FRUITY BLACK BEAN SALSA image

1/2 (15-ounce) can black beans, rinsed and drained
1/2 small papaya, peeled, seeded, and cut into 1/2-inch cubes* (or jarred papaya or fresh mango)
1/4 red or green bell pepper, seeded and chopped
1/2 large ripe avocado, cut into 1/2-inch cubes
1 jalapeño pepper, seeded and minced
1/8 cup chopped fresh cilantro
1/2 teaspoon grated lemon rind
1 tablespoons fresh lemon juice
1/2 tablespoon honey
1/4 teaspoon salt

Steps:

  • Combine black beans and next 5 ingredients in a glass bowl. Whisk together rind and remaining ingredients in a small bowl, and drizzle over bean mixture. Toss gently to coat. Cover and chill salsa until ready to serve.
