Just like adding a pinch of salt to dessert recipes makes them even sweeter and more delicious, the addition of pepper in this cookie really makes the chocolate even more chocolaty. The cookies aren't really spicy, but you can definitely tell something strange and wonderful is happening.

½ cup dried currants
2 tablespoons coffee flavored liqueur (such as Kahlua®)
4 ounces unsweetened chocolate
2 ounces bittersweet chocolate
3 tablespoons unsalted butter
½ cup all-purpose flour
½ teaspoon freshly ground black pepper
¼ teaspoon baking powder
¼ teaspoon salt
⅛ teaspoon ground cinnamon
⅛ teaspoon cayenne pepper
¾ cup sugar
2 eggs
2 teaspoons vanilla extract
1 cup dark chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line two baking sheets with parchment paper or silicone baking mats.
  • Heat currants and coffee liqueur in a saucepan over low heat until it begins to simmer, about 2 minutes. Remove from heat and set aside.
  • Combine unsweetened chocolate, bittersweet chocolate, and butter in bowl. Place bowl on top of a saucepan filled with 1-inch of water set over low heat. Stir chocolate mixture occasionally until melted, about 5 minutes. Remove from heat and set aside.
  • Mix flour, black pepper, baking powder, salt, cinnamon, and cayenne pepper in large bowl and set aside.
  • Whisk sugar and eggs in a small bowl until light, fluffy, and pale yellow, about 5 minutes. Slowly whisk in vanilla and melted chocolate mixture.
  • Fold flour mixture into sugar and chocolate mixture until combined.
  • Stir in dark chocolate chips and liqueur-soaked currants.
  • Drop spoonfuls of cookie dough 2 inches apart onto prepared baking sheets.
  • Bake in the preheated oven until cookies are almost set, about 12 minutes.
  • Remove from the oven and leave on baking sheets to cool, 5 minutes.
  • Transfer to cooling rack and allow to finish cooling, 5 minutes.

Making use of a well-stocked pantry, this weeknight chili takes inspiration from the flavor profile of mole negro, an Oaxacan sauce made with chiles and chocolate that traditionally takes a full day to make, but results in a pot full of depth and nuance in less than an hour. It relies upon ground beef or turkey, and uses canned chiles in adobo, paprika and ancho chili powder for heat, plus a mix of warm spices, chocolate in two forms, and a little bit of peanut butter to round it out. In essence, this recipe is another variation of the combination of sweet and heat.

2 tablespoons vegetable oil
1 medium yellow onion, diced (about 8 ounces)
2 teaspoons kosher salt, plus more as needed
3 canned chiles in adobo, finely chopped
1 tablespoon unsweetened cocoa powder

2 teaspoons ancho chile powder
1 1/2 teaspoons dried oregano, preferably Mexican
1 1/2 teaspoons ground cumin

1 (15-ounce) can petite diced tomatoes
1 cup stout beer
1 cup unsalted or low-sodium beef stock or chicken stock
2 (15-ounce) cans pinto beans, rinsed

2 tablespoons smooth peanut butter
Any combination of tortilla chips, shredded cheese and diced avocado, for garnish (optional)

Steps:

  • Heat oil in a large pot or Dutch oven over medium. Add onion and salt and cook, stirring occasionally, until onion starts to soften and become translucent, about 5 minutes.
  • Add chiles, cocoa powder and spices, and cook, stirring frequently, until fragrant, 1 to 2 minutes.
  • Add ground meat and cook, breaking apart with a wooden spoon and stirring occasionally, until cooked through, 5 to 7 minutes.
  • Add tomatoes and their juices, beer and stock to the pot and bring to a boil over high heat. Reduce the temperature to a simmer, and cook for 15 to 20 minutes until the flavors meld a bit.
  • Reduce heat to low (if not already there), then stir in the beans, chocolate and peanut butter until beans are warmed through and chocolate has melted, about 5 minutes. Season to taste with salt and serve with tortilla chips, cheese, avocado or whatever toppings you desire.

