5 ounces semisweet chocolate, chopped
1/3 cup caramel ice cream topping

Steps:

  • For chocolate mousse, heat 2 cups cream in a small heavy saucepan over medium heat until it begins to simmer, about 180°. Remove from the heat; whisk in chocolate until smooth. Transfer to a bowl; refrigerate until chilled. Beat until soft peaks form., For caramel mousse, beat remaining cream in a large bowl until it begins to thicken. Add caramel topping; beat until soft peaks form., Spoon 3 tablespoons chocolate mousse into six parfait glasses; top with 3 tablespoons caramel mousse. Repeat layers. Refrigerate until serving.

2 large eggs
1/4 cup sugar
3 ounces semisweet chocolate, finely chopped (2/3 cup)
1 tablespoon Dutch-process cocoa powder
2 teaspoons instant espresso powder
1/4 teaspoon kosher salt
1 tablespoon unsalted butter
1/2 cup heavy cream, plus more, lightly whipped, for serving
4 Belgian spice cookies, such as Lotus Biscoff, lightly crushed, plus more for serving

Steps:

  • Whisk together eggs and sugar in a heatproof bowl set over (but not in) a pot of simmering water until doubled in volume and a thermometer registers 160 degrees (6 to 8 minutes). Remove from heat. Add chocolate, cocoa, espresso powder, and salt. Stir in butter until melted. Let cool slightly.
  • Meanwhile, whip cream to stiff peaks. Stir one-third of whipped cream into chocolate mixture until lightened, then fold in remaining whipped cream. Divide half of mousse between two glasses; sprinkle with crushed cookies. Top with remaining mousse and refrigerate until set, at least 1 hour and up to 1 day. To serve, top with lightly whipped cream and more cookie crumbs.

Tangy lemon curd and a white chocolate ganache are each folded with whipped cream to form airy mousses. They're layered here with pretty sliced strawberries, but any berry or soft ripe fruit will work.

5 large egg yolks
1/2 cup sugar
1/2 cup fresh lemon juice
4 teaspoons finely grated lemon peel
Pinch of salt
1/4 cup plus 2 2/3 cups chilled heavy whipping cream
1 3.5-ounce bar high-quality white chocolate (such as Lindt or Perugina), finely chopped
5 cups sliced hulled strawberries (about 2 pounds)

Steps:

  • Whisk egg yolks, sugar, lemon juice, lemon peel, and salt in medium metal bowl to blend. Set bowl over saucepan of simmering water. Whisk until mixture is very thick and thermometer inserted into center registers 160°F to 170°F, about 6 minutes. Remove bowl from over water. Cool lemon mousse base to room temperature.
  • Combine 1/4 cup cream and white chocolate in another medium metal bowl. Set bowl over saucepan of barely simmering water. Stir constantly until chocolate is soft and almost melted. Remove bowl from over water and stir until white chocolate is melted and smooth. Cool white chocolate mousse base to room temperature.
  • Beat remaining 2 2/3 cups cream in large bowl until firm peaks form. Divide whipped cream between both mousse bases, folding in 1 cup at a time (about 3 cups for each).
  • Layer scant 1/4 cup lemon mousse in each of 8 parfait glasses or wineglasses; top with 2 tablespoons strawberries. Layer scant 1/4 cup white chocolate mousse over strawberries. Repeat layering 1 more time. DO AHEAD: Can be made 1 day ahead. Cover with plastic wrap and chill. Cover and chill remaining strawberries.
  • Spoon strawberries over top of each parfait, if desired, and serve.

CHOCOLATE KAHLUA MOUSSE PARFAITS

Perfect for summer, these parfaits are light and refreshing. They can make an elegant finish to your meal. Instead of chocolate graham crackers you could use crushed Oreos, but I think the richness of the Oreo overwhelms the light mousse flavor. Cooking time is Chill time. Note: If you chose a smaller glass, such as a champagne glass, you will get 6 servings instead of 4 and will need to adjust the layering amounts accordingly.

1/2 cup 2% low-fat milk, very cold
1/4 cup Kahlua
1 (3 1/8 ounce) envelope instant chocolate mousse mix
1 tablespoon unsweetened cocoa powder
1 1/4 cups finely crushed chocolate graham crackers
1 1/2 cups Cool Whip, thawed
sugar wafers (optional) or Oreo cookies, etc, for garnish (optional)

Steps:

  • In a large mixing bowl, combine the milk, kahlua, mousee, and cocoa. Whip on low speed until well blended. Slowly increase the mixer to high, whipping for 4-5 minutes, or until fluffy.
  • In 4 clear glass dessert bowls (or wine/champagne glasses), layer 1/8 of the mousse, 2-3 tablespoons of graham crumbs, and 3 tablespoons of Cool Whip.
  • If choosing to garnish with cracker crumbs rather than cookies, reserve about 1/4 teaspoon of the cookie crumbs. Repeat the layering, using the remaining ingredients.
  • If garnishing with crumbs, sprinkle the remaining crumbs on top of each serving. If garnishing with cookies, leave the top of the parfait empty for now.
  • Refrigerate for at least 2 hours before serving. Before serving, garnish with cookies if desired.

