1 teaspoon baking soda
1 teaspoon salt
1 cup butter, at room temperature
¾ cup white sugar
¾ cup firmly packed brown sugar
4 large eggs
1 teaspoon vanilla
2 cups milk chocolate chips (such as Guittard®)
1 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
  • Stir flour, baking soda, and salt together in a bowl.
  • Beat butter, white sugar, and brown sugar together in a bowl with an electric mixer until light and fluffy, 3 to 5 minutes. Beat eggs and vanilla into butter mixture until smooth. Gradually stir flour mixture into butter mixture until just combined. Stir in chocolate chips and nuts. Spread cookie batter into prepared pan.
  • Bake in the preheated oven until golden and the cake springs back when lightly pressed, 20 to 25 minutes. Cool before cutting into 2-inch squares.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10 1/2x15 1/2-inch baking pan and line with waxed paper.
  • Beat 1 cup butter, brown sugar, and white sugar together in a bowl using an electric mixer until smooth and creamy; add eggs, 1 at a time, beating well after each addition until smooth. Mix 2 teaspoons vanilla extract and salt into creamed butter mixture. Gradually stir flour into creamed butter until just incorporated; fold 1 cup chocolate chips into batter. Spread batter into the prepared pan.
  • Bake in the preheated oven until lightly browned on the edges, 20 to 25 minutes. Remove from oven and cool completely.

1 cup almond flour
1 cup hazelnut flour
1/2 cup lightly packed light brown sugar
1/2 cup granulated sugar
1 teaspoon kosher salt
1/4 teaspoon baking soda
1 tablespoon vanilla extract
1/2 teaspoon almond extract
1 large egg
1/2 cup chocolate chips
3 cups powdered sugar
1 cup (2 sticks) unsalted butter, at room temperature

Steps:

  • For the cookie cake: Preheat the oven to 350 degrees F. Grease an 8-inch cake pan with nonstick cooking spray and line it with parchment. Set aside.
  • In a large bowl, combine the almond and hazelnut flours, brown and granulated sugars, salt and baking soda. In a small bowl, combine the vanilla and almond extracts and egg. Steps:

  • Whisk 3 cups cream and the mascarpone in a chilled bowl until soft peaks form. Add sugar and whiskey. Whisk until medium-stiff peaks form. Refrigerate until ready to use (or up to 3 hours).
  • Arrange 9 cookies in a circle (with cookies touching) on a cake stand or a plate. Place 2 cookies in center. Carefully spread 1 cup cream mixture evenly over cookies, leaving a slight border. Repeat to form 7 more layers, ending with cookies (you'll have a few cookies left over). Refrigerate, lightly draped with plastic wrap, overnight.

2 sticks (1 cup) unsalted butter, at room temperature
1 cup packed light brown sugar

2 large eggs, at room temperature
2 1/2 cups semisweet mini chocolate chips
3 cups heavy cream
1/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, salt and baking soda, then set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the butter with the brown sugar and granulated sugar on medium speed until light and fluffy, 3 to 5 minutes. Add 2 teaspoons of the vanilla extract and the eggs and blend until incorporated. Lower the speed to a stir, add the flour and mix until just combined. I had a lot of chocolate chip cookies left over after Christmas, so I made this cake using the idea of a graham cracker cake. Putting everything into a food processor made it quick to make and clean up. It turned out to be a tasty treat topped with whipped cream. It is very moist and soft. Adding coconut or nuts gives it texture. Serve topped with whipped cream or dusted with powdered sugar.

1 (15.25 ounce) chocolate cake mix
1/2 gallon chocolate chip cookie dough ice cream
1 (13 ounce) bag chewy chocolate chip cookies
2 1/4 cups semi-sweet chocolate chips
3/4 cup unsalted butter
Wax paper

Steps:

  • Bake cake mix according to package directions for two 9 inch round cakes. Let cool, and remove from pans.
  • Remove ice cream from the freezer and let it partially thaw (you don't want it to be melted, but it does need to be spreadable).
  • On a freezer-safe plate, place one 9 inch cake. Measure a piece of wax paper, folded in half, to go around the circumference of the cake and secure in place with tape (this will help the cake keep it shape until you're ready to serve). On top of the cake, evenly spread ice cream to the edges, pressing it up against the wax paper.
  • Crumble two-thirds of the package of cookies, and sprinkle evenly over the ice cream. Place the second 9 inch cake on top of the cookie crumbs, and press down gently (don't push too hard, or your wax paper may come undone).
  • Freeze for 2-3 hours, until ice cream can hold it?s shape.
  • Before serving, heat chocolate chips and butter in a saucepan over medium heat, stirring until smooth. Remove wax paper from the cake, then pour chocolate sauce over the top, letting it drip down the sides. Top cake with remaining chocolate chip cookies, and serve immediately.

1 cup unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
2 cups all-purpose flour
2 tablespoons all-purpose flour

3/4 cup white chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Line a 14-inch, light colored, round pizza pan with parchment paper and grease the parchment paper.
  • In a large bowl, cream the butter and sugars. Add the eggs, beating well after the addition of each.
  • In a bowl, combine the flour, baking soda, and salt and mix with a whisk. Add to the butter mixture, mixing to incorporate, and add the vanilla extract. Fold in the dark and white chips and the nuts. Spread across the bottom of the prepared pan and bake until the edges are golden and the cookie is set but the center is still slightly soft, 20 to 25 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

I first made this cake for my brother's birthday. He doesn't care for normal cake, and his favorite sweet is chocolate chip cookies, so he (and all the rest of the family) loved this. He has asked for it every birthday since. One time when I served it to ten people and there was leftovers, I caught my dad eating it for breakfast the next morning! All lovers of chocolate chip cookies must try it! Serve with vanilla ice cream.

