Whenever I take these to a gathering, someone will usually announce. "Lisa brought those brownies"-and everyone knows exactly which ones they are! We live on 10-1/2 acres out in the country with our daughters, 7 and 4.

1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
4 ounces German sweet chocolate, chopped
3 tablespoons butter
3/4 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 large eggs
1/2 cup chopped nuts
FILLING:
3 ounces cream cheese, softened
1/4 cup sugar
1 large egg
2 tablespoons butter, softened
1 tablespoon all-purpose flour
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 325°. Whisk together flour, baking powder and salt. In a large microwave-safe bowl, microwave chocolate and butter on high until butter is melted; stir until smooth. Whisk in sugar until blended. Whisk in extracts and eggs, one at a time. Stir in flour mixture. Pour half of the batter into a greased 8-in. square baking dish., Beat together filling ingredients until blended; spoon over batter in pan. Spoon remaining batter over top. Swirl gently with a knife., Bake until filling is set, 35-40 minutes. Cool in pan on a wire rack 1 hour. Refrigerate at least 2 hours. Cut into bars. Refrigerate leftovers.

1 (13x9x1-inch) disposable aluminum baking pan
Nonstick vegetable oil spray
2/3 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
4 ounces bittersweet or semisweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
10 tablespoons (11/4 sticks) unsalted butter
1 1/4 cups sugar
2 teaspoons vanilla extract
3 large eggs
1 (8-ounce) package cream cheese, room temperature
2/3 cup powdered sugar
2 tablespoons (1/4 stick) unsalted butter, room temperature
1 1/2 teaspoons finely grated orange peel
1/2 cup toasted pistachios, toasted sweetened flaked coconut, or untoasted sweetened flaked coconut

Steps:

  • Set oven rack in lower middle position; preheat to 325°F. Spray disposable aluminum baking pan with nonstick spray. Press 18x12-inch sheet aluminum foil over bottom and up long sides of pan, leaving overhang on each long side. Spray foil with nonstick spray. Whisk flour, baking powder, and salt in small bowl. Stir both chocolates and 10 tablespoons butter in medium saucepan over medium-low heat until melted and smooth; remove from heat. Whisk sugar and vanilla, then eggs into chocolate mixture. Whisk until glossy and smooth, about 1 minute. Add dry ingredients and whisk just to blend.
  • Pour batter into prepared pan. Bake until tester inserted into center comes out with some moist crumbs attached, about 24 minutes. Cool completely in pan on rack.
  • Using electric mixer, beat room temperature cream cheese and next 3 ingredients in medium bowl until smooth. Spread cream cheese frosting over brownies. Sprinkle nuts or coconut over. DO AHEAD Chocolate brownies can be made 1 day ahead. Cover and chill. Using foil overhang for handles, remove brownies from pan. Cut into 18 squares; serve cold or at room temperature.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray the bottom and sides of a jelly roll pan with cooking spray or line with parchment paper.
  • Mix cream cheese, sugar, and eggs in the bowl of a stand mixer fitted with a paddle until smooth; add vanilla extract and mix for 1 more minute.
  • Slice 1 roll of cookie dough into thin rounds and arrange on the prepared jelly roll pan. Pour cream cheese mixture over cookie layer. Slice the second roll of cookie dough into rounds and arrange over cream cheese mixture layer.

3 1/3 tablespoons butter (lower amount at high altitude)
3 ounces cream cheese, softened
1/4 cup butter, softened
3/4 cup sugar
2 eggs
2/3 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup chopped nuts
1/2 teaspoon peppermint extract
3 -5 drops green food coloring
1 ounce bittersweet baking chocolate
1 tablespoon butter
1 cup powdered sugar, sifted
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • In a microwavable bowl, combine baking chocolate, chocolate chips, and 1/3 cup butter; microwave on HIGH, stirring every 30 seconds, until melted and smooth (cool slightly - 5 minutes).
  • Cream together cream cheese, 1/4 cup butter and sugar; beat in eggs.
  • Stir together flour, baking powder and salt; stir into creamed mixture.
  • Spoon half the batter into the melted chocolate, and stir in nuts.
  • Drop chocolate by tablespoonsful, checkerboard fashion, into a greased & floured 9" square pan.
  • Add peppermint extract and green food coloring to remaining batter, and spoon green batter into spaces between chocolate batter.

