SALTED TOFFEE OYSTER CRACKERS



Salted Toffee Oyster Crackers image

Salted Toffee Oyster Crackers - A layer of oyster crackers covered with toffee sauce & baked - a sweet, salty, crunchy snack.

4 cups Oyster Crackers
½ cup dark brown sugar
1/8 teaspoon cayenne pepper or other seasoning - optional
½ cup salted butter
Coarse Sea Salt or kosher salt (to taste)

Steps:

  • Preheat oven to 400F.
  • Line a baking pan with aluminum foil then spray the foil lightly with cooking spray.
  • Melt butter in a medium sized, heavy-bottomed, saucepan set over medium-low heat. Add brown sugar and cayenne pepper (if using). While stirring gently and very slowly, bring the mixture to a boil slowly and over steady heat. Use a candy thermometer to check the temperature. Continue stirring very slowly and gently (it is a slow process). Boil 3-4 minutes or until the thermometer registers 270°-290°F and becomes lighter in color and "fluffier". Turn off the heat and add the oyster crackers."
  • Now, working quickly so the brown sugar/butter mixture doesn't set up, pour the toffee/oyster crackers onto the prepared baking sheet and try to spread them out to a single layer. (If it is too difficult to spread the crackers into a single layer at this point, don't worry - it will be possible in a few minutes.)
  • Sprinkle the crackers lightly with coarse sea salt or kosher salt.
  • Place the crackers on a middle rack in the hot oven and bake 2 minutes.
  • Remove the crackers from the oven and smooth them out to a single layer.
  • Place back in the oven and bake for 3 more minutes.
  • After a total 5 minutes baking time, remove from oven and place the pan on a cooling rack to cool for 5 minutes.
  • Once they are cool enough to handle, pick up the edges of the aluminum foil that is under the crackers and bring the edges together so the crackers roll together.
  • Remove from the foil, break into individual pieces and place on foil or parchment paper to cool completely.
  • Store in an airtight container.

1 cup plus 2 tablespoons butter, softened, divided
2 cups packed brown sugar
2 large eggs
4 teaspoons vanilla extract, divided
3 cups quick-cooking oats
2-1/2 cups all-purpose flour
1-1/2 teaspoons salt, divided
1 teaspoon baking soda
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • In a large bowl, cream 1 cup butter and brown sugar until light and fluffy. Beat in eggs and 2 teaspoons vanilla. Combine the oats, flour, 1 teaspoon salt and baking soda; gradually add to creamed mixture and mix well. Press two-thirds of oat mixture into a greased 15x10x1-in. baking pan. , In a large saucepan, combine the milk, chocolate chips, salt and remaining butter. Cook and stir over low heat until chocolate is melted. Remove from the heat; stir in walnuts and remaining vanilla. Spread over the crust. Sprinkle with remaining oat mixture. , Bake at 350° for 25 minutes or until golden brown. Cool on a wire rack. Cut into squares.

These taste almost like Score Chocolate bars and you would never know you are eating soda crackers! I was skeptical the first time I tried it but it's really true; they taste just like a Score Chocolate bar!!

40 soda crackers, Salted or unsalted (Turned the right way 40 will fit on a cookie sheet)
3/4 cup granulated sugar
1 cup butter, no substitutes (I've used a 50/50 butter-marg blend and it worked)
1 (345 g) package semi-sweet chocolate chips (I've used milk chocolate, mint, semi-sweet and all different amounts, sometimes more, sometimes less)

Steps:

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with aluminum foil and place whole crackers on sheet.
  • Melt butter and sugar in saucepan over medium-high heat.
  • Heat to boiling; boil until sugar is completely dissolved. Spread over crackers.
  • Bake for 10 minutes.
  • Remove from oven and immediately sprinkle with chocolate chips; let stand for 3-5 minutes.
  • Using paint brush/barbeque brush/silicone brush or even the back of a spoon, spread melted chocolate over baked crackers.
  • You can sprinkle coloured sugar crystals on top or whatever you want, red & green for Christmas, orange for Halloween, etc.
  • Cool in fridge until hard.
  • Break into chunks or cut into squares.

1 c butter, room temperature
1 c packed brown sugar
1 1/2 c semi-sweet chocolate chips
1 1/2 c chopped nuts (food processor works well)

Steps:

  • 1. Line a 15x10 inch baking pan with parchment paper and coat with cooking spray..(I used butter) Place crackers on pan to cover bottom, DO NOT overlap. In a saucepan, melt butter, add the brown sugar and bring to a boil. Boil for 3 minutes. Pour over crackers and spread until completely covered.
  • 2. Bake at 350* for 5 minutes. (crackers will float). Remove from oven. Turn oven off. sprinkle chocolate chips and walnuts, (or whatever nuts you like) over crackers. Return to oven until chocolate melts, about 3-5 minutes. Remove from oven. using a greased spatula press walnuts onto chocolate. Cut into 1" squares until warm...Cool completely and remove from Parchment/Foil...makes about 5 dozen

2 cups graham cracker crumbs
2 cups flaked coconut
¼ cup margarine, melted
1 (14 ounce) can sweetened condensed milk
4 (1.55 ounce) bars milk chocolate candy

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease an 8x8 inch baking dish.
  • In a medium bowl, stir together the graham cracker crumbs and coconut. Pour in the condensed milk and melted margarine, mix until well blended. Press the mixture evenly into the prepared pan.
  • Bake for 10 to 12 minutes in the preheated oven. Remove and let cool. Melt chocolate bars in a microwave or over a double boiler, stirring occasionally until smooth. Spread over the cooled bars, chill and cut into squares.
