4 eggs
2 cups milk
1 cup white sugar
1 tablespoon vanilla extract
4 cups cubed French bread
2 bananas, sliced
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • In a large mixing bowl, mix eggs, milk, sugar, and vanilla until smooth. Stir in bread, bananas, and chocolate chips, and let rest 5 minutes for bread to soak. Pour into prepared pan.
  • Line a roasting pan with a damp kitchen towel. Place loaf pan on towel inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with water to reach halfway up the sides of the loaf pan. Bake in preheated oven for 1 hour, or until a knife inserted in the center comes out clean.

6 breads, whatever is about to go stale, cut into small cubes
4 ripe bananas
3 eggs
1 cup milk
1 teaspoon cinnamon
2 teaspoons vanilla extract
1 cup chocolate chips
ice cream, to taste
chocolate syrup, to taste
whipped cream, to taste

Steps:

  • On a cutting board, cut bread into small cubes. Place onto a baking sheet and bake at 350°F (175°C) for 5 minutes to help dry the bread out.
  • In a large mixing bowl, add ripe bananas and mush.
  • Add in beaten eggs, milk, cinnamon, and vanilla extract, and stir.
  • Once fully mixed, add bread and let it soak for 5 to 10 minutes.
  • Add in chocolate chips. Stir together, and spoon mix into a large muffin tin. Bake at 350°F (175°C) for 20 minutes.
  • Scoop your favorite ice cream or whipped cream and top with chocolate syrup.

2 pounds brioche loaf bread, crust removed and cubed
1/4 cup unsalted butter, melted
3 eggs
1/2 cup sugar
1/4 teaspoon fresh nutmeg, grated
3 cups milk
1/2 teaspoon vanilla extract
2 ripe bananas
6 to 8 (1-inch chunks) semisweet chocolate
Dark Rum Creme Anglaise, recipe follows
2 cups milk
1 vanilla bean, split
5 egg yolks
1/3 cup sugar
1/4 cup dark rum

Steps:

  • Place bread into a bowl and drizzle with melted butter, mix well to coat.
  • In another bowl, whisk eggs, sugar, milk, nutmeg and vanilla together. In another bowl mash up 1 banana and add to custard, pour over the bread and allow to soak for 15 minutes. Dice up the other banana and fold into bread pudding mixture. Grease 6 (2 1/2-inch by 2?inch) tall ring mold and wrap the bottom with foil. Spoon bread pudding mixture into mold 1/2 way then press 1 chunk of chocolate into the center then continue to fill to the top. Bake in a 325 degree oven until it is set and brown, about 35 to 40 minutes. Serve with Dark Rum Creme Anglaise.
  • To a saucepan add milk, scrape vanilla bean seeds into milk and add the pod. Bring almost to a boil. Remove from heat and allow bean to infuse for 10 minutes, then remove the bean. In a bowl whisk egg yolks and sugar until thick and light in color, then temper with hot milk. Pour mixture back into the pot and gently stirring constantly with a wooden spoon until custard thickens slightly. Remove from heat and strain through a fine sieve into a bowl over ice. Stir in rum and cover tightly so skin does not form while it is cooling.

1 teaspoon cornstarch
1/4 cup water
1 1/2 cups fresh or frozen (partially thawed) unsweetened whole strawberries, sliced
1 cup mashed very ripe bananas (2 medium)
1/4 cup packed brown sugar
1 1/3 cups soymilk
2/3 cup fat-free egg product
1 teaspoon vanilla
4 cups 1-inch-cubes white whole-grain bread or French bread
1/4 cup miniature semisweet chocolate chips
Frozen (thawed) fat-free whipped topping

Steps:

  • In 1-quart saucepan, stir together granulated sugar, cornstarch and water. Stir in 1/2 cup of the strawberries. Heat to boiling, stirring frequently. Reduce heat to low. Cook 3 to 5 minutes, stirring frequently, until slightly thickened. Cool 10 minutes. Stir in remaining 1 cup strawberries. Cover and refrigerate until ready to serve.
  • Heat oven to 350°F. Spray 9-inch quiche dish or 9-inch glass pie plate with cooking spray.
  • In large bowl, beat bananas, brown sugar, soymilk, egg product and vanilla with wire whisk until smooth. Fold in bread and 2 tablespoons of the chocolate chips. Spread in quiche dish. Sprinkle with remaining chocolate chips. Bake 30 to 35 minutes or until golden brown and set.
  • Cut warm bread pudding into wedges. Serve warm pudding with strawberry sauce. Garnish with whipped topping. Cover and refrigerate any remaining bread pudding.