3 pounds beef shoulder, cut in large cubes
Kosher salt and freshly ground black pepper
2 medium onions, diced
5 garlic cloves, halved
3 canned chipotle peppers in adobo, chopped
1 jalapeno, chopped
1/2 cup Ancho Chili Powder, recipe follows
1 (28-ounce) can whole tomatoes
2 tablespoons tomato paste
2 (15 1/2-ounce) cans kidney beans, drained and rinsed
1/4 cup cornmeal
1 tablespoon grated unsweetened chocolate
3 cups shredded white Cheddar, for serving
16 saltine crackers, for serving
3 ancho chiles, seeded and hand-torn into pieces
2 tablespoons chili powder
2 tablespoons ground coriander
1 tablespoon ground cumin
1 tablespoon sweet paprika
1 tablespoon dried oregano
1 tablespoon garlic powder
1/4 teaspoon ground cinnamon

Steps:

  • Making chili is nothing more than mounting layers of flavor and letting them all simmer together. Get in the habit of tasting recipes in stages; this way if something is not quite right, adjustments can be made on the spot.
  • Season the beef shoulder all over with salt and pepper then put it in a large soup pot. Add enough water to cover by 1 inch, about 3 quarts, and place over medium heat. Bring to a boil and skim off any foam that rises to the surface. Mix in the onions, garlic, chipotles, and jalapeno. Stir in the Ancho Chile Powder. Pour the entire can of tomatoes, with the liquid, into a bowl and hand-crush until chunky; add the crushed tomatoes to the pot along with the tomato paste. Simmer until the meat is fork tender and comes apart with no resistance, about 2 hours. As it cooks down, add more water if necessary. After the chili has cooked a couple of hours, take a wooden spoon and beat it vigorously so the meat shreds apart.
  • Add the next layer of flavor by stirring in the beans and cornmeal. Season with salt and pepper and simmer for another hour, stirring occasionally. Partially cover the pot so the steam does not get trapped under the lid and drip down into the chili making it watery. In the last 5 minutes of cooking, stir in the grated chocolate. Garnish each serving with shredded Cheddar and saltine crackers.
  • This homemade chili powder will add a smoky depth to chili and as a dry rub for steaks. Toast the ancho chile pieces over low heat in a dry skillet until fragrant, shaking the pan so they don't scorch. Put the chiles in a mini food processor and pulse to a powder. Add the remaining ingredients and buzz again to combine.
  • Yield: about 1 cup

1 vanilla bean (or 1 teaspoon vanilla extract)
3/4 cup sugar
1 teaspoon ground cinnamon
1 heaping tablespoon instant espresso
Pinch salt
2 1/2 ounces bittersweet chocolate, the best quality possible, grated
2 cups whole milk
Vanilla ice cream
Chili powder

Steps:

  • Bring water to a boil in a saucepan. Split the vanilla bean and add to the boiling water. Add sugar, cinnamon, espresso, and a pinch of salt. Simmer for 1 minute and add the bittersweet chocolate. Whisk until it gets thick. Add milk and simmer 1 minute. Serve immediately with a dollop of vanilla ice cream and a sprinkling of chili powder on top.
  • You may make this ahead and reheat. Make sure to either whisk it or blend it in a blender to make it light and foamy before serving. (The classic Mexican chocolate was whisked with a special wooden tool called a 'molinillo'.)

6 Tbsp butter, unsalted (2 tablespoons melted, 4 tablespoons at room temp.)
1/2 c natural cocoa powder (not dutch-process), plus more for dusting
1 1/3 c all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 Tbsp milk
1/4 c vegetable oil
1 1/3 c sugar
1 1/2 tsp vanilla extract
2 large eggs, at room temp.
FOR THE FILLING AND TOPPINGS
8 oz bittersweet chocolate, finely chopped
1/2 c heavy cream
4 Tbsp butter, unsalted
1 Tbsp light corn syrup
caramel sauce, for drizzling
1 pt vanilla ice cream

Steps:

