1 cup shortening
1 cup brown sugar
½ cup white sugar
1 teaspoon vanilla extract
3 eggs
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups semisweet chocolate chips
2 (8 ounce) packages cream cheese
¼ cup white sugar
2 eggs
1 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, cream together shortening, brown sugar, and 1/2 cup white sugar. Beat in the 3 eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, and salt; blend into the sugar mixture. Stir in chocolate chips, and set aside.
  • In a separate bowl, mix together the cream cheese and 1/4 cup white sugar. Mix in the 2 remaining eggs.
  • Spread 1/2 of chocolate chip dough in bottom of the prepared pan. Pour cream cheese batter on top of dough. Sprinkle with pecans. Drop pieces of the remaining chocolate chip batter over filling. Don't worry if there are gaps; the batter will spread.
  • Bake for 45 minutes in preheated oven, or until lightly browned on the top. Let the brownies cool in the pan before cutting into bars.

1 ½ cups unsalted butter, 3 sticks, melted
3 ¼ cups sugar, divided
7 large eggs, divided
2 tablespoons vanilla extract, plus 1 teaspoon, divided
2 ¼ cups all-purpose flour
2 cups cocoa powder
1 teaspoon baking soda
1 ½ teaspoons baking powder
2 teaspoons salt
3 cups semisweet chocolate chips
8 oz cream cheese, 1 package. softened
24 chocolate sandwich cookies

Steps:

  • Preheat the oven to 350˚F (180˚C). Grease a rimmed baking sheet with nonstick spray.
  • Combine the melted butter and 3 cups (600 g) of sugar in a large bowl and whisk to combine. Let sit for a minute to cool before adding the eggs, to avoid cooking them, then add 6 eggs and 2 tablespoons of vanilla and whisk to combine.
  • Sift in the flour, cocoa powder, baking soda, baking powder, and salt. Whisk until just combined.
  • Use a spatula to fold in the chocolate chips.
  • Pour the batter onto the prepared baking sheet, spreading to the edges with a spatula. Bake for 25 minutes, or until brownies appear be nearly fully cooked.
  • While the brownies are beginning to bake, beat together the cream cheese and the remaining sugar in a medium bowl with an electric hand mixer until there are no lumps.
  • Add the remaining egg and remaining teaspoon of vanilla, beating until evenly combined.
  • After 25 minutes, remove the brownies from the oven and use the bottom of a ¼-cup (60 ml) measuring cup to make 24 evenly spaced indentations in the brownies.
  • Carefully fill the indentations with cheesecake filling. Top each with a chocolate sandwich cookie.
  • Return to the oven for 15 more minutes, until the cheesecake filling is set.
  • Let cool, then cut into squares and serve.

Nonstick vegetable oil spray
8 ounces bittersweet chocolate, finely chopped
1/2 cup (1 stick) unsalted butter, diced
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
1/4 teaspoon salt
Cheesecake layer:
1 8-ounce package cream cheese, room temperature
1/3 cup creamy (smooth) natural peanut butter (made with only peanuts and salt)
1 teaspoon vanilla extract
1/2 cup sugar
2 large eggs
2 tablespoons heavy whipping cream
2 tablespoons all purpose flour
2 ounces bittersweet chocolate, chopped

Steps:

  • For brownie layer:
  • Position rack in center of oven and preheat to 325°F. Spray 9-inch square metal baking pan with 2-inch-high sides with nonstick spray; line bottom with parchment paper.
  • Stir chocolate and butter in medium saucepan over low heat until smooth; cool 10 minutes. Using electric mixer, beat sugar, eggs, and vanilla in medium bowl until very fluffy, about 3 minutes. Beat in chocolate mixture on low speed, then beat in flour and salt. Spread batter in pan.
  • For cheesecake layer:
  • Using electric mixer, beat cream cheese, peanut butter, and vanilla in medium bowl until smooth. Gradually add sugar, beating until fluffy. Beat in eggs 1 at a time. Beat in cream, then flour. Transfer 1/3 cup cheesecake batter to small bowl and reserve. Spread remaining cheesecake batter over brownie layer.
  • Place chocolate in small microwave-safe bowl. Microwave on low power in 10-second intervals until chocolate begins to melt, then stir until smooth. Mix chocolate into reserved 1/3 cup cheesecake batter. Drop chocolate batter by heaping teaspoonfuls atop cheesecake layer. Using chopstick or wooden skewer, swirl chocolate batter in figure-eight pattern through white cheesecake layer.
  • Bake brownies until edges of cheesecake layer are puffed and center is set, about 36 minutes. Cool brownies in pan on rack. Cover; chill at least 1 hour.
  • Cut brownies into 25 squares. Using narrow spatula, transfer brownies to platter. Serve cold.

