DOUBLE-THE-LOVE CHOCOLATE CAKE



Double-the-love chocolate cake image

A simple white chocolate buttercream looks great when it's swirled over this gorgeous wedding cake - however roughly you do it

400g butter
200g plain chocolate
700g plain flour
800g caster sugar
100g cocoa
2 tsp bicarbonate of soda
4 large eggs
400ml buttermilk
2 x 200g bars white chocolate
550g softened butter
550g icing sugar
2-3 x 80g bags white chocolate buttons , flowers and ribbons, optional

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base and sides of deep, round 20cm and 15cm cake tins with baking parchment - making sure the paper comes a few cms above the sides.
  • Boil the kettle. Put half the butter and chocolate in a pan and gently melt, stirring. Mix together half of the flour, sugar, cocoa and bicarb with a pinch of salt. Whisk 2 of the eggs and 200ml buttermilk together. Scrape the melted chocolate mixture and egg mixture into the dry ingredients. Add 150ml boiling water and whizz everything together with an electric whisk until lump-free. Divide between the tins and bake for 40-45 mins, swapping round after 30 mins if they're on different shelves (the 15cm one should be done after 40 mins). To test they're cooked, push in a skewer and check it comes out clean. Cool the cakes in their tins.
  • Repeat steps 1 and 2 again, so you end up with 2 x 20cm cakes and 2 x 15cm cakes.
  • Melt the white chocolate in a bowl over a pan of barely simmering water. Beat together the butter and icing sugar, then beat in the white chocolate. When the cakes are cool, split each one in half. Use the icing to sandwich back together so you end up with 2 x four-layered cakes. Sit the 20cm cake on your serving plate and spread some more icing over the top. Sit the smaller cake on top of that, and completely cover with icing. Decorate with the chocolate buttons.
  • If you want to add some flowers choose something edible, like roses. Make a posy, wrapping the stems in a little damp kitchen paper then some cling film, add a ribbon and add to the cake on the day of the wedding.

One 16.5-ounce box chocolate cake mix plus ingredients for baking listed on the box
1/4 teaspoon peppermint extract
One 32-ounce container part-skim ricotta cheese
4 ounces mascarpone
3/4 cup sugar
4 large eggs
1 teaspoon vanilla extract
One 10-ounce bag bittersweet chocolate chips
5 ounces heavy cream
1 tablespoon light corn syrup
1/8 teaspoon peppermint extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Lightly grease a 9-by-13-inch baking pan with canola spray.
  • Prepare the boxed cake batter according to the package directions, adding the peppermint extract. Spread evenly in the prepared pan and set aside.
  • Combine the ricotta, mascarpone, sugar, eggs and vanilla in the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth. Gently scoop the filling onto the cake batter and spread so the top is completely white.
  • Bake until a toothpick inserted into the center of the cake comes out clean, 50 to 65 minutes. Remove from the oven and let cool 20 minutes.
  • For the ganache: Combine the chocolate chips, cream, corn syrup and peppermint extract in the top of a double boiler. Gently stir the mixture until the chocolate melts and the ganache becomes very smooth.
  • Spread the ganache evenly over the cooled cake and let stand 10 minutes to set. Cut the cake into 18 squares.

1 cup whole milk
2 ounces bittersweet chocolate (in a block or bar)

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-inch baking pan.
  • Prepare the cake batter according to the package directions. Spoon evenly into the prepared pan and set aside.
  • Combine the ricotta, sugar, cocoa powder, vanilla, eggs and 4 ounces of the mascarpone in a stand mixer fitted with the paddle attachment. Beat until smooth. Gently scoop the filling onto the cake batter and spread, so the top is completely covered. Bake until a skewer inserted into the center of the cake comes out clean and the vanilla cake layer has risen to the top, 50 to 60 minutes. Let cool completely in the pan on a cooling rack.

