CHOCOLATE CHERRY ICE CREAM FLOAT

6 ounces bittersweet chocolate (60-percent cacao), finely chopped
3/4 cup heavy cream, at room temperature
Pinch kosher salt
1 quart vanilla ice cream
1 bottle (550 milliliters) cherry ale
4 to 8 brandied or Luxardo cherries with syrup, for garnish, optional

Steps:

  • Place the chocolate in a heat-proof bowl. Warm the heavy cream in a small saucepan over medium heat; when it comes just to a simmer, pour it over the chocolate. Let sit undisturbed for 1 minute, then add the salt and whisk the chocolate and cream together until smooth.
  • Scoop 2 large or 3 medium scoops of ice cream into each of four pint glasses. Drizzle each glass with 2 spoonfuls of the chocolate sauce. Top off each float with cherry beer. Add some brandied cherries and a drizzle of the cherry syrup if desired. Serve.

1 cup white sugar
2 cups water
½ cup shortening
½ cup white sugar
1 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon salt
½ cup milk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place 1 cup of sugar and 2 cups water into a saucepan and bring to a boil.
  • In a medium bowl, cream together the shortening and 1/2 cup sugar until smooth. Combine the flour, cocoa, baking powder and salt; stir into the creamed mixture alternately with the milk so the batter does not become too stiff. Stir in vanilla.
  • Pour the sugar water into a 2 quart casserole dish. Drop the chocolate mixture by spoonfuls into the sugar syrup to make dumplings.
  • Bake for 45 to 50 minutes in the preheated oven. Use a slotted spoon to remove dumplings to plates, spoon syrup over and serve.

I still remember them fondly from my college dys when they were already disappearing from sight & long for the spec treat they were "back then". This satisfying concoction was born out of my desire to revisit that genre, but w/greater concern for my "hip health" than I had in those dys. *Enjoy* !

2 scoops vanilla frozen yogurt
4 tablespoons chocolate syrup
tonic water (to fill glass) or Sprite Zero (to fill glass)

Steps:

  • In a tall glass, start by placing 1 lrg scoop of frozen vanilla yogurt & drizzle 2 tbsp chocolate syrup over it. Repeat the same process w/the 2nd scoop of frozen yogurt.
  • Fill the glass by slowly pouring Club Soda, Tonic Water or Sprite Zero over the yogurt & chocolate syrup (I use Sprite Zero). Serve w/a long-handled spoon & enjoy!

dollop fresh whipped cream

  • 1. Measure the fudge sauce into a large coffee cup or mug.
  • 2. Heat the milk in a small saucepan over low heat. Do not boil.
  • 3. Pour the hot milk into the cup and stir until completely blended.
  • 4. Gingerly scoop the ice cream on top. Top with the whipped cream and sprinkle with the shaved chocolate.
