- Beat cream in a chilled glass or metal bowl using an electric mixer until soft peaks form.
- Mix cream cheese, cocoa powder, stevia, and vanilla extract in a second bowl using an electric mixer. Fold 1 tablespoon of whipped cream into the cream cheese mixture. Fold in remaining whipped cream until well incorporated. Spoon chocolate mousse into individual serving bowls and refrigerate.

Can't believe how good this is and it's gluten free and low carb!! So easy to put together too!! Flavor was even better on the second day! I don't know about a third day.. this didn't survive that long!

Steps:
- 1. Heat oven to 350 F. Melt the butter and mix the ingredients for the crust up in the pan and press into place with your fingertips.
- 2. Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly. Allow to cool completely.
- 3. Slice strawberries thin and spread in bottom of cooled crust.
- 4. In a mixing bowl, combine pudding mix and milk until thickened. Fold in cool whip until well blended. Spread over strawberries in pie plate. Chill until ready to serve.

This is really good. You might try making it with Splenda, if available in your area. Add a spoonful of Kahlua or orange zest for variety.

- Add splenda, cocoa, vanilla, chocolate syrup, and cinnamon.
