CHOCOLATE TOFFEE GRAHAM CRACKERS

This is a quick and easy treat to make for a crowd. Travels so well too!

Number Of Ingredients 5

12 graham crackers (4 3/4 by 2 1/2 inch)
1 1/2 stick butter (unsalted) cut into pieces
1/2 c light brown sugar, packed
1 1/2 c semi-sweet chocolate chips (9 1/2 oz)
1 c any type nut chopped. i use pecans.

Steps:

  • 1. Preheat oven to 375 degrees. Line a 15x10 baking pan with foil leaving a 2 inch overhang at each end.
  • 2. Line bottom of pan with graham crackers. Will be a very tight fit.
  • 3. Melt butter in a small saucepan over low heat, add brown sugar and salt. Cook, whisking entire time, until mixture is smooth and combined well. About 1 minute. DO NOT LET THIS MIXTURE BURN.
  • 4. Pour over crackers, spreading evenly and bake in the middle rack until golden brown and bubbly. About 10 minutes.
  • 5. Remove from oven and gently scatter chocolate chips evenly over crackers and place back in over for another minute until chocolate is soft.
  • 6. Remove pan from oven and gently spread chocolate evenly over crackers with offset spatula.
  • 7. Sprinkle nuts evenly over chocolate and cool crackers on a rack for 30 minutes. Or if you prefer, you can freeze 10-15 minutes. If you choose to freeze this make sure you press the nuts into the chocolate so they stick.
  • 8. Carefully lift crackers from pan by grasping both ends of the foil, then peel foil from crackers. Break crackers into serving pieces and enjoy!

12 graham crackers, broken in half (24 squares)
1/2 cup butter or margarine
3/4 cup packed brown sugar
1-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (6 oz.), chopped
1/2 cup finely chopped pecans

Steps:

  • Heat oven to 350°F.
  • Arrange graham squares in single layer in 15x10x1-inch pan sprayed with cooking spray.
  • Bring butter and sugar to boil in medium saucepan on medium heat; cook 1 to 2 min. or until butter is completely melted and mixture is well blended, stirring frequently. Pour over grahams; immediately spread to completely cover grahams.
  • Bake 6 to 8 min. or until topping is lightly browned and bubbly. Top with chopped chocolate; bake 1 to 2 min. or until melted. Immediately spread chocolate over grahams. Sprinkle with nuts; press lightly into chocolate with back of spoon. Cool completely before breaking into squares.

11 whole honey graham crackers, broken into squares
1 cup butter
1 cup sugar
1/2 cup finely chopped pecans
1 -2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350*.
  • Arrange graham crackers in a single layer in a 15 x 10 baking sheet.
  • Combine butter and sugar in saucepan and bring to a boil over medium heat, stirring constantly until butter melts; then boil 2 minutes.
  • Remove from heat and stir in pecans.
  • Pour mixture evenly over crackers and spread carefully to edge of pan, covering crackers completely.
  • Bake for 10 minutes.
  • Remove from oven and sprinkle evenly with chocolate chips; when chips melt, smooth evenly to cover top.
  • Cool in pan for 5 minutes; carefully separate and transfer squares to a wax paper lined cookie sheet.
  • Refrigerate until chocolate hardens.

1/2 box graham crackers (plain, not crumbs)
8 ounces (2 sticks) butter
1/4 cup brown sugar
1/4 cup white sugar (granulated)
2 cups semisweet chocolate chips
1 cup macadamia nuts (chopped or substitute pecans, walnuts , peanuts, or your favorite nuts)​

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Line a 15x10-inch jellyroll pan with nonstick foil.
  • Arrange whole graham crackers to fit the bottom of the pan in a single layer, breaking up the last few to fit the space.
  • Melt butter in a medium saucepan over medium heat.
  • Add brown sugar and white sugar. Stir to combine.
  • Bring the mixture to a boil. Reduce the heat and let the mixture gently bubble for 4 minutes. Remove it from the heat.
  • Carefully pour the sugar/butter mixture evenly over the graham cracker layer. Spread to cover the cracker layer. Bake for 10 minutes.
  • When done, remove the pan from oven and let it rest until the bubbling subsides.
  • Sprinkle 2 cups semisweet chocolate chips evenly over the top. Wait about 2 minutes for chocolate to melt, then use a spatula to gently spread chocolate chips into an even layer on top of the toffee graham crackers.
  • Sprinkle with the chopped macadamia nuts, pressing them down gently into the chocolate.
  • Cool to room temperature, then refrigerate for 2 hours.
  • Peel the foil from the chilled bark. Crack the bark into 2-inch irregular pieces.
  • Refrigerate any leftovers.
  • Serve and enjoy!

12 oz vanilla-flavored candy coating (almond bark), chopped
4 oz white chocolate baking bars or squares, chopped
4 tablespoons shortening
36 graham cracker squares
12 oz chocolate-flavored candy coating, chopped
4 oz semisweet baking chocolate, chopped
1/2 cup toffee bits

Steps:

  • Line cookie sheet with cooking parchment paper. In medium microwavable bowl, microwave vanilla candy coating, white chocolate and 2 tablespoons of the shortening uncovered on High 1 to 2 minutes or until melted and mixture can be stirred smooth.
  • Dip 18 of the graham cracker squares in mixture, coating both sides; tap off excess. Place on cookie sheet. Refrigerate 20 minutes or until coating is firm.
  • Meanwhile, in another medium microwavable bowl, microwave chocolate candy coating, semisweet chocolate and remaining 2 tablespoons shortening uncovered on High 1 to 2 minutes or until melted and mixture can be stirred smooth.
  • Dip remaining 18 graham cracker squares in mixture, coating both sides; tap off excess. Place on cookie sheet. Refrigerate until coating is firm.
  • Drizzle any remaining white chocolate mixture and semisweet chocolate mixture over dipped grahams; sprinkle with toffee bits. Refrigerate until firm.

These defy description - are they a bar cookie? Or are they candy? Either way they are delicious, very very easy to make. I always make these at holiday time and I also make a big three batch amount to donate to my church's "cookie walk" at our holiday fair. Of course everyone LOVES them. I got this recipe years ago - one of my first years of teaching from a regular substitute teacher who brought them in to share.

Number Of Ingredients 6

1 1/4 cups butter or 1 1/4 cups margarine
1 cup dark brown sugar
1 cup chopped walnuts or 1 cup pecans
15 whole graham crackers (can be honey graham or plain)
2 cups chocolate chips
1/4 cup colored sprinkles

Steps:

  • In an 11 by 17 inch jelly roll pan, lightly greased, place whole graham crackers side by side.
  • I also cut strips to fill in all the open spaces so the whole pan is covered.
  • Bring the butter and brown sugar to boil.
  • When bubbly add the chopped walnuts or pecans and bring to boil again.
  • Pour over graham crackers.
  • Bake 350 degrees for 8 minutes.
  • Remove from oven and sprinkle with the chocolate chips.
  • They won’t fully cover the crackers.
  • Turn off the oven but put pan back in for a minute or two to help the chips melt.
  • Then take the pan out of the oven and spread the chips over the bars with a spatula.
  • Sprinkle the colored nonpareils on top of these after spreading the melted chocolate to add a “festive” look.
  • Let the bars cool for 1 hour or so and then cut them into little squares with a sharp knife.
  • They might break up a bit when you do this but then it is fun to eat the scraps!
  • Keep these in a closed container in the fridge.
