Chocolate Brownie Sandwich Cookies with White Chocolate Ganache and Strawberry Preserves image

1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
3 cups semisweet chocolate chips (18 ounces)
1/4 cup (1/2 stick) unsalted butter
3 large eggs
2/3 cup sugar
2 teaspoons vanilla extract
1/3 cup whipping cream
2 cups white chocolate chips or 12 ounces white chocolate, coarsely chopped
Strawberry Preserves:
1/2 cup strawberry preserves
About 1 teaspoon finely grated lemon zest
3 ounces white chocolate, finely chopped

Steps:

  • For the cookies: Preheat the oven to 375 degrees F. Line 2 large rimmed baking sheets with parchment paper.
  • Whisk the flour, baking powder and salt in a small bowl.
  • Stir the 2 cups chocolate chips and butter in a medium bowl over a saucepan of barely simmering water until the chocolate mixture is melted and smooth. Remove the bowl and set aside. The mixture may be thick.
  • Combine the eggs, sugar and vanilla in a large bowl. Beat the egg mixture using an electric mixture, until light and fluffy, about 5 minutes. Add the melted chocolate mixture and beat until well blended. Add the flour mixture and beat until just incorporated. Stir the remaining 1 cup chocolate chips into the batter. If the batter is very soft, chill for 15 to 20 minutes to allow the batter to firm up slightly. The batter can be prepared 1 day ahead. Let the batter stand at room temperature at least 1 hour before continuing.
  • Using a small cookie scoop, drop the batter in rounded tablespoonfuls onto the baking sheets, spacing 1 1/2-to-2-inches apart. Bake the cookies until slightly firm to touch and crackled all over tops but still soft in the center, 12 to 15 minutes. Cool the cookies on the sheets.
  • For the white chocolate ganache: Bring the cream to simmer over medium heat in a heavy small saucepan. Remove the pan from heat and add the white chocolate chips. Stir until melted and smooth. Chill the ganache until firm enough to spread, 1 to 2 hours. The ganache can be prepared 1 day ahead. Cover and keep chilled. Let the ganache stand at room temperature 2 hours to soften slightly before using.
  • For the strawberry preserves: Mix the preserves and the lemon zest in a small bowl.
  • Spread about 1 teaspoon ganache onto the flat side of each cookie to within 1/4-inch of the edge. Spoon 1/2 to 1 teaspoon strawberry preserves on the ganache side of half of the cookies. Place the remaining cookies on top, ganache side down, to form sandwich cookies. Chill until the ganache is firm, 15 to 20 minutes. Insert lollipop sticks into the ganache filling, if desired
  • For the white chocolate drizzle: Place the white chocolate in a small bowl over a saucepan of barely simmering water. Stir occasionally until the chocolate is melted and smooth. Drizzle the melted chocolate over the top of one side of each sandwich cookie, using a fork. Chill until the chocolate has set, about 10 minutes. The drizzle can be prepared 1 day ahead. Store airtight in the refrigerator.

I made these for Valentine's Day 2010, during the school week and on a sprained ankle! SUPER easy to do, and delicious! I drew from different recipes all over the net, but changed things up to make them all my own.

2 cups all-purpose flour
¼ teaspoon baking soda
1 tablespoon baking powder
1 cup unsweetened cocoa powder
5 tablespoons unsweetened cocoa powder
1 (0.13 ounce) package unsweetened strawberry-flavored drink mix
¼ teaspoon salt
5 tablespoons butter
2 ½ cups white sugar
4 eggs
2 ½ teaspoons vanilla extract, or to taste
1 ¾ cups milk
¼ cup heavy cream
2 cups heavy cream
2 (0.13 ounce) packages unsweetened strawberry-flavored drink mix
36 ounces white chocolate, chopped

