Extra chewy granola bars. You can make them your own by picking different ingredients to add in! Try using any combination of miniature chocolate chips, sunflower seeds, raisins, chopped dried fruits, candy-coated chocolate pieces, chopped nuts, etc.

4 ½ cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
⅔ cup butter, softened
½ cup honey
⅓ cup packed brown sugar
2 cups miniature semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
  • In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
  • Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

HOMEMADE CHOCOLATE GRANOLA BARS



Homemade Chocolate Granola Bars image

Healthy, oat-based and with no added sugar, these chocolate granola bars can be customized to your liking with add-ins for a nutritious gluten-free snack.

Number Of Ingredients 10

2 cups rolled oats (use gluten-free if needed)
1/2 cup dried tart cherries (*or other dried fruit)
1/2 cup chopped nuts (**any blend you like)
1/4 cup unsweetened cacao powder
1/4 teaspoon salt
3/4 cup unsweetened applesauce
1/3 cup maple syrup
1 teaspoon vanilla
1 tablespoon chia seeds (***optional)
1 tablespoon cacao nibs (***optional)

Steps:

  • Preheat oven to 350°F.
  • Line an 8x8 baking dish with parchment paper so that it hangs over the edges.
  • *Optional - spread oats on a baking sheet in a single layer and toast in the oven for 7-10 minutes shaking the pan occasionally until just starting to turn golden brown. Remove from the oven and let cool a few minutes.
  • Transfer the cooled oats to a large bowl and add the dried fruit, nuts, cacao powder and salt, stir to mix.
  • In a medium bowl, whisk together the applesauce, maple syrup and vanilla until smooth.
  • Fold in the chia seeds and cacao nibs if using until combined.
  • Spread the mixture evenly into the prepared baking dish, pressing into the corners and flattening the top.
  • Bake for 30 minutes, remove from oven and place on a rack to cool for 10-15 minutes.
  • Remove the bars from the dish by lifting the edges of the parchment paper up and place directly on the rack until cooled completely.
  • Cut into 8 pieces and store wrapped tightly or in an air tight container. Bars will keep at room temperature for about 5 days or up to 2 weeks in the refrigerator.

Most granola bars are too sweet for my taste, so I wasn't much of a fan until I made these. They're inspired by a recipe from "Good to the Grain," by Kim Boyce, but I've cut down on the honey and added chocolate.

3 tablespoons unsalted butter or canola oil, plus additional for the pan and for your hands
2 cups mixed flaked grain cereal or rolled oats
1/2 cup flaxseed meal
1/2 teaspoon cinnamon
1/4 teaspoon salt (optional)
1/3 cup honey or agave syrup
2 tablespoons brown sugar
1 teaspoon vanilla
1/2 cup chopped bittersweet chocolate or chocolate chips

Steps:

  • Preheat the oven to 300 degrees. Generously butter or oil a 9-by-9-inch metal or glass baking pan.
  • Melt the butter over medium heat in a wide saucepan. Add the flaked grains or oats. Stir over medium heat until the grains are lightly toasted, taking care not to let them burn. Stir until they are beginning to smell toasty and have slightly darkened, six to seven minutes. Remove from the heat, and transfer to a bowl. Add the flaxseed meal, the cinnamon and the salt. Wipe the pan clean.
  • Combine the honey, vanilla and brown sugar in the pan in which you toasted the oats. Bring to a boil over medium heat. Boil five minutes. Pour over the oat mixture, and stir until it is evenly distributed over the mixture. Allow to cool for five minutes, then stir in the chocolate pieces.
  • Scrape into the pan, and spread evenly. Place in the oven for 20 minutes. Do not allow to brown or the bars will be hard instead of chewy. Remove from the heat, and allow to cool. Cut into 16 to 20 pieces, and store in an airtight container.

1 package (10 ounces) large marshmallows
3 tablespoons butter
5 cups crisp rice cereal
1 cup malted milk powder, divided
4 cups malted milk balls, chopped, divided
2 cups semisweet chocolate chips

Steps:

  • In a Dutch oven, combine marshmallows and butter. Cook and stir over medium-low heat until melted. Remove from the heat; stir in the cereal, 3/4 cup malt powder and 2-1/2 cups malted milk balls. Press into a greased 13x9-in. pan., In a microwave-safe bowl, melt chocolate chips; stir until smooth. Stir in remaining malt powder. Spread over cereal bars. Sprinkle with remaining malted milk balls; press into chocolate. Let stand until set. Using a serrated knife, cut into squares.

