PANINI WITH CHOCOLATE AND BRIE



Panini with Chocolate and Brie image

12 slices sourdough bread
1/3 cup extra-virgin olive oil
12 ounces Brie cheese, thinly sliced
1 (12-ounce) bag semisweet chocolate chips
1/3 cup thinly sliced fresh basil leaves

Steps:

  • Preheat the panini grill.
  • Brush both sides of the bread with olive oil. Grill the bread slices until they begin to turn golden, about 1 to 2 minutes. Remove from the panini grill and place 2 ounces of cheese on 1 slice of bread (the bottom half), top the cheese with 1/3 cup chocolate chips, and a sprinkle of basil. Top with another slice of bread. Continue with the remaining sandwiches. Return the sandwiches to the panini grill until the chocolate begins to melt, about another 2 minutes.
  • Cut the sandwiches into 2-inch wide rectangles or small triangles and transfer to a serving platter.

8 (1/2-inch) thick slices sourdough bread or peasant bread, buttered on 1 side
3 ounces semisweet chocolate, chopped with a heavy knife

Steps:

  • Preheat the oven to 450 degrees.
  • Lay slices of the bread, butter side down, on an ungreased sheet pan. Sprinkle evenly with the chopped chocolate, covering the bread to within 1/4-inch of the crust. Cover each with a second slice of bread, butter side up. Press closed with the back of a spatula. Bake until the bread is golden and the chocolate begins to melt, about 5 to 7 minutes. Using a spatula, carefully turn each sandwich over and bake 5 to 7 minutes more. Let cool slightly before serving.

nonstick cooking spray
flour, for dusting
8.6 oz puff pastry, 1 sheet, thawed if frozen
¼ cup chocolate hazelnut spread
1 egg, beaten

Steps:

  • Roll out the puff pastry on a lightly floured surface to a 12-inch by 14-inch (30 cm by 35 cm) rectangle.
  • Use a spatula to spread the chocolate hazelnut spread over half of the pastry. Fold other half of the pastry over the chocolate spread.
  • Preheat the oven to 400˚F (200˚C). Grease a baking sheet with nonstick spray.
  • Slice lengthwise into twelve ½-inch (1 cm) wide strips.
  • Hold the top of a strip with one hand and use your other hand to twist. Once the twist goes all the way up the strip, roll into a tight spiral. Repeat with the rest of the strips.
  • Transfer the spirals to the prepared baking sheet and brush with egg wash.
  • Bake for 12 minutes, or until golden brown.

1/4 cup chocolate-hazelnut spread (recommended: Nutella)
12 (1/2-inch) thick slices pound cake (from 1 (10.75-ounce) loaf
6 fresh strawberries, hulled and very thinly sliced
Butter-flavored nonstick cooking spray

Steps:

  • Heat a panini grill to medium according to the manufacturer's instructions. Spread the chocolate-hazelnut spread over 1 side of all of the pound cake slices. Arrange the sliced strawberries over 6 cake slices. Cover with the remaining cake slices, chocolate side down.
  • Spray panini grill with nonstick spray and grill each panino until the pound cake is crisp and golden and the fillings are warm, about 2 minutes. Cut each panino in half and serve.

175 g butter
3/4 cup sugar
3 eggs
1 1/4 cups flour
2 teaspoons baking powder
2 tablespoons cocoa
2 teaspoons vanilla
25 g butter
50 g baking chocolate
3/4 cup icing sugar, sifted
2 tablespoons hot water
100 g white chocolate (optional)

Steps:

  • Cream butter and sugar together until light and fluffy.
  • Add eggs, beating in one at a time.
  • Sift over flour and baking powder and fold into butter mixture.
  • Divide the mixture in half. Place one half in a separate bowl and mix in vanilla. Sift cocoa over other half of mixture and fold inches.
  • Place alternate tablespoon of mixture into a baking paper-lined 20cm cake tin.
  • Swirl the mixtures together with wooden skewer.
  • Bake at 180 C for 35 - 40 minutes or until cake springs back when lightly touched.
  • Cool cake a little. Turn out onto a cake rack and ice when cold.
  • Icing: Melt butter and chocolate over a low heat, stir in icing sugar.
  • Add water and mix to combine. Spread over cake when cool.
  • If you wish to decorate the cake, use a potato peeler and peel white chocolate into curls and sprinkle over icing.

1/2 cup (1 stick) plus 2 tablespoons unsalted butter, room temperature, plus more for baking dish
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup semisweet chocolate chips (about 7 ounces)
1 1/4 cup sugar
2 large whole eggs
2 3/4 teaspoons pure vanilla extract
4 ounces cream cheese
2 large egg yolks

Steps:

  • Preheat oven to 325 degrees. Lightly butter an 8-by-8-inch glass baking dish, and set aside. Into a medium bowl, sift together flour, salt, and baking soda; set aside.
  • Make chocolate batter: In a large heatproof bowl set over a pan of simmering water, heat 1/2 cup butter and 1/2 cup chocolate chips until they are melted. Remove from heat, and stir in 1 cup sugar. Add half the flour mixture, and stir to combine. Add the whole eggs and 2 teaspoons vanilla, and stir to combine. Mix in remaining flour mixture until it is well combined. Measure out 1/2 cup batter, and set aside.
  • Make cream-cheese batter: In the bowl of a food processor fitted with the metal blade, combine the cream cheese, remaining 1/4 cup sugar, remaining 2 tablespoons butter, the egg yolks, and remaining 3/4 teaspoon vanilla. Process until mixture is smooth and well combined. Transfer to a medium bowl. Stir in remaining 1/2 cup chocolate chips.
  • Pour chocolate batter into the prepared baking dish. Spoon the cream-cheese mixture over the chocolate batter, spreading it in an even layer to the edges with an offset spatula. Top with reserved 1/2 cup chocolate batter. Run a knife through the mixture to swirl, as desired. Bake until golden brown and the center is set when touched with your finger, 45 to 50 minutes. Transfer baking dish to a wire rack to cool. Cut into squares, and serve.

2-3/4 cups 2% milk
2 packages (3.9 ounces each) instant chocolate fudge pudding mix
2 cups whipped topping

  • Cut each cake roll into 6 slices; reserve any broken chocolate coating for topping. Line bottom and sides of a 9-in. springform pan with cake slices, covering completely., Whisk milk and pudding mixes 2 minutes (mixture will be thick); spread onto bottom layer of cake rolls.
