2 tablespoons water
4 wooden sticks
4 large tart apples
2 cups chopped pecans or peanuts
1 cup semisweet chocolate chips
1 teaspoon shortening
1 cup English toffee bits or almond brickle chips

Steps:

  • In a large microwave-safe bowl, combine the caramels and water. Microwave, uncovered, on high for 45 seconds; stir. Microwave 20-40 seconds longer or until the caramels are melted; stir until smooth. , Insert wooden sticks into apples; dip apples into the caramel mixture, turning to coat. Coat with nuts; set on waxed paper to cool. , Meanwhile, melt chocolate chips and shortening; stir until smooth. Drizzle over apples. Sprinkle with toffee bits. Place on waxed paper to cool. Cut into wedges to serve.

Vegetable oil cooking spray
6 small apples, washed and dried, stems removed *see Cook's Note
2 (9.5-ounce) bags soft caramel candies, unwrapped (recommended: Kraft Classic Caramels)
1/4 cup pulp-free orange juice
1 (4-ounce) bar 53 percent cocoa dark chocolate, chopped into 1/2-inch pieces (recommended: Nestle Chocolatier)
Assorted small candies, chopped nuts and sprinkles

Steps:

  • Line a baking sheet with parchment paper and spray it with vegetable oil cooking spray. Insert the craft sticks halfway into the stem-ends of the apples.
  • In a medium, heavy saucepan, over low heat, combine the caramel candies and orange juice. Cook, stirring occasionally, until the candies have melted and the mixture is smooth, about 10 minutes. Set aside to cool for 2 minutes. Dip the apples in the caramel until coated and put them on the parchment paper until firm, about 2 hours.
  • Put the chocolate in a medium bowl and set it over a pan of barely simmering water. Stir until the chocolate is smooth and melted. Using a fork, drizzle the melted chocolate over the caramel. Put the apples back on the parchment paper for 10 minutes. Sprinkle with small candies, chopped nuts or sprinkles and allow the chocolate to harden, at room temperature, for about 3 to 4 hours.

12 Granny Smith apples
1 pound caramel
Melted dark, white or milk chocolate

1/2 cup M&M's or favorite candy topping

Steps:

  • Insert lollipop sticks into core of apples.
  • Heat caramel until it becomes liquid. (Can use stove top or microwave). Roll out caramel in between 2 pieces of plastic wrap to flatten. Cut caramel into long strips, about 4 inches long, to fit around apple. Wrap caramel around apple. Stand upright on waxed paper and let set for 15 to 20 minutes.
  • Melt dark, white or milk chocolate. Pour melted chocolate into a metal bowl. Dip apples into chocolate. Sprinkle chocolate covered apple with nuts, M&M's or your favorite topping. You can also add stripes of dark, white or milk chocolate around the apple. Place decorated apples onto wax paper, standing upright. Refrigerate for 15 minutes.

6 medium apples
1 cup coarsely chopped mixed nuts
2 tablespoons water
1 bag (14 ounces) caramels
1/2 cup semisweet chocolate chips
1 tablespoon shortening

Steps:

  • Insert skewer in stem end of each apple. Divide nuts into 6 mounds on waxed paper.
  • Heat water and caramels over low heat, stirring occasionally, until caramels are melted and smooth. Keep caramel over very low heat. Dip each apple into caramel, spooning mixture over apple until completely coated. (If caramel hardens while coating apples, heat over low heat.) Roll side and bottom of each apple in nuts. Let stand on waxed paper.
  • Heat chocolate chips and shortening over low heat, stirring occasionally, until melted. Spoon chocolate over top of each apple, allowing some to drizzle down sides. Let stand until coating is firm. Store loosely covered at room temperature or in refrigerator up to 1 week. Microwave Directions: Prepare apples and nuts as directed. Place water and caramels in 4-cup microwavable measure. Microwave uncovered on High 3 to 4 minutes, stirring after 2 minutes, until caramels can be stirred smooth. Continue as directed. 20 lady apples or 10 medium apples
Nonstick cooking spray
3 cups sugar
1 cup light corn syrup
1 cup heavy cream, room temperature
3 ounces best-quality semisweet chocolate, finely chopped

Steps:

  • Insert a 5-inch-long nontoxic twig or wooden dowel into the top of each apple. Prepare an ice-water bath. Coat a rimmed baking sheet with nonstick cooking spray.
  • Combine sugar and corn syrup in a heavy saucepan. Cook over medium-high heat, stirring occasionally with a wooden spoon, until dark golden (about 12 minutes after mixture comes to a boil). Slowly pour in heavy cream in a steady stream, stirring vigorously to combine. Remove from heat. Stir in chocolate until completely melted.
  • Briefly plunge saucepan into the ice-water bath to stop the cooking. Dip one apple at a time into the caramel, and use a spoon to coat the top and sides. Transfer to prepared baking sheet until set.

