This layered cake is pure chocolate confection. Betty Crocker™ Super Moist™ chocolate cake mix gets an extra chocolaty plus-up from the addition of chocolate pudding before baking. A from-scratch dangerously good dark chocolate buttercream frosting covers the three layers of cake. The special addition that takes this dessert to the next level? A toffee bits crunch that's sprinkled among the frosting in between the cake layers, and then piled atop the cake. For an extra-fun touch, we added small frosting stars piped around the edges of the top of the cake! It's a truly over-the-top chocolate dessert that makes a gorgeous centerpiece, and makes any chocolate-loving guest very happy.

1 box Betty Crocker™ Super Moist™ chocolate fudge cake mix
Water, vegetable oil and eggs called for on cake mix box
1 box (3.9 oz) Jell-O™ chocolate-flavor instant pudding & pie filling mix (dry)
1/3 cup dark chocolate chips
1/3 cup roasted salted almonds
1/3 cup toffee bits
3/4 cup dark chocolate chips
1 1/4 cups butter, softened
2 3/4 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Spray bottoms and sides of 3 (8-inch) round cake pans with cooking spray.
  • In large bowl, beat Cake ingredients with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour 1 2/3 cups batter in each pan. Spread evenly.
  • Bake 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
  • Meanwhile, in small microwavable bowl, microwave 1/3 cup chocolate chips uncovered on High 30 seconds; stir. Continue to microwave in 15-second increments, stirring after each, until chips can be stirred smooth. Add almonds to bowl; stir until almonds are coated evenly with chocolate. Spread on waxed paper-lined cookie sheet. Refrigerate at least 30 minutes until chocolate is firm.
  • Break chocolate-coated nuts into large pieces, and place in bowl of food processor. Cover and process until coarsely chopped. Place in small bowl; stir in toffee bits. Set aside.
  • In small microwavable bowl, microwave 3/4 cup chocolate chips uncovered on High 60 seconds; stir halfway through. Continue to microwave in 15-second increments until chips can be stirred smooth; cool 10 minutes. In large bowl, beat butter and melted chocolate with electric mixer on medium speed until blended. On low speed, beat in powdered sugar, milk and vanilla, scraping side of bowl occasionally, until smooth and creamy.
  • Place one cake layer on serving plate. Spread 2/3 cup of the frosting on top; sprinkle 2 tablespoons of the toffee bits crunch over top of frosting. Top with second cake layer. Spread 2/3 cup frosting on top; sprinkle 2 tablespoons of the toffee bits crunch over top of frosting; top with third cake layer. Fit decorating bag with medium star piping tip; fill with 3/4 cup of the frosting. Set aside.
  • Frost sides with thin layer of frosting so sides are covered but cake still shows through. Spread remaining frosting on top. Using decorating bag, pipe stars on top edge of cake. Fill center with remaining toffee bits crunch. Refrigerate cake 30 minutes. If refrigerating cake longer than 30 minutes, let cake stand 10 minutes at room temperature before cutting. Store loosely covered in refrigerator.

1 package German Chocolate cake mix
Ingredients called for on cake mix (eggs, oil, water, etc)
1 (14 oz) can sweetened condensed milk
1 jar caramel ice cream topping
1 (8 oz) container frozen whipped topping, thawed (Cool Whip)
4-6 Heath candy bars, crushed (I have also seen Heath bits over on the baking aisle by the chocolate chips- those would work perfectly too)

Steps:

  • Prepare and bake cake in a 9x13" baking pan as directed on back of cake mix. Let cake cool. Using a fork, poke holes all over the top of the cake. Mix together the sweetened condensed milk and caramel topping and pour all over the cake, letting it sink down into the holes. Spread whipped topping over the caramel layer and sprinkle with crushed Heath bars.
  • I keep this cake in the fridge- it's delicious cold!

