1 ½ cups chocolate cookie crumbs
6 tablespoons butter, melted

Steps:

  • Mix crumbs and melted butter or margarine until well blended. Press into an 8 or 9 inch pie plate. Chill until firm.

Use this recipe to make our Espresso Cream Pie.

Yield Makes one 9-inch crust

Number Of Ingredients 4

6 ounces chocolate wafers (about 28 wafers), finely ground (1 1/2 cups)
2 ounces (4 tablespoons) unsalted butter, melted
2 tablespoons sugar
Salt

Steps:

  • Preheat oven to 350 degrees. Pulse ground chocolate wafers, butter, sugar, and a pinch of salt in a food processor until well combined.
  • Pat mixture into a 9-inch pie dish, pressing firmly into bottom and up sides. Bake until crust is fragrant and darkens slightly, about 10 minutes. Let cool completely on a wire rack.

6 tablespoons butter
1 ounce bittersweet chocolate (can use semisweet chocolate in place of bittersweet)
30 chocolate wafer cookies

Steps:

  • Spray a 9-inch glass pie plate with non-stick cooking spray.
  • In a small saucepan stir together butter and 1 ounce chocolate until melted and combined.
  • Finely grind the chocolate wafer crumbs in a processor.
  • Add in the chocolate/butter mixture to the processor and mix until the crumbs are moistened.
  • Press into the prepared pie plate.
  • Freeze until firm (about 30 minutes).

Yield Makes crust for two 10-inch cheesecakes

Number Of Ingredients 10

1 1/4 cups all-purpose flour
1/4 cup plus 2 tablespoons Dutch-process cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
2/3 cup packed light-brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • In a large bowl, whisk together the flour, cocoa, baking powder, baking soda, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and both sugars on medium speed until light and fluffy, 2 to 3 minutes. Add the egg and vanilla; beat to combine. With the mixer on low speed, add flour mixture, and beat to combine, scraping down the sides of the bowl as needed.
  • Press dough into 10-inch springform pan as instructed in Raspberry-Swirl Cheesecake recipe.

8.5 oz chocolate wafer cookies
2 Tbsp butter, unsalted and melted
FILLING INGREDIENTS
1 Tbsp butter
3 oz chocolate, unsweetened
9 oz semi-sweet chocolate
12 oz cream cheese, softened
2 Tbsp vanilla extract
1 c whipping cream
6 eggs
1/2 c sugar
whipped cream, optional

Steps:

  • 1. To make crust, crush wafers; add melted butter to make crumbly dough.
  • 2. Press into bottom of 9-inch springform pan; set aside.
  • 3. To make filling, melt butter in top of double boiler over hot water; add chocolates and heat until melted, stirring until smooth.
  • 4. Beat cheese until creamy; add vanilla and whipping cream.
  • 5. Stir in chocolate mixture; beat eggs with sugar and slowly beat into chocolate mixture.
  • 6. Turn into crust and bake at 350 40 to 45 minutes, or until cake puffs slightly in center; cool, then chill thoroughly before unmolding - Serve with whipped cream, if desired.