I have extremely fond memories of drinking a glass of Ovaltine with my grandfather Eugene Campbell after he finished working at Republic Steel Mill. Then, we would take a nap. Anyway, I still drink Ovaltine & it actually has vitamins in it so it's good for you too along with be delicious. I thought why not add it to my granola...

2 c oatmeal, instant
1/4 c ovaltine, chocolate malted mix
2 Tbsp ovaltine
1/3 c pumpkin seeds
1/3 c goji berries, dried
1/3 c craisins
1/2 c peanut butter
1/4 c honey
4 - 5 Tbsp milk

Steps:

  • 1. Gather all ingredients and add to a microwaveable bowl. Mix all ingredients together with spatula....add only 3 tablespoons of milk. It should all be mixed well together and no dry mix. If still a little dry add 1 more tbsp of milk.
  • 2. Microwave for 1 to 1 1/2 minute. Then press into a granola bar mold or if you don't have one then into a bread pan. It would slice well...or whatever you have on hand. This makes 6 bars. I refrigerate for an hour or so.
  • 3. Pop the bars out of the mold or pan. Slice them individually if they were in a pan. I will try this next time so I can see better how to do it.
  • 4. Pop into Tupperware granola bar mold or a loaf pan or whatever you have that will work best.
  • 5. Pop out

¼ cup maple syrup
2 tablespoons vegetable oil
½ teaspoon vanilla extract
¾ teaspoon kosher salt
1 pinch cayenne pepper
3 tablespoons unsweetened cocoa powder
2 cups rolled oats
¾ cup chopped almonds

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C).
  • Combine brown sugar, maple syrup, vegetable oil, vanilla extract, salt, cayenne pepper, and cocoa powder in a bowl. Whisk thoroughly. Add oats and almonds. Toss and smear the mixture together using a spatula until well coated. Spread mixture evenly over a silicone-lined baking sheet.
  • Bake in the preheated oven for 30 minutes. Toss granola with a fork, breaking up any clumps to get a finer texture. Continue baking until desired texture is reached, 30 to 60 minutes more. Sprinkle some granola onto a plate; if it clinks, it is ready. Turn off the oven and leave granola inside the oven to dry and cool to room temperature.

1 (1 ounce) square unsweetened chocolate, chopped
½ cup shortening
¾ cup white sugar
2 eggs
½ teaspoon vanilla extract
1 cup all-purpose flour
½ cup chocolate malt powder
½ teaspoon baking powder
½ teaspoon salt
2 tablespoons butter
¼ cup chocolate malt powder
1 pinch salt
1 cup confectioners' sugar
1 ½ tablespoons heavy cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan. In a bowl over a pan of simmering water, or in the microwave, melt the unsweetened chocolate, stirring occasionally until smooth. Set aside to cool.
  • In a medium bowl, cream together the shortening and white sugar until light and fluffy. Beat in the eggs, one at a time then stir in the vanilla. Mix in the melted chocolate Combine the flour, 1/2 cup chocolate malt powder, baking powder and salt; stir into the chocolate mixture. Spread evenly into the prepared pan.
  • Bake for 20 to 25 minutes in the preheated oven, until set. Let bars cool in the pan before frosting.
  • To make frosting, cream together the butter, 1/4 cup of malt powder and salt. Gradually beat in the confectioners' sugar and heavy cream until smooth and spreadable. Spread over cooled bars before cutting into squares.

5 tablespoons corn syrup
½ cup applesauce
2 teaspoons vanilla extract

½ cup miniature marshmallows
½ cup toasted oat cereal rings
⅔ cup wheat germ

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, stir together the brown sugar, peanut butter, corn syrup, applesauce, and vanilla. In a separate bowl, stir together the oats, chocolate chips, mini marshmallows, cereal rings and wheat germ. Stir the dry ingredients into the peanut butter mixture until evenly coated. Press lightly into the prepared pan.
  • Bake or 25 to 30 minutes in the preheated oven, or until slightly golden. Cool in the pan on a wire rack. Cut into bars.