I was perusing the ice cream cake recipes here and couldn't find what I had in mind so I made this one up. At our house we use gluten free cake mix, lactose free ice cream, and sugar free Cool Whip so please feel free to adapt this recipe to meet your dietary needs. The cake ingredients included are for the gluten free mix I make. If your cake calls for more or less, eggs, water, or oil, make sure to use the necessary changes. Cook time is partly freezing time.

1 (29 ounce) box chocolate cake mix
3 eggs
2/3 cup butter, melted
1 3/4 cups water
1/2 gallon vanilla ice cream, softened
1 (8 ounce) bag heath toffee pieces
1 (8 ounce) container Cool Whip, softened

Steps:

  • Preheat oven to 350 degrees.
  • Combine cake mix, eggs, butter, and water.
  • Pour into a well greased 13x9 pan. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Allow cake to cool completely.
  • When cake is fully cooled, using a serrated knife, cut cake in half lengthwise.
  • Place the bottom half of the cake back in the pan. Top with the softened ice cream, and spread it evenly over the cake. Sprinkle the toffee chips in an even layer over the ice cream. Place the top layer of the cake on the toffee chips/ice cream. Spread the softened Cool Whip over the top of the cake.

Steps:

  • Heat oven to 350 degrees.
  • By hand, mix egg and butter together, stir in cake mix until combined. Pat cake mixture into a lightly greased 13x9 inch pan.
  • Toss English toffee bits evenly over cake mixture crust.
  • Beat with electric mixer cream cheese and butter until combined, continue beating and add eggs until combined. Add vanilla, powdered sugar and cocoa until well combined.
  • Spoon cream cheese mixture on top of crust, spread with rubber spatula until even, being careful to not move toffee bits too much.
  • Bake uncovered in oven for 35 to 40 minutes, until top is wiggly but crusty and lightly browned. Cool, and sprinkle top with more powdered sugar and toffee, if desired.

15 ounces whole Medjool dates (about 22), pitted, plus 4 more, pitted and halved lengthwise, for garnish
3 tablespoons brandy
2 tablespoons strong-brewed coffee
4 tablespoons unsweetened Dutch-process cocoa powder
2 cups all-purpose flour
1 teaspoon salt
Pinch of ground cinnamon
1 1/2 sticks (12 tablespoons) unsalted butter, room temperature, plus more for pan
3/4 cup packed dark-brown sugar
4 large eggs
1 1/2 teaspoons baking soda
5 ounces bittersweet chocolate (preferably at least 61 percent cacao), coarsely chopped
1/2 stick (4 tablespoons) unsalted butter
2/3 cup packed light-brown sugar
1/3 cup light corn syrup
1 tablespoon water
Pinch of salt
2 tablespoons heavy cream
4 ounces bittersweet chocolate (preferably at least 61 percent cacao), finely chopped
1 tablespoon plus 1 1/2 teaspoons brandy

Steps:

  • For the cake: Preheat oven to 350 degrees. Butter a 9-by-3-inch round cake pan. Line with parchment, and butter parchment.
  • Bring water to a boil in a saucepan. Meanwhile, combine dates, brandy, coffee, and 2 tablespoons cocoa in a heatproof bowl. Stir in boiling water. Let cool, stirring occasionally. Puree cooled date mixture in a food processor (you should have about 2 1/2 cups). Place 3/4 cup puree in a small bowl, and press plastic wrap directly on surface; reserve. Place remaining puree in a large bowl.
  • Whisk flour, salt, cinnamon, and remaining 2 tablespoons cocoa in a bowl.
  • Beat butter and dark-brown sugar with a mixer on medium speed until fluffy. Add eggs, one at a time, beating after each addition (batter will look curdled).
  • Stir baking soda into reserved uncovered date puree. On low speed, beat flour mixture into egg mixture in 2 additions, alternating with the date mixture. Beat in chocolate. Transfer batter to prepared pan, and smooth top.
  • Bake until a toothpick inserted into center of cake comes out clean, about 1 hour. Let cool in pan on a wire rack for 30 minutes. Run a knife around edge of pan to loosen, and invert cake onto rack. Remove parchment, turn cake right side up, and let cool completely.
  • Make the glaze: Bring butter, light-brown sugar, corn syrup, water, and salt to a boil in a saucepan over medium-low heat, stirring occasionally. Boil 3 minutes. Remove from heat. Whisk in cream. Add chocolate, and whisk until smooth. Whisk in brandy. Let cool until thickened, 15 to 20 minutes.
  • Assemble the cake: Using a serrated knife, trim rounded top of cake so it is flat. Place cake on stand. Spread remaining 3/4 cup date puree over top of cake. Pour glaze over top, letting some drip down sides. Garnish with halved dates.