1 challah or 1 egg bread, sliced into 1/2-inch slices and toasted
2 tablespoons melted butter
6 eggs
2 cups whole milk
2 cups 18% cream
1/2 cup granulated sugar
1/2 teaspoon cinnamon
grated nutmeg
1 teaspoon vanilla or 1 vanilla bean, scraped
1 pinch salt
1/4 cup butter or 1/4 cup margarine

4 medium ripe bananas, sliced
2 tablespoons rum
4 ounces bittersweet chocolate, finely chopped
3/4 cup milk
3 tablespoons dark rum

Steps:

  • BREAD PUDDING:.
  • Preheat oven to 325°F.
  • Brush 5 slices with butter and set aside.
  • Break remaining bread up into bite size pieces.
  • Brush a 10"x12-1/2" baking dish with butter.
  • Combine eggs, milk, cream, sugar and spices in medium bowl.
  • Whisk to combine and set aside.
  • In a large skillet, heat butter or margarine and add sugar.
  • Cook for 2-3 minutes, until golden caramel forms.
  • Add the banana slices and toss over high heat for 2 minutes or until just soft and golden.
  • Add rum remove from heat and cool.
  • Arrange broken bread in baking dish and spoon bananas on top.
  • Cover with buttered bread slices, in a single layer, and pour egg mixture over top.
  • Press bread down evenly and let stand for 30 minutes.
  • Bake for 35-45 minutes or until puffed and golden, but custard is still moist in center.

  • Combine all ingredients in a medium stainless bowl and place over simmering water until chocolate melts.
  • Bottom of bowl should not be touching the water.
  • Stir until smooth and serve warm with pudding.

1 cup heavy cream
3 large eggs
2 large egg yolks
1/2 cup plus 2 tablespoons sugar
1/2 teaspoon salt

1 loaf banana bread, cubed in about 1-inch cubes

Steps:

  • Preheat the oven to 325 degrees. Lightly grease and 8-inch square cake pan.
  • Place the milk and 1/2 cup of the cream in a saucepan and bring to a boil over medium-high heat. Be careful not to let it boil over. Place the eggs, egg yolks, 1/2 cup of the sugar, salt, and vanilla in a bowl and gradually add the milk mixture, whisking all the while. Add the melted chocolate and mix until it is fully incorporated.
  • Place the bread cubes in the prepared pan and pour the custard over it, pressing down to dunk them. Let rest at least 15 minutes and up to an hour for the bread to absorb the custard.

  • Butter a 10 x 14-inch baking dish with 1 tablespoon of the butter and set aside.

  • Cook over a gentle heat, whisking continuously to avoid scorching. Cook until the sauce begins to thicken. Remove from heat and pour the sauce back into the mixing bowl through a fine mesh strainer over white chocolate. Mix until chocolate is melted and sauce is smooth. Cool over an ice bath, stirring occasionally (makes 5 cups).
  • To serve, scoop the pudding onto dessert plates. Top each serving with a small scoop of ice cream, drizzle with sauce, and serve immediately.

1 (1 1/4 lb) challah
3 large eggs
1 1/2 cups milk
3/4 cup half-and-half
3/4 cup banana, mashed
1 cup chocolate chips
1 1/2 cups maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon fresh nutmeg
2 cups caramel sauce (or see my other recipes for this)

Steps:

  • Cut the loaf onto 3/4" slices,trim off crust.
  • Cut bread to 3/4" cubes, making 8 cups (save additional for another use).
  • Place the brad cubed into large bowl.
  • In a medium bowl, whisk eggs well.
  • Whisk in milk, half-and-half, maple syrup, banana, cinnamon, nutmeg and vanilla extract. Pour mix over bread.
  • Add chocolate chips.
  • With rubber spatula, mix until bread in moistened well.
  • Let set for half hour.
  • Set rack in center of the oven, heating it to 350°F.
  • Lightly coat 8-inch round, nonstick cake pan (deep dish glass pie is ok) with Pam.
  • Scoop the soaked bread mixture into the pan, filling to the top.
  • Let bake until top has browned and puffed and knife in center comes out clean (around 50 minutes).
  • Let cool on rack.
  • When cooled, run knife around edge between pudding and pan.
  • Gently unmold pudding onto plate and then invert it back so brown side faces up.
  • When serving, cut lukewarm or room temperature pudding into 8 wedges.
  • Pour caramel sauce over.

