2 teaspoons butter, softened
2 slices white bread
1/2 teaspoon sugar
1 tablespoon cream cheese, softened
1/2 milk chocolate candy bar (1.55 ounces)
1/2 cup sliced fresh strawberries
1/4 cup heavy whipping cream, whipped

Steps:

  • Butter one side of each slice of bread; sprinkle with sugar. Spread cream cheese over the other side. Place candy bar on the cream cheese side of one slice; top with the other slice, butter side up. , Cook on an indoor grill or panini maker for 2-3 minutes or until bread is browned and candy bar is melted. Cut in half; top with strawberries and whipped cream.

1 (12-ounce) bag semisweet chocolate chips

Steps:

  • Preheat the panini grill.
  • Brush both sides of the bread with olive oil. Grill the bread slices until they begin to turn golden, about 1 to 2 minutes. Remove from the panini grill and place 2 ounces of cheese on 1 slice of bread (the bottom half), top the cheese with 1/3 cup chocolate chips, and a sprinkle of basil. Top with another slice of bread. Continue with the remaining sandwiches. Return the sandwiches to the panini grill until the chocolate begins to melt, about another 2 minutes.

Ingredient info: Mascarpone cheese is an Italian cream cheese that's sold at many supermarkets and at Italian markets.

Steps:

  • Prepare barbecue (medium heat). Butter 1 side of each bread slice. Arrange 4 bread slices, buttered side down, on baking sheet; spread each with 1 tablespoon preserves. Arrange 8 berries over preserves on each slice. Sprinkle chocolate evenly over each, leaving 1/2-inch border. Spread mascarpone over plain side of remaining 4 bread slices, leaving 1/2-inch border. A friend gave this to me from one of her cooking magazines (but I don't know which one!). You do need a panini or waffle maker to press them.

1 1/3 cups chopped hazelnuts
2 ounces chocolate, coarsely chopped (bittersweet or semi-sweet)
1/4 cup fat-free half-and-half
2 tablespoons dark brown sugar, packed
8 slices whole-grain bread
1 pinch salt

Steps:

  • Preheat oven to 350°F Spread hazelnuts on a pie plate. Bake until golden brown (around 12 minutes). Transfer hot hazelnuts to a mini-food processor and pulse until mixture forms a paste. Add chocolate and pulse until melted.
  • Cook half-and-half, brown sugar, and salt in small saucepan over medium heat, stirring, just until mixture comes to a boil and brown sugar dissolves, about 3 minutes. Pour into glass measure. With food processor running, add half-and-half mixture to chocolate-nut mixture through feed tube and puree. Transfer to bowl and let cool until spreadable.
  • Spray one side of bread slices with nonstick spray. Put 4 slices, sprayed side down, on sheet of wax paper and spread each with 2 Tbsp chocolate nut mixture. Top with remaining slices, sprayed side up.
  • Heat panini maker or waffle maker according to manufacturer's directions. Add panini, in batches if necessary, and cook until golden brown, around 2 minutes. Cut each panino into thirds.

5 teaspoons active dry yeast
1 teaspoon sugar

1 large egg

  • In a large bowl, combine 1-1/2 cups flour, yeast, sugar and salt. In a small saucepan, heat the water, milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened.