  • Combine the toffee bits, chips and brown sugar; set aside., In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition (mixture will appear curdled). Beat in vanilla. Combine the flour, baking powder, salt and baking soda; add to the creamed mixture alternately with buttermilk, beating well after each addition., Pour a third of the batter into a greased and floured 10-in. fluted tube pan.   • Make cake:
  • Position rack in center of oven and preheat oven to 350°F. Butter 9-inch-diameter cake pan with 2-inch-high sides. Sprinkle pan with 1/2 tablespoon cocoa powder; tilt pan to coat bottom and sides. Shake out excess.
  • Mix flour, baking powder and salt in small bowl. Stir butter and remaining 3 tablespoons cocoa in heavy small saucepan over medium-low heat until butter melts and mixture is smooth. Remove from heat.
  • Using electric mixer, beat eggs and sugar in large bowl until thick and fluffy. Mix in hot water and cocoa mixture. Mix in flour mixture. Stir in pecans, toffee bits and chocolate chips.
  • Transfer batter to prepared pan; smooth top. Bake cake until top is firm and tester inserted into center comes out with moist crumbs still attached, about 25 minutes. Cool in pan on rack 15 minutes. Run knife around pan sides to loosen cake. Turn cake out onto platter. Cool.
  • Make glaze:
  • Stir chocolate, butter and honey in small saucepan over medium-low heat until mixture is smooth. Cool until mixture thickens slightly but is still pourable, about 10 minutes.
  • Pour glaze over top of cake, allowing some to run down sides. Spread glaze over top and sides of cake. Sprinkle top of cake with pecans and toffee bits. Chill until glaze is set, about 1 hour. (Can be made 1 day ahead. Keep chilled. Let stand at room temperature 15 minutes before serving.)

1/4 c caramel sauce (jarred)
1/4 c hot fudge sauce

  • 1. mix cake mix, 1 stick of butter (melted) and 1 egg until smooth. Press into 9x13 pan.
  • 2. mix 2 eggs, remaining butter, cream cheese, vanilla and sugar together. Whip until smooth. Stir in caramel bits and toffee bits. Pour on top of first layer.
  • 3. Bake at 350 for 40 minutes. Let cool for 15-20 minutes. Cut candy bar pieces in half. Place candy bar pieces on top of warm cake. Drizzle with caramel and chocolate sauces. Place in refrigerator till completely cool.

Steps:

  • Make and bake cake mix as directed on box for 13x9-inch pan, using water, oil and eggs. Cool. Line cookie sheet with waxed paper. Crumble cake into large bowl. Add frosting and 3/4 cup of the toffee bits; mix well. Shape into 1-inch balls; place on cookie sheet. Refrigerate 30 minutes or until firm.
  • In medium microwavable bowl, microwave chocolate chips and shortening uncovered on High 1 minute, stirring after 30 seconds, until chips are softened and can be stirred smooth. Steps:

  • For the cake: Preheat the oven to 350 degrees F and grease two 8-inch round cake pans.
  • Whip the granulated sugar and eggs with a stand mixer fitted with the whisk attachment. Meanwhile, put the coffee, butter, vinegar and 1/2 cup of the chocolate chips into a microwave-safe bowl. Microwave until the chocolate and butter are melted, about 3 minutes; then whisk together until well-blended. Continue to alternate with the flour and chocolate mixtures, scraping down the sides of the bowl occasionally and finishing with the flour. Divide the batter between the prepared cake pans. Fill each pan slightly below the top edge (you may not use all the batter). Sprinkle the remaining 1/2 cup chocolate chips over the top of each. Bake until the centers bounce back when touched, 30 to 35 minutes.
  • For the toffee sauce: Melt together the butter and brown sugar in a heavy saucepot and cook until simmering. Remove from the heat, then add the heavy cream and vanilla, and stir. Return to the heat and allow the sauce to boil for another 3 minutes. Remove from the heat and pour into a metal mixing bowl. Cool completely, then refrigerate.
  • For the chocolate ganache: Place the chocolate chips, heavy cream and butter in a microwave-safe bowl and microwave for 3 minutes. Stir until all the chocolate is melted and the ingredients are incorporated. Cool in the fridge until the consistency is like a paste.
  • For the buttercream: Add the egg yolks to a mixing bowl and whip with an electric mixer until light.
  • In the meantime, mix the sugar and 1/2 cup water in a heavy saucepan and bring to a boil. Wet a pastry brush with water and wash down the sides of the pan to avoid crystallization. Continue to cook until the sugar syrup registers 235 degrees F (softball stage) on a candy thermometer. Remove from the heat and, with your mixer running constantly at medium speed, immediately but slowly pour the hot sugar into the egg yolks in a steady stream.
  • Continue to beat with the mixer until the mixture cools down completely. Add the butter, vanilla extract and vanilla bean seeds. Continue to beat until all of the butter is incorporated and the icing is smooth, glossy and spreadable (see Cook's Note). Add some buttercream to a pastry bag.
  • To assemble the cake: Place 1 cake layer on a cake plate. With the pastry bag, pipe a border around the top edge of the cake layer for a "frosting dam" to hold in the toffee sauce. Poke holes into the top of the cake layer and pour at least 1/4 cup toffee sauce (or more to taste) over the top so that it penetrates the cake. Then spread a thin layer (about 1/8-inch thick) of ganache over the top. Put in the freezer for 5 minutes to make the ganache solidify. Then spread a layer of buttercream over the top of the chilled ganache. Generously sprinkle some English toffee bits over the buttercream and drizzle with more toffee sauce and ganache. Place the second cake layer on top and ice with the buttercream. Drizzle the top with more ganache and toffee sauce, then sprinkle toffee bits over the top. Serve immediately or refrigerate, covered. Take out of the fridge 1 hour prior to serving, to bring to room temperature.

2-3/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon ground ginger
3/4 teaspoon ground cinnamon

1 cup sour cream
1 cup hot water
1/2 cup molasses
GANACHE:
1 package (10 ounces) dark chocolate chips
1/4 teaspoon salt
1 can (14 ounces) sweetened condensed milk
2 tablespoons butter
1 teaspoon vanilla extract
2 tablespoons heavy whipping cream
6 tablespoons confectioners' sugar
1 cup brickle toffee bits

Steps:

  • In a small heavy saucepan, heat cream and ginger until bubbles form around sides of pan. Remove from the heat; let cool slightly. Cover and refrigerate for 8 hours or overnight., Meanwhile, in a microwave, melt chocolate; stir until smooth. Set aside. In a large bowl, cream butter and brown sugar until blended. Add eggs, 1 at a time, beating well after each addition. Beat in melted chocolate and the vanilla. Combine the flour, baking soda, ginger, cinnamon, salt, allspice and nutmeg; add to the creamed mixture alternately with sour cream, beating well after each addition., In a small bowl, combine the hot water and molasses; beat into batter. Transfer to 3 greased and floured 8-in. round baking pans., Bake at 350° until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., Meanwhile, for ganache, place chocolate and salt in a double boiler or metal bowl over simmering water; cook and stir until melted, 2-3 minutes. Stir in condensed milk until smooth. Remove from the heat; stir in butter and vanilla until butter is melted., Cool, stirring occasionally, to room temperature or until ganache reaches a spreading consistency, about 45 minutes. Add cream; beat chocolate mixture until smooth, 2-3 minutes., Strain ginger-cream mixture into a large bowl, discarding ginger slices. Beat until cream begins to thicken. Add confectioners' sugar; beat until stiff peaks form., To assemble, place 1 cake layer on a serving plate; spread with half the ganache. Sprinkle with half the toffee bits. Repeat layers once. 2 c all purpose flour
1 c dark brown sugar, packed
1/2 c granulated sugar
1/2 c butter, room temperature
1/2 tsp salt
1 c heath toffee chips or crushed heath candy bars

