6 Tbsp unsalted butter, room temperature
1 c sugar
2 large eggs
2/3 c dark cocoa
2 oz grated dark chocolate
1 3/4 c all purpose flour
1/2 tsp baking soda
2 tsp baking powder
1 (6 oz)container of plain or vanilla full fat yogurt
pinch of salt
1/3 c milk
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees F. and lightly grease a 9 X 5 inch loaf pan.
  • 2. In one bowl, mix together the flour, cocoa, baking powder, baking soda and salt. In a separate bowl, whisk together the yogurt, milk, and vanilla, then set aside. Cream the butter with the sugar for about 3 minutes or until light. Add the eggs one at a time beating well between each. Add the grated chocolate and stir, then half the flour and half the yogurt mixture and mix.
  • 3. Add the remaining yogurt and flour mixtures and mix just until combined. Pour the batter into your prepared pan and smooth the top. Bake for about 50 to 55 minutes or until a skewer inserted into the center comes out clean.
  • 4. Cool for 15 to 20 minutes then gently remove from the pan. Allow to cool to room temperature before slicing. If desired, the loaf can now be sprinkled with powdered sugar, or spread with the glaze of your choice.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup plain whole-milk yogurt
1 1/3 cups sugar, divided
3 extra-large eggs
2 teaspoons grated lemon zest (2 lemons)
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
1/3 cup freshly squeezed lemon juice
1 cup confectioners' sugar
2 tablespoons freshly squeezed lemon juice

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8 1/2 by 4 1/4 by 2 1/2-inch loaf pan. Line the bottom with parchment paper. Grease and flour the pan.
  • Sift together the flour, baking powder, and salt into 1 bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, lemon zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure it's all incorporated. Pour the batter into the prepared pan and bake for about 50 minutes, or until a cake tester placed in the center of the loaf comes out clean.
  • Meanwhile, cook the 1/3 cup lemon juice and remaining 1/3 cup sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside.
  • When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in. Cool.
  • For the glaze, combine the confectioners' sugar and lemon juice and pour over the cake.

1 ½ cups full-fat yogurt
1 cup white sugar
½ cup canola oil
3 eggs
2 tablespoons brewed coffee
1 teaspoon vanilla extract
2 ½ cups whole wheat flour
½ cup cocoa powder
2 ½ teaspoons baking powder
1 teaspoon ground cinnamon
¾ teaspoon baking soda
½ teaspoon salt
1 pinch ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch cake pan.
  • Whisk together yogurt, sugar, oil, eggs, coffee, and vanilla extract in a bowl. Add flour, cocoa powder, baking powder, cinnamon, baking soda, salt, and nutmeg; whisk until air bubbles form in the batter. Pour batter into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool on a wire rack for 15 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Serve warm or at room temperature.
