2 pounds grape tomatoes, halved
2 romaine hearts, quartered lengthwise and chopped
1/4 cup fresh basil leaves
1/4 cup Kalamata olives, chopped
8 ounces fresh mozzarella, cubed
2 tablespoons olive oil
1 clove garlic, minced
1 tablespoon red wine vinegar
Salt and pepper

Steps:

  • Add the tomatoes, romaine, basil, olives, mozzarella, olive oil and garlic to a large salad bowl. Dress with red wine vinegar and season with salt and pepper to taste. Toss well.

8 ounces fresh mozzarella cheese, cut into 1/2 inch pieces (1 cup)
3 tablespoons extra virgin olive oil
2 tablespoons shallots, minced
2 garlic cloves, minced
salt and pepper
1/2 fresh basil leaf
1 1/2 lbs grape tomatoes, cut in half lengthwise
2 romaine lettuce hearts, quartered lengthwise and cut into 1/2 inch pieces (12 ounces)
1/4 cup kalamata olive, pitted, chopped
3 tablespoons red wine vinegar

Steps:

  • 1. Combine mozzarella, oil, shallot, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl. Coarsely shop half of basil leaves and add to mozzarella mixture; set aside while preparing tomatoes. Combine tomatoes and 1 teaspoon salt in separate bowl; transfer to colander set in sink and let drain for 15 minutes, stirring occasionally. (Tomatoes can be prepared up to an hour in advance).
  • 2. Tear remaining basil leaves into 1/2-inch pieces. Gently toss tomatoes, romaine, olives, vinegar, mozzarella mixture, and basil together in large bowl. Season with salt and pepper to taste, serve.

The tiny bit of olive oil and balsamic add a touch of tang. Perfect for a hot summer day. Enjoy this Caprese salad for a snack, as a side dish, or even at a picnic.

5 oz grape tomatoes, chopped in half (about 1/2 of a dry pint container)
1/4 c fresh basil, chopped
8 oz "cherry size" mozzarella, chopped in fourths
1 medium cucumber, peeled, seeded, and diced
1 Tbsp olive oil, extra virgin
2 Tbsp balsamic vinegar
salt and pepper, to taste

Steps:

  • 1. Prep ingredients.
  • 2. Toss ingredients in a large bowl.
  • 3. Keep refrigerated until ready to serve. Serve with crackers or toasted, crusty French bread.