  • 1. Preheat the oven to 350 degrees. Make the cakes: Brush the four 1 1/4 cup brioche molds or jumbo muffin cups with the 2 tablespoons of melted butter. Dust the molds with cocoa powder and tap out the excess.
  • 2. Whisk the flour, baking soda, baking powder, and salt in a small bowl. Bring milk and 3/4 cup water to a simmer in a saucepan over medium heat; set aside.
  • 3. Combine the vegetable oil, 4 tablesoons room-temperature butter and sugar in a stand mixer and beat with the paddle attachment on medium-high speed until fluffy, about 4 minutes, scraping down the bowl and beater as needed. Add 1/2 cup cocoa powder and the vanilla; beat 1 minute on medium-low speed, then add the remaining egg and beat 1 more minute.
  • 4. With the mixer on low speed, gradually beat in the flour mixture, then the hot milk mixture. Finish mixing the batter with a rubber spatula until combined. Divide the batter evenly among the molds, filling each slightly more then three-quarters of the way.
  • 5. Transfer the mold to a baking sheet and bake until tops of the cakes are domed and the centers are barely set, 25 to 30 minutes. Transfer the baking sheet to a rack; let the cakes cool until they pull away from the molds, about 30 minutes.
  • 6. MAKING THE FILLING: Microwave the chocolate, cream, butter, and corn syrup in a microwave safe bowl in 30 second intervels, stirring each time, until chocolate starts to melt, 1 minute 30 seconds. Let sit 3 minutes, then whisk until smooth. Reheat before using, if necessary.
  • 7. Use the tip of the paring knife to gently loosen the cakes from the molds, then invert the cakes onto a cutting board.
  • 8. Use the knife to cut a 1 1/2 inch circle on the top of each cake, cutting almost to the bottom.
  • 9. Hollow out the cakes with a spoon; save the scraps. Wrap the cakes with plastic wrap and microwave until steaming, 1 minute.
  • 10. Drizzle plates with caramel, then unwrap the cakes and place on top. Pour about 3 tablespoons filling into each cake.
  • 11. Plug the hole with the cake scraps. Save or discard any remaining scraps.
  • 12. Top each cake with a scoop of ice cream. Spoon more chocolate sauce on top, spreading it thin so it hardens into a shell.

BLACK BEAN AND CHOCOLATE CHILI

I know the title seems somewhat bizarre, but the slight "hint" of semi-sweet chocolate gives this vegetarian chili a real depth of flavor. It reminds me somewhat of a sweet, yet spicy mole sauce. This recipe was adapted from one I found in the "Moosewood Restaurant Celebrates" cookbook.

2 tablespoons olive oil
1 1/2 cups chopped onions
4 garlic cloves, minced
1 stalk celery, sliced
1 -2 jalapeno chile, minced
1 tablespoon cumin
2 teaspoons oregano

1 pinch ground cloves
1 teaspoon ground coriander
1 tablespoon chili powder
1/2 teaspoon ground black pepper, to taste
1/2 teaspoon salt, to taste
1 1/2 cups chopped bell peppers (red and green are nice)
2 (14 1/2 ounce) cans black beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon fresh lime juice (optional)
1 tablespoon soy sauce
1 1/2 ounces semisweet chocolate (about 1/4 cup)
tofu sour cream or scallion, for serving

Steps:

  • In a large skillet, heat olive oil over medium heat. Add onions and garlic and sauté until onions become soft and translucent, about 10 minutes.
  • Add the celery and chile, cover and cook for another five minutes more.
  • Reduce the heat and stir in spices, (cumin, oregano, cinnamon, cloves, coriander, chili powder, black pepper, salt) along with the bell peppers. Cover again and cook for another five minutes. Stir often to keep the spices from burning. If the pan gets too dry add a little liquid from the diced tomatoes, or some water.
  • Next, add the black beans, tomatoes, lime juice (if using) and soy sauce. Let the chili simmer on low for 5 to 10 minutes, until it thickens slightly and flavors combine.
  • Stir in the chocolate. When chocolate has melted, taste to adjust the salt and pepper. Serve with topping of your choice. I like a bit of vegan cheese, sour "cream" and scallions.
  • Chili can also makes a great filling to serve wrapped in flour tortillas, or in taco shells if you prefer.

2 ancho chilies, seeded and hand torn into pieces (I used powdered because we couldn't find them in the store) or 2 tablespoons dried ancho chile powder (I used powdered because we couldn't find them in the store)

sea salt (I used kosher) or kosher salt (I used kosher)
fresh ground black pepper
2 onions, diced (I used one very large Vidalia)
10 garlic cloves, halved
3 canned chipotle chiles in adobo, chopped (I used Louisiana Chipotle sauce since we did not have the peppers in adobo) or 2 ounces louisiana hot sauce (I used Louisiana Chipotle sauce since we did not have the peppers in adobo)
1 jalapeno, seeded and chopped
2 tablespoons chili powder
2 tablespoons coriander
1 tablespoon ground cumin
1 tablespoon sweet paprika
1 tablespoon dried oregano
1/4 teaspoon ground cinnamon

2 tablespoons tomato paste

Okay, the whole family had this delicious dessert at Chili's more than once. We all LOVED it. The problem was, we could not find a recipe for it anywhere. So we adopted our own....and we think we did really good. Also, this is way too easy to taste so good!

