nonstick cooking spray
1 package plain devil's food cake mix
1 cup low-fat vanilla yogurt or 1 cup nonfat vanilla yogurt
1/2 cup water
1/2 cup vegetable oil
3 eggs
1/3 cup chopped pecans
1/3 cup packed light brown sugar
1/3 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 13x9-inch baking pan with nonstick spray.
  • Place cake mix, yogurt, water, oil, and eggs in a mixing bowl.
  • Using an electric mixer, blend on low speed for 1 minute.
  • Scrape the sides of the bowl, and mix on medium speed for 2 minutes more.
  • Pour the batter into the baking pan and spread evenly with a spatula.
  • Stir together the pecans, brown sugar, and chocolate chips.
  • Sprinkle this mixture over the top of the cake, and bake for 30-35 minutes, or until it springs back when lightly pressed with your finger.
  • Remove the cake from the oven and cool for 20 minutes on a wire rack.
  • Serve slightly warm.

1 cup butter, cubed
1 cup water
1/4 cup baking cocoa
2 cups all-purpose flour
2 cups sugar
1/2 teaspoon salt
1/2 cup sour cream
2 eggs
1 teaspoon baking soda
FROSTING:
1/2 cup butter, softened
3-3/4 cups confectioners' sugar
1/4 cup baking cocoa
1 teaspoon vanilla extract
6 to 7 tablespoons milk
1/2 cup chopped walnuts or pecans, toasted

Steps:

  • In a saucepan, bring butter, water and cocoa to a boil; whisk until smooth. Cool to room temperature. In a bowl, combine flour, sugar and salt. Add cocoa mixture; beat on low speed just until combined. Add sour cream, eggs and baking soda; blend until smooth. Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. For frosting, in a bowl, cream butter. Combine the confectioners' sugar and cocoa; gradually add to butter. Beat in the vanilla and enough milk to achieve spreading consistency. Frost the cake. Sprinkle with nuts. Refrigerate until serving.