2 ounces caster sugar
1 teaspoon vanilla extract
4 ounces dark chocolate

5 ounces light muscovado sugar
2 beaten eggs

Steps:

  • For the cheesecake: Beat the egg in a mixing bowl, then add the cream cheese, caster sugar and vanilla extract. Beat until smooth and creamy.
  • For the brownie: Melt the chocolate (better to use minimum of 70% cocoa solid) and butter together. Stir well and add the sugar.
  • Gradually pour in the beaten egg, a little at a time, and beat well, until thoroughly combined.
  • Gently stir in the flour.
  • Spread 2/3 of the brownie mix over the base of a lined 8" tin. Spread the cheesecake mixture on the top, then spoon on the remaining brownie mixture in heaps.
  • Using a skewer, swirl the mixtures together.
  • Bake at 160°C/325°F/gas 3 for 30-35 minutes or until just set in the centre. Leave to cool in the tin, and then cut into squares.

1 pkg family style chewy fudge brownie mix
3 eggs
12 oz cream cheese
1/2 c sugar
2 Tbsp all-purpose flour
1 tsp vanilla extract
1 c milk chocolate chips
1 tsp canola oil
7 oz marshmallow fluff
3 Tbsp chocolate sprinkles

Steps:

  • 1. Preheat oven to 350 degrees F. Line 9" square baking pan with foil to overhang sides by 2". Coat with cooking spray.
  • 2. On medium speed, beat brownie mix, 2 eggs plus one egg yolk (reserve remaining egg white) and 1/4 cup water until combined, about 1 minute. Pour into lined pan. Bake 15 minutes.
  • 3. Beat 8 oz cream cheese, reserved egg white, sugar, flour, and vanilla.
  • 4. Pour over baked brownie mix and return to the oven. Bake for an additional 20 minutes or until pick inserted in center comes out with moist crumbs. Cool completely.
  • 5. At this point, the cooled brownies can be removed from the pan and separated from the foil if you wish. (I put the brownie on a cutting board to finish off the icing and sprinkles before slicing/plating.)
  • 6. Melt chocolate and stir in oil. Beat remaining cream cheese and 1 Tbsp water. Beat in melted chocolate, then add marshmallow fluff until smooth. Spread over cooled brownies and chill. Top off with chocolate sprinkles (jimmies, shots), if desired.

This is a moist and gooey brownie that has a light and cheesecakey texture. The secret is draining silken tofu and soy yogurt for a day or two so they thicken up, which gives the filling the texture of cream cheese without the dairy or the fat! I made these brownies for my family for Valentine's Day and cut them into hearts with heart-shaped cookie cutters, and everyone gobbled them up! This recipe is from the wonderful Heather Van Vorous at the IBS message boards at www.helpforibs.com. Prep time does not include time to drain the tofu and soy yogurt.

1 (9 ounce) package silken tofu (I use Mori Nu Lite)
1/3 cup plain soy yogurt (I use Whole Soy)
2 egg whites (or 1/4 cup Egg Beaters)
1 tablespoon cornstarch
3 tablespoons white sugar
2 teaspoons vanilla
1/8 teaspoon salt
1 1/2 cups white flour
1 cup brown sugar
1/3 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1 tablespoon canola oil (or vegetable oil)
4 tablespoons unsweetened applesauce
1 tablespoon vinegar
1 teaspoon vanilla

Steps:

  • Crumble tofu into a sieve lined with several layers of paper towels; add soy yogurt.
  • Cover sieve with plastic wrap and place over a bowl to drain overnight, or for up to two days (the longer this drains, the thicker and creamier your filling will be).
  • Preheat oven to 350F.
  • In a small bowl with an electric beater, beat the drained tofu/yogurt with other filling ingredients until smooth and creamy (or blend ingredients in a blender); set aside.
  • In a large bowl sift together the flour, sugar, cocoa powder, soda, and salt; whisk dry ingredients until well blended.
  • Whisk in water, oil, applesauce, vinegar, and vanilla just until batter is blended.
  • Lightly spray a 9 x 13" baking pan with cooking oil.
  • Pour chocolate mixture into pan and spread evenly.
  • Spoon large dropfuls of the filling mixture in 12 even spoonfuls across the batter (you should have three rows of four dropfuls of filling).
  • Take the flat side of a butter knife and gently pull it through the batter and filling to make a marble pattern.
  • Bake for 18-22 minutes, until a toothpick inserted in a brownie portion comes out with moist crumbs.
  • Cool on rack.
  • I would recommend allowing these to cool completely before serving; I think they have the best texture that way!
  • They're also fantastic topped with vanilla soy ice cream and drizzled with chocolate syrup!

MAIDA HEATTER'S CHOCOLATE CHEESECAKE BROWNIES

The year: 1983. The place: Williamsburg, Va., where representatives from across the globe - and "some of the biggest and brightest names on the American culinary scene" - gathered. The Times's own Craig Claiborne planned the menus; Paul Prudhomme, Wolfgang Puck and Zarela Martinez cooked; and Maida Heatter provided dessert. Among her offerings were these, chocolate cheesecake brownies, "a formidable new creation" for the time. Here, a layer of pecan-studded brownie meets a sheet of chocolate cheesecake. Make them for a group - or for yourself to eat over time. They freeze well, and can just as well be served frozen.

4 ounces (1 stick) unsalted butter, plus butter for greasing the pan
2 ounces unsweetened chocolate
Pinch of salt, if desired
1 cup sugar
1/2 teaspoon pure vanilla extract
2 large eggs
1/3 cup unsifted all-purpose flour (bleached or unbleached)
1 cup toasted pecan halves (see note)
1/2 cup packed shredded coconut
8 ounces cream cheese, at room temperature
1/2 cup sugar
2 tablespoons unsweetened cocoa powder
1/2 teaspoon pure vanilla extract
A few drops almond extract, optional
2 large eggs
1 tablespoon flour
Cocoa powder, either sweetened or unsweetened, optional

Steps:

  • Adjust a rack one-third up from the bottom of the oven and preheat the oven to 350 degrees.
  • Prepare a 9-by-9-by-1 3/4-inch pan as follows: Turn the pan upside down. Center a 12-inch square of aluminum foil over the pan and fold down the sides and corners to shape the foil. Then turn the pan right side up. Place the foil in the pan and gently press it into place. Place a piece of butter in the pan, heat it in the oven to melt and then brush it all over with a pastry brush or spread it with crumbled wax paper. Set aside.
  • To prepare the brownie layer, place the chocolate and butter in a 2- to 3-quart heavy saucepan over low heat and stir occasionally until melted. Stir in the salt, sugar and vanilla. Remove from heat and stir in the eggs one at a time. Add the flour and stir well to mix, then stir in the pecans and coconut. Turn the batter into the prepared pan and smooth the top. Let stand.
  • To prepare the cheesecake layer, beat the cheese in the small bowl of an electric mixer until it is soft. Add the sugar, two tablespoons cocoa powder, vanilla and almond extracts, eggs and flour, one at a time, beating until incorporated after each addition.
  • Pour the cheesecake mixture in a ribbon over the top of the brownie layer. Smooth the top. Then marbleize the two mixtures slightly as follows: Insert the handle end of a teaspoon almost but not completely to the bottom in one corner of the pan and, with the flat side of the handle, cut through the batter in a wide zigzag pattern. Smooth the top again.
  • Bake for about 40 minutes until a toothpick gently inserted in the middle comes out clean.
  • Cool to room temperature. Then place in the freezer for about one hour until firm.
  • Cover with a piece of wax paper and, on top of that, a cookie sheet. Turn the pan and cookie sheet upside down, remove the pan and peel off the foil. Cover with a cutting board or another cookie sheet and then turn upside down again, leaving the cake right side up.
  • Cut into 16 large squares or 32 bars or triangles, wiping the blade with a damp cloth between cuttings. These may be wrapped individually in clear plastic wrap. But if they are not going to kept cold, using a sieve, sprinkle cocoa over the tops before wrapping to prevent sticking. Store these in the refrigerator or the freezer. They may be served frozen.
