CHOCOLATE GLAZED BANANA BUNDT CAKE
Who doesn't love chocolate and banana together?? This is yummy! A nice moist cake.

Steps:
- 1. Grease a large bundt pan. I make a paste with 1 melted tablespoon of butter and 1 tablespoon of flour. Then paint a coating with a pastry brush, on the inside of the pan. Your cake will release with ease.
- 2. Mash the bananas well, until smooth Add the sugar, vegetable oil, beaten eggs, and vanilla extract. Mix well.
- 3. In a separate bowl, whisk together flour, soda, cinnamon and salt. Stir the flour mixture into the banana mixture, until just mixed. Don't over mix.
- 4. Pour the batter into the prepared bundt pan. Preheat oven, and bake at 350 degrees for 45 minutes to 1 hour. Check with toothpick. Every oven's different, it took 1 hour in my oven.
- 5. Cool in pan for 15 minutes, before removing from pan, to cool completely before glazing.
- 6. THE GLAZE Melt butter in a small saucepan over low heat. Add cocoa and stir until smooth. Add milk, stirring until well blended. Remove from heat and beat in the confectioners sugar and vanilla until smooth. Let cool to thicken, stirring occasionally. (I even pop it into the fridge to help it along) Drizzle over cooled cake.

GLAZED CHOCOLATE-PUMPKIN BUNDT CAKE

- 1. To prepare cake: Preheat oven to 350°F. Coat a 12-cup Bundt pan with cooking spray. 2. Whisk all-purpose flour, whole-wheat flour, granulated sugar, cocoa, baking powder, baking soda, pumpkin pie spice and salt in a medium bowl. 3. Blend 1 cup buttermilk, pumpkin puree and brown sugar in a large bowl with an electric mixer on low speed. Beat in whole egg and egg white. Stir in oil, corn syrup and vanilla. Gradually add the dry ingredients, stirring until just combined. Transfer the batter to the prepared pan. 4. Bake the cake until a wooden skewer inserted in the center comes out with only a few moist crumbs attached, 1 to 1 1/4 hours. Let cool on a wire rack for 15 minutes. Remove from the pan and let cool completely on the rack, about 2 hours. 5. To glaze & garnish cake: Combine confectioners' sugar and 1 tablespoon buttermilk in a small bowl, stirring until completely smooth. Place the cake on a serving plate and drizzle the glaze over the top; garnish with chocolate chips (or chopped nuts) while the glaze is still moist.

- Preheat oven to 350 degrees.
- Butter and flour a 10-cup Bundt pan.
- In a saucepan, melt the butter and 4 oz of the chocolate over low heat, stirring with a whisk.
- Add the cocoa and stir until smooth; let cool.
- In a bowl, whisk together the flour, baking soda, and salt.
- In the bowl of a stand mixer, beat the eggs and sugar on medium speed until lightened.
- On low speed, stir in the sour cream, bourbon, 2 tsp of vanilla, and the chocolate mixture.
- Stir in the dry ingredients just until combined.
- Scrape the batter into the prepared pan.
- Bake until a toothpick inserted into the center of the cake comes out clean, 40-45 minutes.
- Let cool in the pan on a wire rack for about 15 minutes.
- Unmold the cake onto the rack and let cool completely.
- Meanwhile, make the glaze: in a saucepan, warm the cream over low heat.
- Add the remaining 4 oz chocolate and the corn syrup and whisk until the chocolate is melted and the glaze is smooth.
- Let cool to room temperature, then stir in the remaining 1 tsp vanilla.
- Place the wire rack with the cake over a sheet of parchment paper or foil and pour the glaze over the top of the cake, letting it run down the sides.
- Slide the cake onto a platter and serve.

This was in my Weight Watchers 'Best Ever Deserts' cookbook. My niece & my daughter in Law were over this evening & raved over it. Says it doesn't taste like diet anything. Even my great-nephew loved it.

- 1. preheat oven to 325 degrees. spray bundt pan with nonstick spray.
- 2. To make cake, whisk together first five ingredients in a medium bowl, set aside
- 3. Combine coco powder, chopped chocolate and espresso pwder in a small bowl. Pour boiling water over cocoa mixture until chocolate is melted and mixture is smooth. Stir in vanilla.
- 4. Whisk together buttermilk, oil, egg and egg white in a large bowl. Stir in cocoa mixture until blended. Gradually add flour mixture, stirring until just blended. Stir in chocolate chips.
- 5. Pour Mixture into bundt pan and bake until toothpick inserted in center comes out clean, 45-50 min. Let cool in pan on wire rack 1o minutes. Remove from pan and let cool completely on rack.
- 6. Glaze: Whisk together glaze ingredients in a small bowl until smooth. Let stand until cool and thickened, about 15 minutes. Place cake on serving plate, Pour glaze over, allowing to drip down sides of cake. Let stand about 10 minutes
- 7. To dress up cake, run vegetable peeler across a bar of room temperature chocolate to make curls.