Vegetable oil cooking spray
6 small Granny Smith apples, washed and scrubbed (see Cook's Note)
Two 11-ounce bags soft caramel candies (about 80 caramels)
One 11-ounce bag white chocolate chips
1 cup semisweet chocolate chips

Steps:

  • Spray a baking sheet with vegetable spray. Dry the apples well and insert a lollipop stick into the stem end of each apple.
  • Combine the caramels and 1/4 cup water in a medium saucepan. Cook over medium heat, stirring constantly with a wooden spoon or spatula, until the caramel is melted and smooth. Holding them by the lollipop sticks, dip the apples in the caramel and roll them around to coat evenly. Lightly shake off excess caramel and set the apples stick-end up on the prepared baking sheet. Refrigerate until the caramel is set, about 15 minutes.
  • Place the white chocolate chips in a metal or glass bowl set over a double boiler and heat, stirring occasionally, until melted and smooth. Dip each caramel apple in the white chocolate, rolling it around to coat the caramel with the white chocolate. Lightly shake off excess and set the apple stick-end up on the wax paper. Refrigerate for another 30 minutes to set the white chocolate.
  • Melt the semisweet chocolate chips in second bowl set over a double boiler. Spoon the melted chocolate into a piping or plastic bag fitted with a small round tip. Remove the apples from the refrigerator and pipe ghost or skeleton faces onto the apples. Refrigerate for 15 minutes, or until set. Keep chilled until ready to serve.

40 individually wrapped caramels, unwrapped
8 tablespoons milk
1 1/4 packages chocolate candy melts (recommended: Wilton Chocolate)

Steps:

  • Line a baking sheet with a silicone mat or parchment paper. Remove the stem from each apple and press a wooden stick into the top. Put the caramels and milk in a microwave safe bowl. Microwave for 4 minutes, stirring once. Add more time in 30 second increments, if needed.
  • Roll each apple quickly in the caramel sauce until well coated and shake to remove the excess. Arrange on the baking sheet to set. Cool for 30 minutes.
  • Melt the chocolate candy melts in a double boiler. Dip the cooled apples into the chocolate and return to the baking sheet. Cool for 30 to 45 minutes.
  • Fill a microwavable squeeze bottle halfway with colored vanilla flavored candy melts and microwave it in 30 second increments, squeezing the bottle to distribute the heat. Drizzle on the cooled apples and decorate with a bow when completed.

  • Wash apples, then dry completely. (Note: In order for the caramel sauce to stick to the apples, the apples need to be well chilled before washing, drying and dipping in the caramel sauce.)

  • Directions For Filling Heat oven to 300 degrees. Chop pecans and place on a baking sheet. Toast for 8 minutes. Remove and let cool.
  • Pour wine over apples and soak.
  • Pour wine over apples and soak. Mix remaining ingredients. If you have time let fruit soak for 30 minutes. Then drain well onto a cloth or paper towel to remove access liquid. Stir into cream cheese mixture and refrigerate while you prepare everything else.
  • Directions For Eggs and Cream Whisk everything together in a bowl. Set aside.
  • Directions For Whipped Cream Whip heavy cream on medium, then high until soft peaks form. Add remaining items and continue beating until you have beautiful fluffy homemade whipped topping. Be careful not to beat too long or it will turn into butter. Refrigerate.
  • Putting It All Together Heat butter in a large skillet on medium. Lay out slices of bread.
  • Distribute filling between 4 slices of the bread. Top each with remaining slice. Dip into egg batter and place into hot pan. Cook until lightly browned on each side, approximately 4 to 5 minutes. Cut into triangles or squares.
  • Spoon whipped cream over each section. This cream is not super sweet. If you want even more decadence, drizzle with maple syrup or caramel.

12 wooden sticks
1 cup butter or margarine
1 16 ounces package (2 1/4 cups) brown sugar
dash salt
1 cup light corn syrup
1 14 ounce can (1 1/2 cups) sweetened condensed milk
2 squares (2 ounces) unsweetened chocolate
1 teaspoon vanilla
1 cup chopped peanuts

Steps:

  • Butter a baking sheet, set aside. Wash and dry apples, remove stems. Insert a skewer into stem end of each, set aside. In heavy 3 quart saucepan melt butter or margarine. Stir in brown sugar and salt, add corn syrup, mix well. Gradually stir in milk, and chocolate. Cook over medium heat, stirring constantly, 12 to 15 minutes or till candy thermometer registers 245 degrees (firm ball stage). Remove from heat, stir in vanilla. Dip each apple into chocolate mixture, turning to coat. With narrow spatula scrape excess caramel from bottom of apple and let drip back into pan. Immediately dip bottom half of apples in chopped nuts. Set on buttered baking sheet to cool.
