I got this recipe from a co-worker whose sister wanted a pie using German Chocolate Cake ingredients. I think she did a really good job. This pie is delicious!

Number Of Ingredients 11

1 (4 oz) pkg german sweet chocolate (broken)
3/4 c butter or margarine
1 2/3 c evaporated milk (do not dilute)
1 1/2 c sugar
3 Tbsp corn starch
1 1/3 c coconut
1/8 tsp salt
2 eggs
1 tsp vanilla
1/2 c pecans or walnuts
2 frozen pie shells

Steps:

  • 1. In microwave, melt chocolate with butter (1 minute). Remove from microwave and stir until mixed. If the mix is not melted completely, place in the microwave and heat in 30 second increments until melted to a smooth mixture. In a separate bowl, mix sugar and cornstarch together. Add eggs and vanilla into dry ingredients, blend well. Add melted margarine and chocolate, stir. Add evaporated milk and salt. Blend with electric mixer until thoroughly blended, set aside. The mixture will be very soupy.
  • 2. Pie Shell Preparation Sprinkle coconut on the bottom of the pie shell. (I toasted the coconut first.) Sprinkle nuts on top of the coconut covering the coconut well. Pull the oven rack out of the oven and place the pie shells on it. Stir mixture well one last time. Carefully pour pie mix into shells. Do not overfill. Slowly push oven rack back into the oven. Bake 45 minutes in a 350 degree oven. For the last 15 minutes of baking time, cover the pie shell with aluminum foil to prevent the shells from burning. (Cover loosely with foil) The amount of coconut you use depends upon your taste. You do not need to use all of the specified measurement, but do not go over it.