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C). Line the cups of four 24-cup mini cupcake pans with paper liners. Sift the flour, baking soda, baking powder, all the cocoa powder, 1 package of strawberry drink mix, and salt in a mixing bowl.
  • In a separate bowl, beat butter and white sugar with an electric mixer on medium speed until light and fluffy; beat the eggs in, one at a time, adding each egg after the previous one has been completely incorporated. Beat in vanilla extract; mix in the flour-cocoa mixture in 4 additions, alternating each time with milk. Reduce mixer speed to low, and beat in the cream. Fill the cupcake cups 1/2 to 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, 10 to 15 minutes. Remove to racks, and allow the cupcakes to cool.
  • Bring 2 cups of cream almost to a boil in a saucepan over medium-high heat; dissolve the 2 packets of strawberry drink mix into the cream. Stir in the white chocolate until the chunks melt and the mixture becomes melted, smooth, and shiny. Set aside and allow ganache to cool to warm temperature (about 95 degrees F/ 35 degrees C). Frost each cupcake with ganache.

Strawberry and Brownie Ice Cream Cake with Chocolate Ganache image

A layer of rich chocolate ganache nestles between a brownie crust and strawberry ice cream. The whole cake is coated in chocolate whipped cream frosting and topped with crushed chocolate cookies.

3/4 cup heavy cream
8 ounces bittersweet chocolate, chopped
Unsalted butter, for the pan
8 to 10 brownies (2 1/2-inch squares)
1 quart strawberry ice cream, softened
2 cups heavy cream
2 to 3 tablespoons chocolate syrup
2 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
1/4 cup crushed chocolate wafer cookies
Chocolate sauce, for drizzling

Steps:

  • For the ice cream cake: Bring the heavy cream to a simmer in a small pot. Pour the cream over the chocolate in a heatproof bowl and stir until smooth. Allow to cool 10 minutes before using.
  • Butter a 9-inch springform pan and line the bottom with a parchment paper circle.
  • Cover the bottom of the prepared pan with the brownies, using any extra pieces to line the sides of the pan if desired. Spread the chocolate ganache on top.
  • Scoop the ice cream onto the ganache layer, packing it in tightly. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
  • Unmold the cake by running a knife around the edge of it, then unhinge the springform and remove. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a plate on the bottom and invert once more.
  • For the chocolate whipped cream frosting: Add the heavy cream, chocolate syrup, confectioners' sugar and vanilla to a large bowl and whip with an electric mixer until soft peaks form. (This makes enough frosting to cover the top and sides of the cake with additional to pipe decorations if desired.)
  • Frost the top and sides of the cake with the chocolate whipped cream frosting, sprinkle with the cookies and drizzle with chocolate sauce. If the cake begins to get too soft, put it back into the freezer for a few minutes.
  • Freeze another 1 1/2 to 2 hours or overnight. Before serving, let the cake sit at room temperature for about 20 minutes.

3/4 cup strawberry jam
1 pound bittersweet (not unsweetened) or semisweet chocolate, chopped

Steps:

  • Combine cream and jam in heavy large saucepan. Whisk over medium-high heat until jam melts and mixture comes to boil. Add chocolate, remove from heat and whisk until chocolate melts and mixture is smooth. Refrigerate ganache just until thick enough to spread, whisking occasionally, about 1 hour 15 minutes.

I got this from Kraft, and changed the raspberries to strawberries because I like them better. It is a chocolate filled delite. I like to use Anna's Chocolate Mint wafers for the crumb crust, but you can use what ever cookie you like.

8 ounces semisweet baking chocolate, coarsely chopped
1 cup whipping cream
6 tablespoons strawberry jam, divided (I use sugar-free)
1 chocolate crumb crust
2 cups strawberries, sliced
1 tablespoon water

Steps:

  • MICROWAVE chocolate and whipping cream in medium bowl on HIGH 2 minute or until chocolate is almost melted, stirring every minute. Beat with wire whisk until chocolate is completely melted and mixture is well blended. Add 2 tablespoons of the jam; mix well.
  • POUR into crust; cover. Refrigerate 4 hours or overnight.
  • ARRANGE strawberries on top of pie. Microwave remaining 1/4 cup jam and the water in small microwaveable bowl on HIGH 30 sec.; stir until well blended. Brush over strawberries. Refrigerate until ready to serve.