18 ounces Duncan Hines yellow cake mix
1 (12 ounce) package nestle white chocolate chips
1 1/3 cups water
1/3 cup vegetable oil
3 large eggs
1 -2 teaspoon vanilla extract
vanilla ice cream
raspberry sauce
vanilla bark (optional)

Steps:

  • Prepare your cake mix as directed on box. Prepare a bundt cake pan with cooking spray.
  • Bake as directed. Let you cake cool just a little -- you want to serve it warm. Now, if you want to be really creative, you can slice your cake so that you can fill it with the white morsels that you will be melting. We haven't worried about being that creative yet.
  • So we melt the white morsels in the microwave just enough to warm them, stir them & spread over each cake slice. Scoop your desired amount of ice cream (we like Publix vanilla) & place it on your cake slice. Drizzle with Raspberry sauce & if you like, you can use a vegetable peeler & grate some vanilla bark to sprinkle over the top. Enjoy!
  • You can use your judgement on the white morsels, vanilla ice cream, raspberry sauce & vanilla bark to suit your taste.

1 large vidalia onion (diced)
2 medium green bell peppers (chopped 1-inch )
1 poblano chile (diced)
8 garlic cloves (minced)
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon dark brown sugar
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
2 cups brewed coffee
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can red kidney beans (drained and rinsed)
2 chipotle peppers (finely chopped)
4 ounces dark chocolate (70% roughly chopped)

Steps:

  • Grab a medium sized bowl from it's home. Dump in the flour salt and pepper and use a fork or whisk to mix together until well blended. Add in the cubed steak and toss around until every bit of red is covered in a dusting and you've got what looks like a ton of bubble gum flavored marshmallows (but don't confuse them because I don't think it would be very tasty).
  • In a large pot or dutch oven, heat the oil until shimmering over medium high heat. Grab some of the cubed meat, (about a third) and shake off any excess flour. Carefully add to hot oil being sure not to overcrowd the pot. Let each be for a minute or two until browned, the flip and wait. Repeat until all sides are browned. Using a slotted spoon, remove the nicely browned meat chunks and pile up in a large bowl or plate. Repeat this process until all meat has been nicely browned.
  • While your pot of oil is still hot, add in the onions (if it's looking a little dry, you can add in a bit more oil) and turn the heat down to medium. Give a sprinkle of salt and pepper to them now and grab a spoon and stir them a bit. Let the onions cook, while stirring every now and then until they start to turn translucent.
  • Once the onions have cooked down a bit, add in the bell pepper, poblano and smashed garlic (if you ended up mincing your garlic, add it in right after you add the spices, otherwise you may end up burning the tiny particles of flavor). Again, give a nice sprinkle of salt and pepper to the pot. Let it all cook down, stirring when you're not having a taste of your margarita (by the way, you should be drinking a margarita) until the peppers begin to soften (they don't need to be soft and mush because it's going to simmer away on the stove top for a bit).
  • In between cooking down the vegetables and enjoying a margarita, mix together your spices. Grab a small bowl and combine the chili powder through the red pepper flakes. Mix them together.
  • Once your peppers have softened, pour in that beautiful spice blend and stir. Give a big ol' stir to everything to make sure you've got every bit of onion and pepper and garlic coated with those fragrant spices. You want to keep it moving so you don't burn any spices. Heating the spices for a couple minutes like this will help to bloom them and bring out lots of great flavor.
  • After a couple minutes, pour in some of your brewed coffee (about a 1/2 cup) and it will sizzle and steam. Take this opportunity to go in and scrape the bottom of the pot with your spoon. Get every last bit up off the bottom and mixed into the coffee and vegetables. Then, go ahead and add in almost the rest of the coffee, saving about a 1/4 cup (you'll see why next).
  • Carefully pour the can of tomatoes in (especially if you've got white countertops). Before disposing of your can, rinse it out with the reserved coffee. Add the caffeine water to your empty can, swirl it about to clean off any tomato residue and then add to the soon to be simmering pot.
  • Finally, add in the beans and the chipotle peppers. Grab your plate of browned beef and add them to the pot along with any liquid that has seeped out. Combine it all nicely with your spoon and crank the heat to high. When it begins to boil, put the lid on and turn the heat down low. Let it simmer away for 2 hours, giving it a stir every now and then (if you forget, it won't be the end of the world). This will make all the delicious fat in the steak melt into the chili, the flavors will meld and your meat will turn very tender. Use this two hour window to clean up, make a pitcher of margaritas, prep any condiments you want to serve it with and chop your chocolate.
  • After the 2 hours are up, if you're still standing, turn off the heat and remove the lid. Sprinkle over the dark chocolate and let it melt in as you slowly stir the giant pot of chili. Taste and season with salt and pepper to your liking.
  • Serve with chips or cornbread, sour cream or greek yogurt, cheese, avocado, more chopped chocolate...you get the idea...it's chili.