3 cups heavy cream 40 percent
1 vanilla bean, preferably Madagascar, split and seeds scraped
1/2 pound granulated sugar
9 egg yolks
1 pint fresh raspberries
3 ounces simple syrup, recipe follows
2 cups granulated sugar
1 cup water
1 cup whole milk
14 ounces melted sweet unsalted butter
14 ounces chopped pistachio nuts
4 1/4 ounces cake flour, sifted
4 ounces bittersweet chocolate
7 tablespoons water

Steps:

  • Preheat the oven to 325 degrees F. Grease 12 baking rings with spray and arrange them over a greased and lined baking sheet.
  • Mix the butter and chocolate in a stainless steel bowl over a double boiler. Melt until a smooth texture forms. Put the bowl over a double chiller.
  • *Cook's Note: This is like a double boiler except the bottom bowl is filled with ice. Add the sugar and eggs to a medium bowl and whisk to combine. Slowly fold the eggs into the chocolate and butter mixture, then fold in the flour.
  • Fill the baking rings 1/2-full with the batter. Bake in the oven until the sides have set but the center is glossy, about 6 minutes. Remove from oven, let cool a few minutes, then lift the baking ring off each cake.
  • For assembly, add 1 to 2 tablespoons Creme Anglaise to each serving plate. Add butterscotch sauce to plates using a fancy design. Do the same with the Raspberry Coulis. Add a piece of Pistachio Tuile. Transfer the molten cakes from baking sheet to the plates on top of the sauces. Drizzle chocolate sauce on top and garnish with berries.
  • In a medium saucepot pot over medium heat, add the cream, vanilla bean and seeds, sugar and egg yolks. Stir with rubber spatula directly touching the bottom of the pan keeping the mixture moving without sticking. Cook the mixture on medium heat for 15 minutes until the mixture tightens. Strain and chill over an ice bath until smooth, thick and cold.
  • Add the berries and syrup to a blender. Puree, then strain and pour into a squeeze bottle.
  • Mix sugar and water together in a pot. Cook on high heat until thick and the sugar has completely dissolved. Cool.
  • Preheat the oven to 350 degrees F.
  • Mix the wet ingredients together in a bowl. Mix the dry ingredients together in a separate bowl.
  • Fold the wet with dry, a little at a time, until incorporated. Pour evenly on top of a silpat lined baking sheet. Bake for 5 minutes. Allow to cool, then break into pieces.
  • Add the chocolate, water and butter to a double boiler. Stir until melted then cool and drizzle on top of cakes.

It's rich and creamy, good for adults and kids. And trust me, you'll love it. The key with this cake is taking it out of the oven at the correct time.

2 1/2 cups loosely packed brown sugar
2 1/4 cups sifted flour
2 teaspoons baking soda
1/2 cup butter, softened
3 eggs
3 unsweetened chocolate squares (80g, or 85% or higher)
1 1/2 teaspoons pure vanilla extract
1 cup sour cream
1 cup boiling water, and
1 pinch salt
1 lb butter (soft)
2 lbs icing sugar
1 tablespoon milk (as needed)

Steps:

  • Preheat oven to 350°F.
  • Melt chocolate in microwave (30 seconds at a time) or in a double boiler.
  • Grease two 9-inch cake pans.
  • Sift together flour, baking soda, and salt.
  • In a separate larger bowl of an electric mixer, beat butter until light.
  • Add sugar and continue beating.
  • Add eggs one at a time, scraping bowl well after each addition.
  • Beat on high speed for 5 minutes.
  • Add vanilla and chocolate.
  • Stir in sifted dry ingredients alternately with sour cream (starting and ending with flour, i.e. add some flour, then some sour cream, then more flour -- etc).
  • Stir in boiling water.
  • Pour into pans.
  • Bake for 35 minutes (start testing for doneness after about 27 minutes; if there are a few moist crumbs on the tester, it's ok to take it out).
  • Cool in pans for 5 to 10 minutes. Remove to a rack and let cool completely before icing.
  • To make the frosting: Mix all the frosting ingredients together in mixer. Once it is well mixed, frost the cake generously.
