I found this recipe in a magazine (Southern Living I think), and I've been making it ever since. My friends always request this cake and the recipe, and my Grandmother takes it to all kinds of church functions. It's quick to put together, but no one will ever know how easy it really is. And I make it with fat free sour cream, skim milk, and egg substitute when the girls come over so we aren't guilty afterwards. Doesn't change the taste at all. Hope you enjoy!

1 cup semi-sweet chocolate chips
1 (16 ounce) package poundcake mix
1 (8 ounce) container sour cream
1/2 cup milk
2 large eggs
1/2 cup brown sugar
2 tablespoons all-purpose flour
1 1/2 teaspoons ground cinnamon
1 cup chopped pecans, toasted
2 tablespoons butter, melted

Steps:

  • Prepare Streusel Topping: Combine brown sugar, flour, and cinnamon; stir in pecans and butter until crumbly topping. Set aside.
  • Stir together chocolate chips and 1 tablespoon cake mix; set aside.
  • Beat sour cream, milk, eggs, and remaining cake mix at low speed with an electric mixer 30 seconds or until blended. Increase speed to medium, and beat 3 more minutes.
  • Spoon half of batter into a lightly greased 13- x 9-inch pan; sprinkle chocolate chip mixture evenly over batter. Spread remaining batter on top.
  • Sprinkle Streusel Topping evenly over batter.
  • Bake at 350° for 25 minutes or until a wooden pick inserted in center of cake comes out clean. Cool on a wire rack.

1/2 cup chopped walnuts
1/2 cup semisweet chocolate chips
1-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup packed brown sugar
ADDITIONAL INGREDIENTS:
1 large egg, room temperature
1/2 cup brewed coffee, room temperature
1/2 cup canola oil

Steps:

  • Place walnuts and chocolate chips in a small plastic bag. Whisk together flour, salt and baking soda. Transfer to a 1-qt. glass jar. Layer with brown sugar and walnut mixture. Cover and store in a cool dry place up to 3 months., To prepare coffee cake: Preheat oven to 350°. Whisk egg, coffee and canola oil. Add flour and brown sugar mixture; mix until combined. Pour batter into a greased 8-in. square baking pan. Sprinkle with nuts and chocolate chips. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool on a wire rack.

3/4 cup sugar
3/4 cup brown sugar, packed

Steps:

  • Creating the Gift in a Jar:
  • Wash and thoroughly dry a 1-quart wide-mouth canning jar.
  • Layer the ingredients in the jar as listed above starting with the flour, salt, baking powder, sugar, brown sugar and then chocolate chips - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
  • Secure the lid and decorate as desired; attach the instructions for making these cookies found below.

  • Additional ingredients to be added by the recipient: 1 cup butter, softened, 3 eggs, 1/3 cup milk and 1 tsp vanilla extract.

  • In a large bowl, combine the butter, eggs, milk and extract; blend with electric mixer set on low speed.

1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

1 cup sour cream

Steps:

  • Preheat the oven to 350°F Grease an 8-inch square baking pan. In a medium bowl, mix together the flour, baking powder, baking soda and salt. In a small bowl, combine 1/4 cup sugar and the cinnamon.
  • Using an electric mixer, beat together the butter and remaining 1 cup sugar until fluffy, about 5 minutes. Beat in the eggs, 1 at a time, then beat in the sour cream and vanilla. Fold in the flour mixture, in 2 parts, until just combined. Spread half the batter into the cake pan and sprinkle with half the cinnamon-sugar and half the chocolate chips. It's ok to just put it in the middle and gently even out. It may not touch the edges of the pan but will spread out when cooking.   • Bake until golden and a toothpick inserted in the center comes out clean, 30 to 35 minutes.
