Elvis was famous for loving peanut butter and banana sandwiches. We were married on his birthday, so this creation is in his honor. Chocolate added for Buddha and well,... Bird's just nutty! :) Great with a tall glass of cold milk.

8 tablespoons butter, softened
4 tablespoons creamy peanut butter
1 1/2 cups powdered sugar
1/2 mashed banana
1/2 cup creamy peanut butter
3 bananas, mashed
2 tablespoons vegetable oil
1/2 cup water (more if needed)
2 large eggs
2 tablespoons cocoa powder
1 (18 3/4 ounce) package devil's food cake mix (without pudding)
1/2 cup chopped peanuts
2 tablespoons peanuts, chopped medium fine
dried banana pieces

Steps:

  • FROSTING: With an electric mixer beat together the butter and peanut butter until smooth. Slowly mix/beat in the powdered sugar and milk until frosting reaches a spreadable consistency. Add mashed banana and mix thoroughly (it's okay if it has small lumps of banana in it. Chill until needed.
  • Preheat oven to 375 degrees F. Spray 2 9" round pie pans with bakers ease (or grease and flour pans). Set aside.
  • CAKE: In a medium bowl and with an electric mixer, beat the peanut butter, sliced banana, oil and water together on medium speed until mostly smooth or only a few very small pieces of banana are visible. On low speed beat in the egg, cocoa powder and the cake mix. Increase speed to medium-high and beat for 1 minute or until batter is well blended, adding more water if needed (batter will be thick). If using, gently fold in peanuts.
  • Spoon an equal amount of batter into each round, Bake on center rack for 15-20 minutes or until a wooden pick inserted into the center of cakes comes out clean. Cool on rack.
  • Remove frosting from fridge while cake is cooling. Frost cake when ready. Sprinkle the top and/or sides with an even amount of the chopped peanuts. Garnish the top of with a dried banana chip for each slice. Refrigerate until serving. Note, you can also make cupcakes or a sheetcake if you choose. Keep refrigerated.

Crust
4 strips good bacon (see Note)
10 to 15 (200 g) peanut butter cookies (to make 1 1/2 cup crumbs; see Note)
3 to 5 tablespoons (40 to 70 g) unsalted butter, melted, or bacon fat, or a combination of both
Filling
5 large egg yolks
3 cups (720 ml) whole milk
2/3 cup (130 g) granulated sugar
1/3 cup (40 g) cornstarch
1/2 teaspoon salt
1 teaspoon vanilla extract
4 medium-ripe bananas
Topping
1 cup (240 ml) heavy cream
2 tablespoons powdered sugar
1 tablespoon creamy peanut butter
1 teaspoon vanilla extract
1/4 cup (35 g) peanuts (salted and/or honey roasted), chopped (optional)

Steps:

  • Make the crust: Preheat the oven to 350°F (175°C). On a foil-lined baking sheet, cook the bacon until it is super crispy, but not burnt. Remove it from the oven (keep the oven on), and drain the bacon on paper towels. When the bacon is cool enough to handle, process it in a food processor with the cookies until you've got fine crumbs. Mix the crumbs with the fat until the crumbs are the consistency of wet sand. Press them firmly into a 9-inch (23-cm) pie plate and chill the crust until firm. Bake the crust for about 10 minutes. Allow it to cool completely.
  • Make the filling: Prepare an ice bath. In a small bowl, whisk the egg yolks lightly. In a large saucepan over medium heat, whisk together the milk, granulated sugar, cornstarch, and salt. Bring the mixture to a simmer but do not let it boil, whisking constantly for 4 minutes.
  • Temper the egg yolks by whisking them constantly as you ladle in a thin stream of the hot milk mixture. Add another ladleful of milk, whisking constantly, then pour the egg mixture back into the saucepan of hot milk as you whisk. Cook it over medium-high heat, whisking steadily, until the custard is thick and you see small bubbles breaking the surface, about 3 minutes. Remove it from the heat, whisk in the vanilla, and set the pan in the ice bath. Stir it occasionally with a spatula until fully cooled. (This can be made ahead and refrigerated for up to 1 day, covered tightly with plastic wrap. Make sure the plastic touches the surface of the custard, to prevent a skin from forming.)
  • To assemble the pie, slice the bananas lengthwise or in circles, whichever you prefer, and arrange a layer of them in the bottom of your pie crust. Cover them with a layer of pudding, then repeat with the remaining banana slices and pudding.
  • Make the topping: In a stand mixer, with a hand mixer, or by hand with a whisk, whip the cream, powdered sugar, peanut butter, and vanilla until stiff peaks form. Pile the whipped cream onto the pie filling and top it with the chopped nuts, if desired.

LAYER ONE (CRUST)
18 graham crackers
1 1/4 sticks unsalted butter, room temperature
6 tbsp. white sugar
LAYER TWO:
3 pkgs. (8 oz. each) cream cheese
1 cup natural peanut butter
3/4 cup sugar
1/4 cup brown sugar
2 tsp. vanilla
1/2 cup sour cream
4 large eggs
LAYER THREE:
1/2 cup (1 stick) unsalted butter
1/2 cup brown sugar
4 ripe bananas
LAYER FOUR:
1 cup heavy cream
2 tsp. vanilla
2 tbsp. powdered sugar
1 oz. dark chocolate

Steps:

  • 1. Layer one: Preheat oven to 350. Crushed graham crackers and mix crumbs thoroughly with 1 1/4 sticks butter and 6 Tbsp.. sugar. Put mixture in springform pan, pressing evenly onto bottom and up side of pan. Bake til golden brown, about 8 to 10 minutes. Remove from oven and cool on rack
  • 2. Layer Two: In large bowl, using a hand blender or whisk, beat cream cheese and peanut butter til smooth. Add 3/4 cup sugar and 1/4 cup brown sugar and beat til fluffy. Slowly add eggs and 2 tsp. vanilla and blend. Pour mixture into crust. Cut two large pieces of foil. Place springform pan in center of foil and fold foil up the sides. Place in larger roasting pan and add enough water to come up 1 inch on the outside of the springform pan. Bake til golden brown, about 1 1/4 hours. Remove and cool in refrigerator uncovered for at least 6 hours.
  • 3. Layer Three: To make banana layer, slice bananas 1/2 inch thick. Put remaining 1 stick butter and remaining 1/2 cup brown sugar in large pan over medium heat. Whisk til sugar and butter melt and mixture is smooth and caramel like, about 3 to 4 minutes. Add banana slices to pan in single layer and cook for 2 minutes, turning once. Using a fork, carefully transfer banana slices to top of cheesecake, arranging in an even layer. Return to refrigerator.
  • 4. Layer Four: Put whipping cream, remaining 2 tsp. vanilla and powdered sugar in mixing bowl. Using an electric hand mixer, beat cream til stiff.. Spread whipped cream on top of bananas. To garnish, grate chocolate over top.

BANANA PEANUT BUTTER CHEESECAKE AKA "THE ELVIS"



Banana Peanut Butter Cheesecake aka

This is a combinations of some of my favorite cheesecake recipes. I took this into work and it lasted 30 minutes. The professional baker I work with called this cake 'restaurant quality.' I highly recommend a chocolate ganache to finish it off before serving (8 ounces semisweet chocolate combined with 1/2 cup hot whipping cream) spread over the top! Garnish the side of the cake with toasted coconut if desired.

1 cup graham cracker crumbs
3 tablespoons butter, melted
¾ teaspoon banana extract
3 tablespoons white sugar
1 cup peanut butter chips
¼ cup half-and-half
3 (8 ounce) packages cream cheese at room temperature
½ cup white sugar
3 eggs at room temperature
2 large ripe bananas, mashed
½ teaspoon vanilla extract
½ teaspoon banana extract
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch cake pan and line the bottom with a circle of waxed paper.
  • Mix graham cracker crumbs, melted butter, 3/4 teaspoon banana extract, and 3 tablespoons sugar in a bowl until mixture holds together; transfer into bottom of prepared cake pan. Use a second 8-inch cake pan to press the crust firmly.
  • Bake in the preheated oven until crust is lightly browned, about 8 minutes. Set aside to cool.
  • Pour water to a depth of about 1 inch into the bottom of a double boiler and bring to a boil. Place peanut butter chips and half-and-half into the top of the boiler and set over the bottom of the boiler (boiling water shouldn't touch top boiler). Stir until the chips have melted and the mixture is smooth; set aside to cool.
  • Place cream cheese into the mixing bowl of a stand mixer and slowly mix, using paddle attachment, until cream cheese is smooth. Increase speed to medium and beat in 1/2 cup sugar. Beat eggs into mixture, 1 at a time, blending the next egg in after the previous one is fully incorporated. Beat in bananas, vanilla extract, 1/2 teaspoon banana extract, and lemon juice, stopping occasionally to scrape the sides of the bowl. Finally, beat in peanut butter chip mixture until cheesecake batter is smooth and even. Pour filling into the graham cracker crust.
  • Set the cheesecake on a large baking pan. Pour enough water into the baking pan to reach most of the way up the sides of the cheesecake pan, creating a water bath. Bake cheesecake in the preheated oven until filling is set, about 1 hour. Turn off oven, open door, and let cheesecake cool slowly in the oven for 1 hour.
  • Run a knife around the inside of the cheesecake pan and flip the pan over onto a cooling rack. Place a dish towel on the bottom of the pan. Use a hot water-filled tea kettle to rub the dish towel, gently heating the bottom of the cheesecake; slowly remove pan. Place a serving platter on top and use the wire rack to flip the cake back over onto platter. Refrigerate cheesecake for 8 hours.

Chocolate-Peanut Butter Banana

1 chocolate cookie crust
1 C creamy peanut butter
1 8 oz package cream cheese, softened
1 1/2 C sugar (divided)
1 T butter, softened
2 T real vanilla extract (divided)
2 C heavy whipping cream (divided)
2 bananas
2 T brown sugar
1 oz semi sweet chocolate

Steps:

  • 1. Combine peanut butter, cream cheese, sugar, butter and 1 T vanilla in an electric mixing bowl. Transfer peanut butter mix to a separate bowl. Whip 1 cup heavy cream in mixer, gradually adding 1/4 cup of sugar. Fold half of whipped cream into peanut butter mix. Then fold the other half in. Set aside. 2. Slice bananas and sprinkle with brown sugar. Set aside. 3. Whip 1 cup of heavy cream in mixer, gradually adding 1/4 cup of sugar, and 1 T vanilla. 4. To assemble pie, spread the peanut butter silk evenly in bottom of chocolate pie shell. Then, place the banana slices in one even layer on top of peanut butter. Use a spatula to evenly spread the whipped cream on top of the bananas. Shave the chocolate and sprinkle on top of the whipped cream. 5. Place pie in freezer for 1 hour. Transfer to refrigerator for 2 more hours before serving.