5 tablespoons chocolate instant pudding mix
1 tablespoon baking powder
1/4 teaspoon baking soda
1 1/4 teaspoon ground chile powder
2 teaspoon ground cayenne pepper
1/2 teaspoon kosher salt
1 cup low-fat milk
5 whole eggs
1/2 cup canola oil
1 teaspoon vanilla extract
5 ounces sour cream
4 tablespoons mayonnaise
1 cup semisweet chocolate chips
Dark Chocolate Ganache, recipe follows
Edible gold dust
Vodka
24 large sugar diamond
120 small sugar diamonds
Edible gold glitter
2 1/2 pounds dark chocolate (recommended: Ghirardelli's)
1 quart heavy cream
1/4 pound butter, cubed

Steps:

  • Preheat oven to 300 degrees. Prepare a cupcake pan with 24 cupcake liners.
  • Mix the flour, sugar, cocoa powder, pudding mix, baking powder, baking soda, chile powder, cayenne, and salt in a medium bowl. Combine the milk, eggs, oil, and vanilla extract in a 5-quart mixer with a paddle attachment on first speed. Add the sour cream and mayonnaise. Add the dry ingredients, 1 scoop at a time, allowing each scoop to be incorporated before adding the next. Once all the dry ingredients are incorporated, stop the mixer and scrape down sides and bottom. Turn the mixer up to second speed and mix well. Turn the mixer off. Add the chocolate chips and fold in by hand. Fill the cupcake liners using a 2-ounce scoop. Bake for 15 minutes. Insert a skewer into the cupcake, if it comes out clean they are ready to be removed from the oven. Let cool completely before decorating.
  • To assemble: Place a star tip #849 in a large piping bag. Fill with Dark Chocolate Ganache and generously frost each cupcake. Mix equal parts gold dust with vodka to make an edible gold paint. Using a small round brush, paint the edges of the ganache with the edible gold paint. Garnish by placing 1 large and 5 small sugar diamonds on top of each cupcake. Sprinkle with edible gold glitter.
  • Make your own double boiler by filling a pot half way with hot water. Let the water come to a boil. Place a metal bowl over the pot, making sure that the water does not touch the bottom of the bowl. Put the chocolate in the bowl and stir to melt. When the chocolate is melted completely, remove from the heat. Scald the cream (to 180 degrees F) in a pot over medium heat. Pour the heated cream over the melted chocolate and slowly incorporate; the chocolate will appear glassy. Add the butter, in pieces, to the chocolate. Mix until all the butter has melted. Let set for 1 to 2 hours. The ganache is ready when it is a pipe-able consistency.