1 c chopped pecans
2 tsp baking soda
1 c dairy buttermilk
1 large egg
2 tsp vanilla extract
vanilla sauce for drizzle, optional
VANILLA SAUCE:
3 oz pkg. french vanilla instant pudding
2 tsp vanilla extract
2 1/2 c milk
whisk together ingredients until all are blended well. add more milk if needed to make of drizzle consistency. any leftovers store in sealed jar,in refrigerator until needed.

Steps:

  • 1. Preheat oven to 350^. Butter a 13x9-inch baking dish, or muffin pans. Set aside.
  • 2. Combine flour, both sugars, butter and salt on low speed until mixture resembles coarse meal. Transfer 1/2 cup of this mixture to a medium bowl; min in toffee, chocolate chips and pecans. Set aside.
  • 3. Stir baking soda into remaining butter-sugar mixture in the large bowl. Add buttermilk, egg and vanilla, beating until just combined. Do not over beat.
  • 4. Spread batter into prepared pan. Sprinkle with toffee topping. Bake until tipping is golden brown and toothpick inserted into center comes out clean, about 35 minutes. Cool completely and cut into squares. For muffins- bake 15-20 minutes. Test with toothpick.

4 ounces cream cheese, softened

Steps:

  • Preheat oven to 350 degrees F. Grease and flour three 9-inch cake pans. Cut parchment paper circles to fit the bottoms of the pans and fit into the bottom of the cake pans.
  • In a free standing mixer, add both sugars and butter until light and creamy. Beat in eggs, vanilla, and tomatoes. In a separate large bowl, combine cocoa, cake flour, salt, baking soda, and baking powder. Beat cocoa mixture into butter mixture alternately with the buttermilk, in 3 additions. Pour into prepared pans. Bake cakes for 32 to 35 minutes, or until toothpick inserted into center of cake comes out clean and tops of cake spring back at the touch. Cool cakes for 15 minutes. Carefully remove from pans and cool completely on racks.
  • Meanwhile, Prepare whipped ganache filling: In a large saucepan, heat 1 cup cream to boiling. Stir in chocolate. Cover and let sit for 5 minutes. Whisk until smooth. Cool ganache completely. In a separate bowl, whisk remaining 1 cup cream until soft peaks form. Stir in ganache mixtue, stirring gently to not deflate cream. Refrigerate until assembly time.
  • Prepare frosting by combining butter and cream cheese in a large bowl. Beat until fluffy. Stir in buttermilk, salt, vanilla, and lemon juice. Beat in enough powdered sugar in 1/2 cup increments until light and fluffy, adding more buttermilk if necessary.
  • To assemble cake, trim tops of cake with a serrated knife so that they are perfectly even and flat. Place 1 cake layer on cake platter. Spread with half of ganache filling, not quite to the edges. Sprinkle with 1/3 cup almonds, and 1/3 cup toffee bits. Repeat with next layer. Top with final cake layer. Frost entire tops and outsides of cake with cream cheese frosting. Sprinkle tops of cake with remaining toffee and almonds, and garnish with chocolate curls. Serve immediately, or refrigerate up to 24 hours before serving.

