STRAWBERRY OREO®-CHOCOLATE ICEBOX CAKE

An easy make-ahead dessert made with strawberry Oreos® and cream. It's whipped together in no time! Ideally make it the day before, so the cookies in this icebox cake have time to soften in the fridge.

2 ½ cups heavy cream
2 tablespoons white sugar
2 teaspoons strawberry extract
¾ cup milk
16 ounces strawberry sandwich cookies (such as Oreo® Strawberry Cream)
2 tablespoons grated milk chocolate
10 fresh strawberries for garnish

Steps:

  • Beat cream in a chilled glass or metal bowl using an electric mixer until frothy. Add sugar gradually, continuing to beat until soft peaks form. Mix in strawberry extract. Spread a little strawberry cream on the bottom of a rectangular dish.
  • Pour milk into a bowl and dip each side of the Oreo into the milk for a couple of seconds then shake off excess.
  • Sandwich cookies together with a heaped teaspoon of strawberry cream each. Lay them into the dish, working lengthwise about 10 across the dish. Continue laying cookies into the dish to create about 4 rows.
  • Cover the top and sides of the cookies with the rest of the cream. Sprinkle grated chocolate on top.
  • Place a sheet of parchment paper over the top of the cake to prevent it from sticking. Cover icebox cake and dish with aluminum foil.
  • Refrigerate until cookies have turned soft, at least 8 hours to overnight. Garnish with strawberries before serving.

1 lb fresh strawberries, cut into quarters
3 tablespoons powdered sugar
3 cups cold whipping cream
1 container (8 oz) mascarpone cheese
1/2 cup powdered sugar
1 teaspoon vanilla
1 box (14.4 oz) chocolate graham crackers
1 cup miniature semisweet chocolate chips

Steps:

  • In medium bowl, place strawberries. Sprinkle with 3 tablespoons powdered sugar; let stand 10 minutes. Crush with potato masher or spoon; set aside.
  • In large bowl, beat whipping cream with whisk attachment of electric mixer on low speed until stiff peaks form.
  • In medium bowl, beat cheese, 1/2 cup powdered sugar and the vanilla with electric mixer on medium speed until combined. Fold in whipped cream, then fold in mashed strawberries.
  • Line bottom of 13x9-inch pan with single layer of graham crackers. Spread one-third of the strawberry-cream mixture over crackers; sprinkle with 1/3 cup of the chocolate chips. Repeat layers twice. Refrigerate 2 hours before serving.

This is a super easy, fun, and delicious no-bake cake!

3 pkg "n*bisco" famous chocolate wafers
2 pkg whipped topping
1 pkg vanilla pudding instant, prepared
1 pkg strawberry pudding, prepared (substitute strawberry greek yogurt and 2 tbs strawberry jam if you cannot find strawberry pudding)
2 oz kahlua

Steps:

  • 1. Fold the vanilla pudding with half of a container of whipped cream
  • 2. Fold the strawberrry pudding with half of a container of whipped cream
  • 3. Use a cake stand or a plate and arrange a layer of chocolate wafers in the center of the plate. Use small dabs of whipped topping to hold the cookies in place if needed.
  • 4. Fill a small spray bottle with Kahlua. Mix with a small amount of water if necessary for fine mist. Spray the cookie layer with a mist of the Kahlua. Mist each layer of cookies with at least one coat of fine mist.
  • 5. Layer vanilla pudding/cream mix, cookies/Kahluah spray, strawberry pudding/cream mix, and cookies/Kahluah spray until cookies are gone. Save a few cookies for decoration if desired.
  • 6. "Frost" the cake with the second container of whipped topping.
  • 7. Cover and chill for at least 24 hours.

1 (4 ounce) package instant chocolate pudding mix
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container non-dairy whipped topping
½ cup confectioners' sugar, or to taste
1 (12.5 ounce) package chocolate-covered graham cracker squares
1 cup chocolate cookie crumbs
1 pound fresh strawberries, sliced
1 cup milk chocolate-covered toffee bits

Steps:

  • Whisk 2 cups cold milk and pudding mix together in a bowl until combined. Refrigerate until ready to use.
  • Combine cream cheese and whipped topping in a medium bowl. Add confectioners' sugar and mix thoroughly.
  • Cover the bottom of a 2-quart bowl or 9x13-inch pan with a layer of graham cracker squares. Spread about 1/3 of the cream cheese mixture on top. Top with 1/4 cup cookie crumbs. Cover with another layer of graham crackers and 1/3 of the pudding. Add a layer of strawberries and 1/4 cup chocolate toffee bits.