Steps:

  • CRUST: Preheat oven to 350°F. Melt butter in a medium microwave-safe bowl. When butter is completely melted, add graham cracker crumbs and sugar. Combine well. Transfer to a one-quart casserole dish. Press firmly into bottom of dish. Top evenly with chocolate chips. Bake for 5 minutes, or until chocolate is melted. With rubber spatula, spread melted chocolate out smoothly. FILLING: Combine dry ingredients in a large mixing bowl. Add milk, oil, and vanilla and mix on low, until smooth. With mixer still on low, add chocolate chips, coconut, and walnuts. When thoroughly mixed, pour filling over crust. Bake, uncovered, at 350°F, for 35 to 40 minutes, or until a wooden pick comes out clean. TO SERVE: Spoon 2 tablespoons butter on ovenproof plate and place in oven until butter melts. Remove plate from oven and place large piece of warm pie right on top of the melted butter. Top pie with a scoop of vanilla ice cream. Top with hot fudge & caramel toppings. Sprinkle with walnuts and enjoy!

6 tablespoons butter
1/2 cup chopped walnuts

1/2 cup butter (1 stick), softened
1 1/2 teaspoons cinnamon
3 tablespoons granulated sugar
6 tablespoons chopped walnuts
chocolate syrup
9 scoops vanilla ice cream
caramel syrup

Steps:

  • 1. Prepare your oven and preheat it at 325 degrees Fahrenheit. 2. Mix the baking powder, flour and baking soda in a medium-sized bowl. 3. Get another bowl, a larger one and beat the sugar with the butter using an electric mixer. Keep on beating for approximately 30 seconds or wait for the mixtures to have a lighter color. Then, put in the milk, egg and vanilla. Continue to beat until the mixture turn smooth. 4. Gradually combine the wet mixture with the dry mixture. Beat the mixture until they are combined well. Then, add the coconut flakes. Set aside. 5. In a medium bowl, melt about 6 Tbs. of butter using a microwave at high temp for 30 seconds. Once the entire butter melted, add in the sugar and stir it very well for another 30 seconds. Then, add in the graham crumbs then stir again. On a 9" by 9" baking pan, press the mixture at the bottom part. 6. On top of the graham crust, sprinkle about a cup of chocolate chips. Make sure the chips are evenly distributed. 7. On top of the chocolate chips, press down the cookie dough you've made earlier. Make sure you cover the entire chocolate chips at the bottom. You can put flour on your fingers to make sure the dough will not stick on your fingers. 8. On top of the dough, sprinkle walnuts. Press the walnuts thoroughly into the dough using your fingers. 9. Bake the cookie dough until the edges of the dough turns light brown. This usually takes 40 to 45 minutes. 10. Start preparing the cinnamon butter. Put the sugar, butter and cinnamon together in a small-sized bowl. Cream the mixture using an electric mixer on high speed. 11. Serve the dessert by first heating up a small-sized skillet at medium heat. Remove the skillet from the heat once you're sure it's hot. Then, put 1 Tbs. of the cinnamon butter you've made earlier. Since the skillet is hot, the cinnamon butter will immediately melt and starts to sizzle. Cut the pie into 9 parts and put one piece of the pie on the hot skillet.
  • 2. You don't' have to worry if the pie You can easily reheat it using the microwave for about 30 to 40 seconds. 12. Put a single scoop of vanilla ice cream over the pie. Drizzle caramel and chocolate syrup on top of the vanilla ice cream. On top of the syrup, sprinkle some chopped walnuts, about 2 teaspoons. Repeat the process on the remaining pieces of pie and ingredients. Don't forget to serve in a hot skillet to make the sizzling effect.

If I use mild taco seasoning and mild salsa my husband will eat bowls and bowl of this and for a man that hates chili this is saying a lot. Feel free to spice it up! Garnish this hearty dish with crumbled taco shells, shredded cheddar cheese, cilantro and diced fresh tomatoes. Yum!

1 onion, diced
2 garlic cloves, minced
1 (4 ounce) can diced green chilies

2 cups water
1 (16 ounce) jar thick & chunky salsa
1/2 cup semi-sweet chocolate chips

1 (15 ounce) can pinto beans, drained

Steps:

  • In a large pot, heat oil over medium heat; add onion and garlic. Cook and stir until onions are tender, just about 3 minutes. Add chiles, taco seasoning mix and ground beef. Cook beef, stirring often, about 5 minutes or until browned.
  • Add tomatoes, cinnamon, water, salsa, chocolate chips and almonds. Stir to combine. Bring to a boil; reduce heat and simmer 45 minutes. Stir every 10-15 minutes to combine the flavors. Add beans and heat an additional 15 minutes.

