1 tablespoon salt
1 tablespoon finely ground pepper
2 tablespoons grapeseed oil
1/4 cup brandy
2 cups beef stock or demi-glace
2 cups mushrooms (crimini, button), quartered
1 tablespoon fresh thyme leaves, minced
1/2 tablespoon fresh rosemary leaves, minced
Generous pinch ground nutmeg
3 tablespoons butter, at room temperature

Steps:

  • Preheat the oven to 400 degrees F.
  • In a bowl, blend the ground beef, onions, garlic, salt and pepper and mix well.
  • Next, by hand, portion the meat into 8 to 9 round patties, ensuring they are not more than 1/4-inch tall. Next, heat a large saucepan with the oil over medium-high heat. Add the seasoned patties, allowing to cook on each side until browned, 3 to 4 minutes. After browning both sides, finish in the oven for 4 to 5 minutes for medium-well. Remove from the oven.
  • After baking, remove the patties from the pan and hold on the counter; this will allow the meat to rest. Then, return the pan to medium-high heat for 2 minutes. After the pan is hot again, carefully add the brandy and allow the liquor to cook off. Then add the stock, mushrooms, herbs and nutmeg and cook for 3 to 4 minutes, allowing the sauce to reduce to 1 cup volume. After reducing the sauce, remove the pan from the heat and whisk in the butter to finish the sauce. Serve with the chopped steak.

1/2 cup breadcrumbs, finely minced
1/4 cup milk
1 1/2 tablespoons dry onion soup mix

  • Combine the beef, bread crumbs, milk and onion soup mix in a large bowl and mix throughly with your hands. Shape into four 3 1/2 inch patties, each about 1/2 inch thick.
  • Place an extra deep skillet over medium heat and add the meat patties. Cook, uncovered, for 5 minutes. Reduce the heat if the meat browns too quickly.
  • Meanwhile, place the brown gravy mix in a 2 cup or larger measure. Add the amount of water called for on the envelope and whisk until well blended. Set aside.

1 tablespoon olive oil
4 tablespoons unsalted butter, divided into 4 tablespoons
2 1/2 cups yellow onions, small dice
1/4 cup whole milk
1/2 cup breadcrumbs
1 lb ground chuck
1 lb ground sirloin
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper, to taste
2 eggs
2 tablespoons flour or 3 tablespoons brown rice flour
1 tablespoon Madras curry powder
2 tablespoons ketchup
2 tablespoons sake mixed with 1 teaspoon sugar
2 -3 tablespoons tamari soy sauce
2 cups water

Steps:

  • In a large sauté pan, heat the oil with 1 tablespoon of butter, and carmelize onions by frying on med low heat for 15-20 minutes until browned but not blackened.
  • While onions are frying, mix meat, breadcrumbs, milk, eggs and salt and pepper, and gently mix.
  • When onions are done, allow them to cool enough to handle, and add 3/4 to the beef mixture, and work them inches Form 6 patties, roughly 6 ounces each.
  • Wipe the fry pan, add the remaining butter, and cook the patties until nicely browned. Remove to a warmed plate.
  • Add the remaining onions and your flour of choice and let them cook for a minute or two while you are stirring it around. Add the curry powder, stir once or twice to break out the spice flavors, and then add the water, ketchup, sake, and soy, stirring the entire time until the sauce comes to a boil and thickens. Make sure to use your wooden spoon to scrape up all the goodies from the bottom of the pan. Taste and adjust the seasoning by either adding more soy or salt depending on what you think it needs. 1/2 pound lean ground beef chuck
2 scallions (3 inches of green left on), thinly sliced
1 tablespoon chopped flat-leaf parsley
2 teaspoons fresh lemon juice
2 teaspoons soy sauce, plus extra for cooking
Salt and freshly ground black pepper, to taste
1 tablespoon extra-virgin olive oil
Sliced ripe tomatoes (optional), for serving

Steps:

  • 1. In a bowl, gently combine the ground beef, scallions, parsley, lemon juice and soy sauce. Season with salt and pepper. Form into 2 patties, about 3 inches in diameter and 1 1/2 inches thick. 2. Heat the olive oil in a nonstick skillet over medium heat. Cook the patties for 5 minutes on the first side, turn and cook for 3 minutes on the second side for medium-rare. Brush or baste the patties on the second side with some soy sauce. 3. Serve immediately with sliced tomatoes, if desired, and Lemon Herb Couscous.

1 lb boneless sirloin steak, thinly sliced
oil for frying
1 clove garlic, crushed
1 onion. sliced
1 stalk celery, slivered
1 carrot, slivered
1 green pepper, slivered
1 tomato, cut in wedges
2 T. shoyu
1/2 tsp. sugar
1/4 tsp. salt
1/4 tsp. pepper

Steps:

  • Heat 1 tablespoon oil in skillet. Lightly stir fry vegetables (except tomato) for about 1 minute. Remove and set aside. Add 1 tablespoon oil in the smae pan and saute' garlic and stir fry meat until almost done. Add shoyu, seasonings, vegetables and tomato. Cook until heated.

Love a good steak? These burgers use ground sirloin instead of regular ground beef which gives them a more steak-like flavor.

1 1/2 pound ground sirloin
1/4 cup grated onion
1 tablespoon chopped roasted chile pepper
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/4 teaspoon red Tabasco sauce

Steps:

  • Preheat grill to medium-high heat. Combine the ground sirloin, onion, chile pepper, salt, black pepper, Worcestershire sauce, and Tabasco. Mix but do not overwork the meat or it can make the burger tough. Divide the sirloin mixture into equal portions and gently form into patties about 3/4-inch thick. When the grill is hot, place the burgers directly on the grill over medium coals. Cook for 5-7 minutes per side or to desired doneness. Turn once during the cooking time. You can also broil them in the oven, 3-5 inches from the heat, for the same amount of time. Serve on buns with your favorite condiments and toppings.
