1 cup creamy peanut butter
2/3 cup granulated sugar, plus more for rolling
1/3 cup packed light brown sugar
1/4 teaspoon kosher salt
1 teaspoon pure vanilla extract
1 large egg
2/3 cup semisweet chocolate chips

Steps:

  • Position the oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Beat the peanut butter, granulated sugar, light brown sugar and salt with an electric mixer on medium-high speed in a large bowl until light and fluffy, about 5 minutes. Beat in the vanilla and egg. Stir in the chocolate chips.
  • Put some granulated sugar in a small bowl. Shape tablespoons of the dough into balls and roll each ball in the sugar to coat. Evenly space the balls on the prepared baking sheets. Press each ball down with the tines of a fork to flatten it slightly and make a crisscross pattern.
  • Bake until the bottoms are golden brown, 10 to 12 minutes. Let the cookies cool for a few minutes on the baking sheets, then transfer to a rack to cool completely. The cookies can be stored in an airtight container at room temperature for up to 3 days.

1 box Ritz crackers
1 jar(s) peanut butter
1 jar(s) marshmallow cream
1 pkg chocolate bark

Steps:

  • 1. Spread peanut butter on one Ritz crackers.
  • 2. Then add marshmallow cream to another cracker.
  • 3. Sandwich both together.
  • 4. Place cookies on waxed paper and allow to harden. (I find that if you put the paper or Silpat on a cookie sheet and place it in the freezer for 5 minutes, the cookies harden up faster!).
  • 5. Melt chocolate bark (I like Ghirardelli the best) in a microwave or double boiler.
  • 6. Dip sandwiched cookies into chocolate, covering both sides. After they harden, store in an airtight container.
  • 7. Enjoy!

3 dozen milk chocolate stars or candy-coated chocolate-covered peanuts

Steps:

  • Heat oven to 375°F. Stir together 1/2 cup granulated sugar, the brown sugar, peanut butter, butter, shortening and egg. Stir in flour, baking soda and baking powder.
  • Shape dough into 1-inch balls; roll in granulated sugar. Place about 2 inches apart on ungreased cookie sheet.
  • Bake 8 to 10 minutes or until edges are light brown. Immediately press 1 chocolate star firmly in each cookie; cool on wire rack.

Steps:

  • Preheat oven to 350°. Beat first four ingredients until blended. Add vanilla; beat in eggs one at a time. Whisk together flour, cocoa, baking soda and salt; gradually beat into peanut butter mixture (dough will be sticky). 3 large eggs, room temperature
1 cup butter, melted
2 teaspoons vanilla extract
2 cups sugar
1-1/4 cups all-purpose flour
3/4 cup baking cocoa

FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup creamy peanut butter

1 large egg

  • Preheat oven to 350°. In a large bowl, beat the eggs, butter and vanilla until smooth. Whisk together the dry ingredients; gradually add to egg mixture. Stir in chocolate chips.