  • Take approximately a tablespoon of the mix and form it into a ball and then press down with fork, place on baking tray leaving a little room for spreading.
  • Bake for 15- 18 minutes at 350F Allow to cool slightly.

3 eggs, stand at room temp for 30 mins.
2 c all-purpose flour
3/4 c hershey's special dark cocoa
1 tsp baking soda
3/4 tsp baking powder
3/4 c butter, softened
2 c sugar
2 tsp vanilla extract
1 1/2 c milk
3 oz baking chocolate, semi-sweet, grated
1/2 tsp salt
2 Tbsp chipotle chili powder

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Grease either a 9 x 13 oblong pan, or three - 8x1 1/2 inch. round pans. (I use Pam type butter flavored spray or Baker's Joy when making cakes).
  • 3. In medium bowl stir together flour, cocoa powder, baking soda, baking powder, Chipotle chili powder and salt. Set aside.
  • 4. In large mixing bowl beat butter for 30 seconds on medium to high. Gradually add sugar 1/4 cup at a time beating after each addition. Scrape down sides of bowl and beat on medium an additional 2 minutes.
  • 5. Add the eggs, one at a time, to the butter mixture, beating after each addition. Beat in the vanilla.
  • 6. Alternatly add the flour mixture and milk to the butter mixture, beating on low after each addition until just combined.
  • 7. Beat on medium to high for 20 seconds. Stir in grated chocolate.
  • 8. Divide the batter between the prepared pans (or place in pan if using oblong). This batter will be quite thick.
  • 9. Bake 40 to 45 minutes or until toothpick in center comes out clean.
  • 10. Cool in the pan(s) for 10 minutes on wire rack.
  • 11. Remove from pan(s) and finish cooling on wire rack.
  • 12. Frost with Especially Dark Chocolate Frosting (recipe on site), or your favoite frosting. If, desired top with a dollap of whipped cream and some shaved chocolate.

3 tablespoons packed dark brown sugar
2 teaspoons ancho chile pepper powder
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 to 1 1/2 lb ground beef
1 green bell pepper, chopped
1 sweet onion, chopped
1 clove garlic, finely chopped
1 tablespoon olive oil, if desired
2 cans (14.5 oz each) Muir Glen™ organic diced tomatoes, drained
1 can (15 or 19 oz) Progresso™ red kidney beans, drained, rinsed
1 bottle or can (12 oz) stout beer
1/2 cup strong brewed coffee (room temperature)
2 squares unsweetened baking chocolate, chopped
Corn chips
Shredded Cheddar cheese
Sour cream
Lime slices or wedges

Steps:

  • In small bowl, mix brown sugar, chile pepper powder, cinnamon and cumin; set aside.
  • In 4-quart Dutch oven, cook beef, bell pepper, onion and garlic in oil over medium heat 8 to 10 minutes, stirring frequently, until beef is thoroughly cooked and vegetables are crisp-tender; drain. Add spice mixture; stir until blended.
  • Stir in tomatoes, beans, 1 cup of the beer, the coffee and chocolate. Heat to boiling; reduce heat. Simmer 15 to 30 minutes until chili is desired thickness. Add some or all of the remaining 1/2 cup beer, if necessary. Check seasoning and heat level; adjust to taste.
  • Serve chili with corn chips, cheese, sour cream and limes.

1/2 teaspoons crumbled pequín chilies* (wear rubber gloves)
1/2 cup blanched whole almonds, toasted, cooled, and chopped
*available at some specialty stores

Steps:

  • In a metal bowl set over a pan of barely simmering water melt 6 ounces of the bittersweet chocolate, chopped, and the unsweetened chocolate, stirring until the mixture is smooth, and remove the bowl from the heat. In a heavy saucepan combine the cream and the milk and bring the mixture just to a boil. In a bowl whisk together the egg yolks and the brown sugar, add the cream mixture in a stream, whisking, and pour the mixture back into the pan. Cook the custard over moderately low heat, stirring, until it registers 170°F. on a candy thermometer, strain it through a fine sieve set over another bowl, and whisk in the melted chocolate, the cinnamon, and the Kahlúa. Let the mixture cool completely and freeze it in an ice-cream freezer according to the manufacturer's instructions, adding the remaining 3 ounces bittersweet chocolate, chopped fine, the crumbled chilies, and the almonds during the last few minutes of freezing time.
