2 cups store-bought gluten-free pancake mix, such as Cherrybrook Kitchen
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 large egg, at room temperature
2 tablespoons vegetable oil
1-1/2 cups rice milk
3 bananas, 1 mashed and 2 diagonally sliced 1/4 inch thick
1 tablespoon pure vanilla extract
1/2 cup mini chocolate chips
Toppings: chopped walnuts and hot fudge ice cream topping

Steps:

  • Preheat a Belgian waffle iron to medium-high. In a large bowl, whisk together the pancake mix, salt, cinnamon, egg, oil, milk, mashed banana and vanilla. Add the chocolate chips; stir until just combined., Grease the waffle iron with nonstick cooking spray. Pour a heaping 1/3 cup batter into each waffle iron quarter, spreading the batter out to the edges. Close and cook until the waffle is crisp and the waffle iron stops steaming, about 4 minutes. Repeat with the remaining batter. To serve, top the waffles with banana slices, walnuts and hot fudge.

7 fluid ounces milk
⅓ cup chocolate chips
¼ cup vegetable oil
1 tablespoon white sugar
2 teaspoons baking powder
¼ teaspoon vanilla extract
⅛ teaspoon salt
nonstick cooking spray

Steps:

  • Beat egg in a large bowl with a hand mixer until fluffy. Add flour, milk, chocolate chips, oil, sugar, baking powder, vanilla extract, and salt; mix just until smooth.
  • Spray a Belgian waffle iron with cooking spray and preheat according to manufacturer's instructions.
  • Pour about 3/4 cup batter onto the hot waffle iron and cook until golden brown. Repeat with remaining batter. Serve hot.

2 egg yolks, reserve whites
2 c milk
2 c all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/3 c oil
1 tsp french vanilla extract
1/4 c cream of coconut
2 egg whites, stiffly beaten
3/4 c coconut flakes
1/2 c white chocolate chips
1/2 c coarsly chopped macadamia nuts
COCONUT WHIPPED CREAM
1 c heavy whipping cream
2 Tbsp sugar
1 tsp coconut extract

Steps:

  • 1. Preheat waffle maker.
  • 2. Place the first 8 ingredients in to a bowl and mix well.
  • 3. Fold in the stiffly beaten eggs whites.
  • 4. Next fold in the coconut flakes, white chocolate chips, and Macadamia nuts.
  • 5. Spray the waffle maker with cooking spray.Pour 3/4 cup batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes or until your light goes off on your iron. Repeat.
  • 6. While waffles are cooking place the whipping cream, sugar and coconut extract in a bowl and with your mixer on med high speed whip the cream until stiff peaks form. Serve on top of waffles! Enjoy!

1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate
2 Tbsp. butter
1 cup flour
1/4 cup granulated sugar
2 tsp. baking powder
1/4 tsp. salt
3/4 cup milk
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 eggs, beaten
1 tsp. vanilla
4 cups sliced fresh strawberries
1 Tbsp. powdered sugar

Steps:

  • Heat lightly greased Belgian waffle maker.
  • Microwave chocolate and butter in small microwaveable bowl on HIGH 1 to 1-1/2 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended.
  • Combine flour, granulated sugar, baking powder and salt in large bowl. Add milk, sour cream, eggs and vanilla; mix well. Stir in chocolate mixture.
  • Use batter to make 8 waffles as directed in manufacturer's directions.
  • Serve warm topped with strawberries and powdered sugar.