1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla extract

1 (12 ounce) bag semisweet chocolate chips
½ cup butter, melted
⅓ cup milk
1 teaspoon vanilla extract
3 cups confectioners' sugar
⅔ cup cocoa powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 large baking sheets. Cut three 10-inch rounds of parchment paper and set each round on each baking sheet.
  • Beat 1 cup butter, brown sugar, and white sugar together in a bowl using an electric mixer until fluffy and smooth. Mix eggs, 2 teaspoons vanilla extract, baking soda, and salt into creamed butter until just combined; stir in flour until dough is just combined. Fold chocolate chips into dough.
  • Divide dough into 3 parts; press 1 part onto each parchment round.
  • Bake in the preheated oven until cookie rounds are browned and crisp around the edges and set in the middle, 15 to 20 minutes. Remove from oven and cool completely.
  • Stir melted butter, milk, and 1 teaspoon vanilla extract together in a bowl. Beat confectioners' sugar and cocoa powder together in a separate bowl until evenly combined. Beat butter mixture into cocoa mixture until frosting is smooth and thickened.
  • Peel parchment paper off the bottom of each cookie round. Set aside the prettiest round to be used for the top layer. Spread 1/2 the frosting onto 1 cookie round and top with a second cookie round. Spread remaining frosting onto second cookie round and top with the third cookie round.

An icebox cake is essentially cookies layered with cream, left to sit overnight or for a few hours - the cookies soften up, and the end result is like a layer cake! Super simple. And absolutely delicious! This cake uses a nutella cream, layered with chocolate chip cookies.

2 cups heavy cream
1 (13 ounce) jar nutella
1/4 cup cocoa powder (or more or less...just until its a nice brown color and tastes chocolatey)
2 (13 ounce) bags chocolate chip cookies (DO NOT USE SOFT ONES. MUST USE HARD, CRUNCHY ONES. I used Chips Ahoy, or the store brand equivalent)
1/2 cup milk

Steps:

  • Whip the heavy cream until it starts to become thick (not fully whipped).
  • Add the entire jar of nutella and the cocoa powder to the cream, and beat thoroughly. There should be no lumps, and the cream should be whipped. make sure not to overbeat or the cream will separate.
  • Briefly dip each cookie in the half cup of milk, then put one layer of chocolate chip cookies on the bottom of an 8x8 inch square pan (fill in holes with pieces on each layer of cookies, doesn't have to be flat or attractive -- just needs to cover the layer. Since you're putting round cookies in a square pan, square off the edges by breaking the cookies in half to line the flat sides against the edge of the pan, then just fill in the rest).
  • Layer 1/3 of the cream mixture on top.
  • Repeat cookie and cream layers until you finish with the cream on top (there are three layers of cookies and three layers of cream).
  • Refrigerate overnight or at least 12 hours (it needs time to soften!).
  • This gets better over time, and can be stored for at least a week in the refrigerator - perfect for a large party, to get dessert out of the way far ahead of time!

1 box Betty Crocker™ Super Moist™ yellow cake mix
1 cup milk
1/2 cup vegetable oil
4 eggs
1 pouch (1 lb 1.5 oz) Betty Crocker™ chocolate chip cookie mix
Butter and egg called for on cookie mix pouch
1 container Betty Crocker™ Rich & Creamy chocolate frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Generously grease and lightly flour bottom only of 13x9-inch pan, or spray with baking spray with flour.
  • In large bowl, beat cake mix, milk, oil and 4 eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes. Pour into pan.
  • Make cookie dough as directed on pouch. Drop dough by teaspoonfuls evenly over batter in pan.
  • Bake 54 to 59 minutes or until toothpick inserted in center comes out clean. Run knife around sides of pan to loosen cake. Cool completely, about 1 hour. Spread frosting over top of cake. Store loosely covered.

I frequently make these cookies for work pitch-ins & family get-togethers. They are always a big hit! I was given the basic recipe several years ago by a lady who showed up at my garage sale-and she wrote it down during our conversation about baking. I have perfected different varieties over the years. Please see my other recipes for how to make the following versions of this cookie: lemon, chocolate chip, & sugar cookies. This is a really versatile recipe base-experiment!! This variety makes the perfect "bread" for home-made icecream sandwiches. These cookies are also EXCELLENT when you use dark raspberry chips, peanut butter chips, or nuts.

1 (18 ounce) box chocolate cake mix (personal favorite is fudge or devil's food flavor)
2 eggs
1/2 cup vegetable oil
1 -2 cup semi-sweet chocolate chips (or other desired add in, see my note on the recipe above)

Steps:

  • Preheat oven to 350 degrees.
  • Stir ingredients in medium mixing bowl until blended (best to do right before you are ready to bake them- they flatten out more if you let the batter set).
  • Spoon onto 2 un-greased cookie sheets (allow some space in between, they spread...a melon baller works great for this step).
  • Bake for 8-10 minutes (depends on which cake mix you use & the oven -- I start looking at them through the glass around 6.5 minutes -- they will get a dull/cracked appearance on top when done).
  • Allow the cookies to cool on the pan, or wait 1-2 minutes before moving to cooling racks.