YUMMY. These are soooo good and a little different in that you refrigerate them. They are best made a day ahead and then all the yummy flavors have more time to blend. I have been making these for almost 40 years so I really have no idea where the recipe came from--I think it may have been from a chocolate advertisement for the German chocolate, but I'm not sure. I usually triple or quadruple the recipe.

1 (4 ounce) package German sweet chocolate
5 tablespoons butter, divided
1 (3 ounce) package cream cheese, softened
1 cup sugar, divided
3 eggs

3/4 teaspoon almond extract
1 1/2 teaspoons vanilla extract
1/2 cup unsifted flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees.
  • Melt the chocolate and 3 tablespoons of the butter in the top of a double boiler over hot water, stirring constantly.
  • Set aside to cool.
  • Cream the remaining 2 tablespoons butter with the cream cheese until well mixed.
  • Gradually add 1/4 cup of the sugar, creaming until fluffy.
  • Stir in 1 egg, 1 tablespoon flour and the almond extract.
  • Mix well and set aside.
  • Beat the remaining 2 eggs until light and fluffy.
  • Gradually add the remaining 3/4 cup sugar to the eggs, beating until thickened.
  • Mix the 1/2 cup flour, baking powder and salt together, and fold into the egg/sugar mixture.
  • Blend in the cooled chocolate and the vanilla, mixing well.
  • Measure out 3/4 cup of the chocolate batter into a dish and set aside.
  • Add the chopped pecans to the remaining chocolate batter, and spread the batter evenly into a lightly greased 11 X 7 inch pan.
  • Pour the cream cheese batter evenly over the chocolate batter in the pan.
  • Take the reserved 3/4 cup chocolate batter and drop it onto the cream cheese layer by tablespoons.
  • Swirl with a knife to create the marbelized pattern.
  • Bake at 350 for 35 minutes.
  • Cool completely and cut into squares.
  • Store in the refrigerator in an airtight container.

CHOCOLATE CHIP COOKIE DOUGH:
1 1/4 c brown sugar, light
3/4 c Crisco
2 Tbsp milk
1 Tbsp vanilla extract
1 egg
1 3/4 c all-purpose flour
1 tsp salt
3/4 tsp baking soda
1 c chocolate chips
1 c chopped nuts (pecans or walnuts), optional
CREAM CHEESE FILLING:
2 pkg cream cheese (8 oz. each)
1 c sugar
2 Tbsp vanilla extract
2 eggs

Steps:

  • 1. In a large bowl, mix all ingredients for chocolate chip cookies in the order listed above. Divide into two parts and set aside.
  • 2. In a second bowl, mix all cream cheese filling ingredients until smooth.
  • 3. Spread one part of cookie dough on the bottom of greased 13 X 9 pan. (Mine measures 13 3/4 by 9 1/2). It will help if your hands are wet, otherwise, the dough will stick to your fingers.
  • 4. Pour the cream cheese filling over the cookie dough.
  • 5. Top the filling with the remaining dough by creating dabs of dough (or little pancakes of dough). Once again it will help if your fingers are wet.
  • 6. Bake at 350 F for about 50 minutes or until a cake tester comes out clean.
  • 7. Cool and divide into bite-size pieces (about 40 or so). Enjoy it as much as we do!

  • Drop spoonfuls of the remaining brownie mixture on top, making swirls with a knife.
  • Bake 35-40 minutes, or until the top is springy to the touch, being careful not to over bake.
  • Cool brownies in the pan, then cut into squares.

We tweaked a few things to suit our tastes and this is what we got. We'll never go back to mixes again! You're going to want a tall glass of milk with these!

1 1/2 tablespoons milk
1/2 cup powdered sugar

Steps:

  • Pre-heat the oven to 350 degrees. Spray a 9x13" pan with nonstick spray.
  • Melt the butter in a large microwave safe bowl. Stir in sugar. Add the eggs and vanilla and mix well.
  • In a separate bowl sift the flour and cocoa together three times. Then add the sifted flour and cocoa to the sugar mixture. Mix well.

Combine flour, baking powder and salt add to egg mixture. Stir in melted chocolate, extracts and nuts. Pour half of the batter into a greased 8-in. square baking pan set aside. For filling, beat butter and cream cheese in a mixing bowl until light. Gradually add sugar, beating until fluffy. Blend in egg, flour and vanilla mix well. Spread over batter in pan. Dollop remaining batter over filling. With a knife, cut through batter to create a marbled effect. Bake at 350° for 35-40 minutes or until brownies test done. Cool.