4 Orange Milano cookies (I used Pepperidge Farm)
1 3/4 c whipping cream
1/4 c orange juice
1 box instant cheesecake pudding and pie filling; 3.4 ounce
2 Tbsp plus 2 teaspoons hot fudge sauce, room temperature

Steps:

  • 1. Place cookies into a small resealable plastic bag. Using a mallet or rolling pin, crush cookies; set aside.
  • 2. In a large chilled bowl, place the whipping cream, orange juice and cheesecake pudding and pie filling. Using a hand mixer, beat slowly until combined, about 30 seconds.
  • 3. Increase speed to high and beat until stiff peaks form, about 1 minute to 1 1/2 minutes. Scraping bowl occasionally.
  • 4. Using 2 (8-ounce) martini glasses (or parfait glasses), begin layering the parfaits. Place about 1/2 tablespoon of the crushed cookies into the bottom of the glasses.
  • 5. Top with 1 teaspoon fudge sauce.
  • 6. Top with 1/3 cup cheesecake mixture.
  • 7. Then 1 tablespoon crushed cookies.
  • 8. Next, 1 tablespoon of the fudge.
  • 9. Add 2/3 cup cheesecake mixture, then remaining crushed cookies.
  • 10. Can be eaten immediately or refrigerate until ready to serve.

1/2 cup lemon juice
1/2 cup sugar
4 teaspoons finely grated lemon zest
Pinch salt
1/4 cup plus 2 2/3 cup 35-percent whipping cream
One 3.5-ounce bar white chocolate, finely chopped
4 cups strawberries, hulled and sliced

Steps:

  • Whisk the egg yolks, lemon juice, sugar, lemon zest and salt in a medium bowl and mix together well. Place over a pot of simmering water and whisk until the yolks are very thick, about 6 minutes. Cool.
  • Combine 1/4 cup whipping cream and the white chocolate in a mixing bowl over a pot of simmering water. Stir until melted and smooth. Cool to room temperature.
  • Beat the remaining 2 2/3 cup whipping cream until firm peaks form. Divide the whipped cream between the lemon and white chocolate mousse bases, folding in 1 cup at a time.

1 env. KNOX Unflavored Gelatine
1/4 cup sugar
1 tsp. grated lemon zest
2 cups milk, divided
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), broken into pieces
1 cup thawed COOL WHIP Whipped Topping
6 amaretti or small biscotti cookies, chopped

Steps:

  • Mix gelatine, sugar and lemon zest in medium saucepan. Stir in 3/4 cup of the milk; let stand 1 min. Cook on low heat 5 min. or until gelatine is completely dissolved, stirring occasionally. Remove from heat. Add chocolate; stir until completely melted. Gradually add remaining 1-1/4 cups milk, stirring until well blended.
  • Refrigerate 30 min. or until mixture is consistency of unbeaten egg whites, stirring occasionally. Gently stir in whipped topping.
  • Spoon half of the gelatine mixture evenly into six 8-oz. parfait glasses. Top with the chopped cookies and remaining gelatine mixture. Refrigerate 2 hours or until set. Store leftover parfaits in refrigerator.

1 - 3.4 ounce instant white chocolate pudding mix
3/4 cup instant hot chocolate mix
3 Tbl melted and cooled dark chocolate (you want it soft)
1 cup whole milk
1 cup less 2 Tbl heavy cream
1/3-1/2 cup Mini Marshmallow Bits
1/3 cup Milk Chocolate Ganache, just barely warm - thick and still pourable
4-6 Tbl chocolate curls

Steps:

  • Place a medium-large bowl (I use metal) with beaters in the fridge for 30 minutes to chill it.
  • When ready to make the mouse, remove the bowl and beaters from the fridge.
  • In the bowl add in the white chocolate pudding mix, hot chocolate, milk and cream.
  • Starting your beaters off on low, slowly blend the mixture together. ~1-2 minutes.
  • Slowly increase the beaters to medium high and start to whip.
  • As the mixture starts to thicken up add in 1 Tbl at a time of the soft dark chocolate incorporating before adding in the next.
  • The mixture will be thick and fluffy in about 5-6 minutes.
  • Grab 4-6 pretty Parfait Glass and place enough mousse to fill up 1/3 of the way.
  • Place a Tbl of the mini marshmallow bits on top.
  • Pour the ganache over top of the bits dividing evenly.
  • Add the rest of the mousse on top of each parfait.
  • Garnish with the remaining bits and chocolate curls.
  • Place the mixture into your serving cups.
  • Cover with plastic wrap and chill for at least 1 hour.