Toronto pastry chef Anna Olsen includes this in her own Christmas Eve traditions! I like it because its actually a "double duty" recipe ........ I used half the banana bread on its own, then used the other half to make half the bread pudding. You could use your own favourite banana bread recipe - or even a store bought banana bread if you're really pushed for time. I served it warm with frozen vanilla yogurt but I actually preferred it the next day at room temperature.

1/3 cup unsalted butter, at room temperature
1/2 cup sugar
2 large eggs

  • BANANA BREAD: Beat butter & sugar until light & fluffy; add eggs, 1 at a time, beating well after each addition.

  • In a separate bowl, whisk eggs, sugar, banana & salt; slowly add the hot cream mixture, whisking constantly until blended.
  • Strain the chocolate custard mixture over the cubed banana bread, press down to soak & let sit for 15 minutes.
  • Place the bread pudding dish into a large baking pan with a 2 inch lip; pour an inch of boiling water into the baking pan.
  • Bake in a 300F preheated oven for 55 to 65 minutes or until a cake tester inserted into the centre of the cake comes out clean.
  • Remove the pan from the water bath & let cool; to serve, use edges of parchment to lift out, cut into squares & serve warm or room temperature.

2-1/4 cups flour
1 pkg. (3.4 oz.) JELL-O Banana Cream Flavor Instant Pudding
1 tsp. baking soda
1 cup butter or margarine, softened
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 tsp. vanilla
2 eggs
1 pkg. (12 oz.) semi-sweet chocolate chips
1/2 cup chopped walnuts

Steps:

  • Heat oven to 375°F.
  • Mix flour, dry pudding mix and baking soda until blended. Beat butter, sugars and vanilla in large bowl with mixer until light and fluffy. Blend in eggs. Gradually add flour mixture, beating well after each addition. Stir in remaining ingredients.
  • Drop teaspoonfuls of dough, 2 inches apart, onto baking sheets.
  • Bake 8 to 10 min. or until edges are lightly browned. Cool on baking sheet 3 min. Remove to wire racks; cool completely.

This sweet, chocolate-studded bread pudding is a unique and delicious way to use up past-ripe bananas!

1 loaf day-old challah or Italian bread, 16-18 oz. per loaf
2 bananas large
3 large eggs
2 1/2 cups half and half
1/4 cup brown sugar firmly packed
1/4 cup granulated sugar
3 tablespoons butter melted
1 1/2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup chocolate chips
powdered sugar optional

Steps:

  • Preheat the oven to 350°F.
  • Spray a 9-inch square baking dish liberally with nonstick cooking spray. Set aside.
  • Cut the bread into 1-inch cubes. Slice one of the bananas into 1/4-inch thick coins and set aside.
  • In a large mixing bowl, thoroughly mash the remaining unsliced banana. Add the eggs, half-and-half, brown sugar, granulated sugar, butter, vanilla extract, cinnamon, and salt, and whisk until combined. Add the bread cubes, sliced banana, and chocolate chips to the bowl. Fold together with a rubber spatula until the bread is thoroughly coated.
  • Transfer the mixture to the prepared baking dish and use a spatula to smooth it into an even layer. Cover the dish with aluminum foil.
  • Bake the bread pudding on middle rack of oven for 30 minutes.
  • Remove the foil and continue baking until bread pudding is golden brown on top and a toothpick inserted in the center comes out clean, 15-20 minutes.
  • Check to see that bread pudding is done. Remove from oven or add time as needed.
  • If serving warm, allow the bread pudding to cool for at least 15 minutes before plating. To serve cold, chill the bread pudding in the refrigerator for at least 2 hours. Dust with powdered sugar immediately before serving, if desired.

