3 cups finely ground cookies (12 ounces), such as graham crackers or chocolate wafers, or a combination
1/4 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted
1 cup pecan pieces
1 cup semisweet chocolate chips or chunks
1 can (14 ounces) sweetened condensed milk
1 1/2 cups sweetened shredded coconut

Steps:

  • Preheat oven to 375 degrees. Lightly splash a 15-by-10-inch rimmed baking sheet evenly with water, then line with parchment paper.
  • In a large bowl, stir together cookie crumbs, sugar, and butter until combined. Evenly press onto bottom and up sides of prepared baking sheet. Bake, rotating halfway through, until firm, about 10 minutes. Transfer to a wire rack; cool, about 20 minutes.
  • Sprinkle cooled crust evenly with pecans and chocolate. Pour condensed milk over the top, spreading to cover completely (do not let it drip over the edges). Sprinkle with coconut.
  • Bake until coconut is toasted, 10 to 15 minutes. Transfer to rack; cool completely. Trim edges, if desired, and cut into equal-size bars.

  • Combine the crumbs, butter and sugar. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 10 minutes. Meanwhile, in a bowl, combine coconut, milk and pecans; spread over the crust. Bake at 350° for 15 minutes; cool completely. In a small saucepan, melt candy bar and peanut butter over low heat; spread over bars. Cool until set.

1 cup puffed rice cereal
1 cup unsweetened coconut flakes
1 cup slivered almonds
1 cup dried tart cherries
⅔ cup honey

1 teaspoon vanilla extract

Steps:

  • Line a 9x13-inch baking pan with a piece of parchment paper that is large enough to go up all sides of the pan.
  • Combine oats, rice cereal, coconut, almonds, and cherries in a large mixing bowl and set aside.
  • Combine honey, peanut butter, brown sugar, coconut oil, vanilla extract, and salt in a small saucepan. Heat over medium heat until brown sugar is melted; continue to simmer for 1 minute more. Pour heated mixture into the dry ingredients and stir to fully combine. Stir in chocolate chips.

2 eggs
1 cup sugar
1/2 cup butter, melted
1 teaspoon vanilla
1/2 cup plain flour
1/4 teaspoon baking powder

1 tablespoon butter, melted
1 cup chocolate chips (milk chocolate best)
1 tablespoon butter, melted

Steps:

  • In a medium size bowl, beat eggs and add sugar. Blend in melted butter and vanilla.
  • Mix flour, baking powder and salt. Blend into mixture.
  • Pour one-half of batter into another bowl. In one batter add cocoa and the one tablespoon of melted butter. In the second batter add coconut.
  • Pour the chocolate batter into a greased 8 x 8 baking pan. Spread the coconut batter on top.
  • Bake in a 325 degree oven for 25 minutes. Do not overbake. Cool.
  • Topping: Melt chocolate chips in microwave for 1 minute. Add melted butter and mix. Spread onto cooled bars. Let cool completely and cut into bars. Cut small--they are rich. (I have placed pan in fridg for 30 minutes to cool quickly.).

The date paste helps hold it together nicely and dates are known as nature's candy. No refined sugar except for in the chocolate chips. You could include carob chips or whatever kind of chips your kids like. The dried fruit version is yummy as well!

¼ cup water, or as needed
3 cups rolled oats

1 ½ cups whole raw almonds
⅔ cup pumpkin seeds
½ cup salted sunflower seeds
1 tablespoon ground cinnamon
1 cup almond butter
1 cup unsweetened applesauce
1 teaspoon vanilla extract

Steps:

  • Line a 9x13-inch baking dish with waxed paper so that the paper hangs over the edges of dish.
  • Combine dates and water in a food processor or blender; process until a paste forms, adding more water if needed to thin it.
  • Combine oats, coconut, chocolate chips, almonds, pumpkin seeds, sunflower seeds, and cinnamon in a large bowl. Add date paste, almond butter, applesauce, and vanilla extract; mix, using your hands, until wet ingredients are fully incorporated.

⅓ cup maple syrup
1 pinch salt, optional
1 ½ cups dark chocolate chips
⅓ cup coconut cream
shredded coconut, unsweetened

Steps:

  • Combine shredded coconut, coconut cream, maple syrup, and a pinch of salt to a food processor and blend until mixture becomes easily moldable. You may have to press down the mixture and reblend a few times for this to happen.
  • Pour mixture into an 8x8-inch (20x20-cm) pan lined with parchment or wax paper. Press down firmly with a rubber spatula and smooth mixture into an even layer.
  • Freeze for 30 minutes.
  • Prepare chocolate layer by combining dark chocolate chips and coconut cream in a bowl. Microwave in 15-second intervals, stirring mixture thoroughly in between.

Inspired by a much-loved chocolate-coconut candy bar, these are the perfect spur-of-the-moment treats for the event that almost slipped your mind: Premade sugar cookie dough does half the work for you!

Butter, for greasing pan
Topping:
1/3 cup coconut cream
1 large egg white
1/2 teaspoon vanilla extract
1 1/2 cups sweetened shredded coconut
2 teaspoons all-purpose flour
One 4-ounce bar bittersweet or semisweet chocolate, coarsely chopped
Base:
1/4 cup all-purpose flour, plus more for rolling dough
1/3 cup natural unsweetened cocoa powder (not Dutch process)
1/4 teaspoon fine sea salt
One 1-pound package prepared refrigerated sugar cookie dough

Steps:

  • Preheat the oven to 350 degrees F. Cut a piece of foil 9- by 23-inches. Butter the corners and sides of a 9- by 9-inch baking pan. Line the pan with the foil, leaving an overhang on two sides. Fold the overhanging foil to make them doubly thick. (This will make it easier to lift the bar out of the pan.)
  • For the topping: Whisk the coconut cream with the egg white and vanilla in a medium bowl. Toss the shredded coconut with the flour in another medium bowl. Stir the shredded coconut mixture into the coconut cream mixture. Set aside.
  • For the base: Whisk the flour with the cocoa powder and salt in a small bowl. Put the cookie dough on a clean work surface and dump the flour mixture on top. Knead the flour mixture and dough together until it is dark and homogenous. Sprinkle a little extra flour on the work surface, and use a rolling pin to gently press and roll the dough into a 7- or 8-inch square; don't worry if it cracks a bit. Put the dough in the prepared pan, using your fingers to press it evenly into the sides and corners.
  • Scatter the coconut topping evenly over the base, making sure you cover the edges well and being sure not to press down so that the coconut mixture lies on top of the dough. Scatter the chocolate on top and press it lightly into the coconut. Bake until the coconut is a toasted golden brown, the topping seems dry and a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely on a rack before gently lifting out of the pan by the overhanging foil, about 20 minutes. Slice into 16 square bars.

1/2 teaspoon baking soda
1/4 teaspoon salt

1/3 cup light brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups sweetened flaked coconut
1 cup semi-sweet chocolate chips
2/3 cup coarsly chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 9" square baking pan.
  • Sift the flour, baking soda and salt together into a mixing bowl.
  • Cream butter with sugars in another bowl until light and fluffy.
  • Beat in egg and vanilla.

  • In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Add eggs, coconut extract and 1/2 cup butter; beat until smooth. Gradually add powdered sugar, beating until blended. Spread cream cheese mixture over batter. Sprinkle with almonds.
  • Bake 40 minutes or until set. (Center should still be a little gooey.) Cool completely in pan on cooling rack. Cut into 6 rows by 4 rows. Store covered in refrigerator.

I've been making this since I was 8 years old and it's still one of my favourites. It's quick and easy to make and the taste in fantastic!

Number Of Ingredients 11

125 g butter, melted
1/2 cup brown sugar, firmly packed (100g)
1 cup coconut
1 egg, lightly beaten
3/4 cup flour
3/4 teaspoon baking powder
2 tablespoons pure cocoa
1 cup icing sugar
1 tablespoon pure cocoa
1 teaspoon soft butter
1 1/2 tablespoons milk, approx

Steps:

  • Combine all of the ingredients (except the icing ingredients) in a bowl and mix well.
  • Press mixture firmly into a greased 19cmx29cm (or thereabouts) rectangular slice pan.
  • Bake in a 350 degree F (180 degree C) oven for 20 minutes.
  • Whilst baking make the icing by sifting together the icing sugar and cocoa.
  • Stir in the butter and enough milk to make it spreadable.
  • Remove the slice from the oven and spread with the icing while still hot.
  • Cool in pan.
  • Cut into bars or squares to serve.

1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 egg
1/2 cup coconut (optional)
1 (18 ounce) package refrigerated chocolate chip cookie dough

Steps:

  • Heat oven to 350°F.
  • In a small bowl, beat cream cheese, sugar, and egg until smooth.
  • If using coconut stir inches.
  • Remove half of the dough from wrapper.
  • Press half of the dough into bottom of an ungreased 9 or 8 inch square pan.
  • Spread cream cheese mixture over dough.
  • Crumble and sprinkle remaining half of cookie dough over cream cheese mixture.
  • Bake at 350°F for 35-40 minutes or until golden brown and firm to the touch.
  • Cool 30 minutes.
  • Refrigerate at least 1 hour until chilled.
  • Cut into bars and serve chilled.

2 c graham cracker crumbs
1/3 c powdered sugar
1/2 c unsweetened cocoa powder
1/2 c plus 2 tb butter melted
1 can(s) 14 ounce condensed milk
3/4 c sliced almonds
3/4 c flaked coconut
10-15 oz marachino cherries drained and chopped
1 c dark or semi sweet chocolate chips
2 tsp shortening
extra sliced almonds and coconut for garnish if desired.

Steps:

  • 1. Heat oven to 350°. Grease a 9 x 13" baking pan well. You may also parchment line the pan. Make sure to grease before lining with the parchment. Set baking pan aside.
  • 2. drain the marachino cherries. Cut maraschino cherries into pieces aproximately 4 pieces per cherry. Place Cherry pieces between paper towels and squeeze out as much juice as possible.
  • 3. Pour the can of condensed milk evenly over crust in pan. Sprinkle the almonds, and coconut over the condensed milk. Sprinkle with the chopped Cherries last. Pat down the mixture with your hands.
  • 4. Place in 350°oven. Bake 30 to 40 minutes or until side edges are turning golden brown. Remove from oven.
  • 5. Place chocolate chips in a bowl with the shortening. Cook on high for one minute. Stop microwave and Stir well. Place back in microwave for approximately 30 to 60 more seconds. Stir mixture again until completely melted. Drizzle mixture over the cookie bars. You can make a design or you can spread the chocolate completely over-the-top. You may garnish the top with sliced almonds and coconut at this point if desired. Place in the fridge until the chocolate sets up. Store outside of refrigeration. Cut into bars and enjoy..

1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) salted butter, melted
2 tablespoons honey
2 teaspoons pure vanilla
1 cup butterscotch chips
1 cup semisweet chocolate chips
1 cup shredded coconut
1/2 cup chopped pecans
1 1/2 (14-ounce) cans sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine graham cracker crumbs, butter, honey, and vanilla. Press graham cracker mixture evenly into the bottom of a 9-by-13-inch baking dish. Evenly sprinkle butterscotch chips, chocolate chips, coconut, and pecans on top.
  • Pour condensed milk over the mixture and transfer baking dish to oven. Bake for 40 minutes. Let cool completely before cutting into 24 bars.
