- Grease a 9x13-inch baking pan.
- Mix oats, walnuts, olive oil, chocolate chips, honey, eggs, and vanilla extract together in a large bowl. Press oat mixture firmly into the prepared baking pan.
- Place pan in a cold oven. Heat oven to 350 degrees F (175 degrees C) and bake energy bars until heated through, 25 minutes. Cool completely before cutting into squares.

- Preheat the oven to 350°F. Lightly grease a 9-inch-square baking pan with vegetable oil and line the bottom with parchment paper.
- Put the oats, peanuts, peanut butter, sunflower seeds and dates in a food processor and pulse until finely chopped.
- In a bowl, whisk the eggs together with the salt and vanilla. Add the mixture to the food processor and pulse until it becomes a coarse, chunky paste. Fold in the chocolate chips with a wooden spoon. Transfer the mixture to the prepared baking pan and spread evenly, gently pressing down to flatten. Bake for 35 minutes, or until firm and golden.
- Cool and cut into 20 bars. The bars can be stored in an airtight container for a week in the refrigerator and a month in the freezer.

- Stir the oats and rice cereal together. Set aside.
- In a small pan , melt butter , honey and brown sugar together over a medium high heat until it comes to a bubble. Reduce the heat and cook 2 minutes.
- Pour in vanilla and stir.
- Pour over dry ingredients and mix well to moisten all ingredients.
- Pour into lightly greased small tray and press out to be about 3/4 inch thickness.
- Sprinkle with mini chocolate chips and press down lightly.
- Cool to room temperature for 2 hours or until the chocolate chips are set before cutting into bars.