2 tablespoons granulated sugar
1 teaspoon cornstarch
1/4 cup water
1 1/2 cups fresh or frozen (partially thawed) unsweetened whole strawberries, sliced
1 cup mashed very ripe bananas (2 medium)
1/4 cup packed brown sugar
1 1/3 cups soymilk
2/3 cup fat-free egg product
1 teaspoon vanilla
4 cups 1-inch-cubes white whole-grain bread or French bread
1/4 cup miniature semisweet chocolate chips
Frozen (thawed) fat-free whipped topping

Steps:

  • In 1-quart saucepan, stir together granulated sugar, cornstarch and water. Stir in 1/2 cup of the strawberries. Heat to boiling, stirring frequently. Reduce heat to low. Cook 3 to 5 minutes, stirring frequently, until slightly thickened. Cool 10 minutes. Stir in remaining 1 cup strawberries. Cover and refrigerate until ready to serve.
  • Heat oven to 350°F. Spray 9-inch quiche dish or 9-inch glass pie plate with cooking spray.
  • In large bowl, beat bananas, brown sugar, soymilk, egg product and vanilla with wire whisk until smooth. Fold in bread and 2 tablespoons of the chocolate chips. Spread in quiche dish. Sprinkle with remaining chocolate chips. Bake 30 to 35 minutes or until golden brown and set.
  • Cut warm bread pudding into wedges. Serve warm pudding with strawberry sauce. Garnish with whipped topping. Cover and refrigerate any remaining bread pudding.

Not your traditional bread pudding, this one uses chocolate milk and bananas instead of regular milk and raisins with a few large marshmallows tossed in for added sweetness for all us sweet-tooths.

3/4 loaf Texas toast thick bread
9 large marshmallows
3 large eggs
2 teaspoons vanilla extract
2 tablespoons cinnamon
1 cup white sugar
1 cup brown sugar
2 cups chocolate milk

Steps:

  • 1. 1) cut the Texas toast thick bread into chunks 1/2 inch big and set aside in large bowl.
  • 2. 2) next in a medium sized bowl mix together all the remaining ingredients except for the marshmallows, until it is well blended then pour over the bread in the larger bowl and let sit until most of the liquid is absorbed into the bread -- you may also use a spoon to push in stubborn bits down into the liquid until all of it is completely soaked -- once it is completely soaked -- spray a 9 x 10 glass baking dish with spray oil and then pour in the bread mixture -- once this is done then push the marshmallows into the mix distributing them as evenly as possible -- put into a 360 degree fahrenheit oven (preheated of course) and let bake until
  • golden brown and a toothpick comes out clean, if it does not come out and the top is browned then turn down oven to 320 degrees fahrenheit until an inserted toothpick comes out clean -- take out of oven and let cool or serve immediately with cream, milk or ice cream over it -- makes a great and easy desert.
  • Note::the marshmallows will melt completely and it will be extra moist in those areas where they were -- or you may take the marshmallows and melt them after everything has baked and pour them over the top of the bread pudding and then put under the broiler on low for several minutes until they turn a golden color -- great alternative if you want to really see and taste the marshmallow more -- feel free to also add nuts or other fruit to the mix before baking to your taste. I plan to try it with black walnuts next, yum!

1 frozen chocolate cake, such as Pepperidge Farm 3-Layer Cake
One 14-ounce package frozen mini chocolate eclairs
One 12-ounce package frozen waffles (10 waffles)
8 brownies
2 tablespoons heavy cream
1 tablespoon whole milk
7 large eggs
One frozen chocolate-covered banana with peanuts, such as Totally Bananas
One 17-ounce frozen cheesecake, thawed, crusts removed
1 cup confectioners' sugar
1/3 cup chopped roasted peanuts
1 pint chocolate ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Trim off and discard all of the icing from the cake and eclairs, then chop into 1-inch pieces. Chop the waffles and brownies into 1-inch squares. Transfer of all the chopped baked goods to a 9-by-13-inch baking dish.
  • Combine the cream, milk and eggs in a bowl and whisk until smooth; pour the custard over the chopped baked goods. Bake until light golden brown and set, about 30 minutes. Transfer the bread pudding to a cooling rack and let cool for 30 minutes.
  • For the icing, place the frozen banana in a food processor and blend until smooth. Add the cheesecake filling and confectioners' sugar; blend until smooth. Spread the icing over the top of the bread pudding and then top with the peanuts.
  • Serve the bread pudding topped with a scoop of chocolate ice cream.

  • Cut bread into 1/2-inch pieces.

  • In large bowl, with wire wisk, beat eggs, half-and-half, and sugar until blended.

  • Cover and refrigerate bread mixture at least 1 hour, occasionally pressing down bread to absorb cream mixture.
  • Preheat oven to 350 degrees.
  • Grease 9-inch round springform or cake pan (at lease 2-inches deep).

  • Bake bread pudding, covered, 35 minutes.
  • Uncover and bake 45 to 50 minutes longer or until knife inserted in center of pudding comes out clean.