15 ounces whole Medjool dates (about 22), pitted, plus 4 more, pitted and halved lengthwise, for garnish
3 tablespoons brandy
2 tablespoons strong-brewed coffee
4 tablespoons unsweetened Dutch-process cocoa powder
2 cups all-purpose flour
1 teaspoon salt
Pinch of ground cinnamon
1 1/2 sticks (12 tablespoons) unsalted butter, room temperature, plus more for pan
3/4 cup packed dark-brown sugar
4 large eggs
1 1/2 teaspoons baking soda
5 ounces bittersweet chocolate (preferably at least 61 percent cacao), coarsely chopped
1/2 stick (4 tablespoons) unsalted butter
2/3 cup packed light-brown sugar
1/3 cup light corn syrup
1 tablespoon water
Pinch of salt
2 tablespoons heavy cream
4 ounces bittersweet chocolate (preferably at least 61 percent cacao), finely chopped
1 tablespoon plus 1 1/2 teaspoons brandy

Steps:

  • For the cake: Preheat oven to 350 degrees. Butter a 9-by-3-inch round cake pan. Line with parchment, and butter parchment.
  • Bring water to a boil in a saucepan. Meanwhile, combine dates, brandy, coffee, and 2 tablespoons cocoa in a heatproof bowl. Stir in boiling water. Let cool, stirring occasionally. Puree cooled date mixture in a food processor (you should have about 2 1/2 cups). Place 3/4 cup puree in a small bowl, and press plastic wrap directly on surface; reserve. Place remaining puree in a large bowl.
  • Whisk flour, salt, cinnamon, and remaining 2 tablespoons cocoa in a bowl.
  • Beat butter and dark-brown sugar with a mixer on medium speed until fluffy. Add eggs, one at a time, beating after each addition (batter will look curdled).
  • Stir baking soda into reserved uncovered date puree. On low speed, beat flour mixture into egg mixture in 2 additions, alternating with the date mixture. Beat in chocolate. Transfer batter to prepared pan, and smooth top.
  • Bake until a toothpick inserted into center of cake comes out clean, about 1 hour. Let cool in pan on a wire rack for 30 minutes. Run a knife around edge of pan to loosen, and invert cake onto rack. Remove parchment, turn cake right side up, and let cool completely. (Cake can be wrapped in plastic and stored at room temperature for up to 2 days.)
  • Make the glaze: Bring butter, light-brown sugar, corn syrup, water, and salt to a boil in a saucepan over medium-low heat, stirring occasionally. Boil 3 minutes. Remove from heat. Whisk in cream. Add chocolate, and whisk until smooth. Whisk in brandy. Let cool until thickened, 15 to 20 minutes.
  • Assemble the cake: Using a serrated knife, trim rounded top of cake so it is flat. Place cake on stand. Spread remaining 3/4 cup date puree over top of cake. Pour glaze over top, letting some drip down sides. Garnish with halved dates.

This beautiful cake is great for company, and so easy to put together. It's a fool-proof moist cake! I have made it 24 hours ahead of time and it's still great, but the toffee pieces didn't stay very crunchy. I must thank my friend Libby and her mom for this recipe. I have also used 2 whole cake mixes to make a very tall cake. (1 whole cake mix, prepared, fits into my 9-inch pan.) But I did not double all the frosting ingredients, and it didn't have quite enough flavor. I recommend for a large cake, doubling everything.

1 cup sour cream
2 cups heavy whipping cream

Steps:

  • CAKE: Prepare cake mix as directed, adding 1 cup sour cream to batter before mixing.
  • Pour into two round cake pans and bake as directed on box. Cool layers thoroughly.
  • (For frosting: Place a mixing bowl and beater into the refrigerator ahead of time to better whip the cream.).
  • Slice each cake layer in half horizontally. (I find this easier if I completely freeze the layers beforehand, then use a very sharp serrated knife!) You now have 4 cake layers. Set aside.
  • FROSTING: Using your cold mixing bowl, blend together whipping cream, powdered sugar, and vanilla. (you can taste this mixture and decide if you want to add more sugar.).
  • Beat at high speed for several minutes, until you achieve "Cool Whip" consistency. (Don't over beat; it will get too thick.).
  • Gently fold in the toffee bits.
  • Frost the cake! Mmmmm -- .
