BACON, CHEDDAR AND CHIVE BISCUITS

Steps:
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- In a heavy-bottomed skillet over medium-high heat, cook the bacon until crisp and brown. Transfer to paper towels and drain. Chop and set aside.
- Whisk the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl.
- Using a food processor, pastry cutter, or fingertips incorporate the chilled butter into the dry ingredients until the mixture resembles coarse meal. Add the Cheddar cheese, fresh chives, and cooked bacon. Mix to distribute the ingredients evenly.
- Add the buttermilk and stir just until moistened. Using 1/2 cup dough for each biscuit and using a cup measure or an ice cream scoop, drop the biscuits onto the prepared baking sheet, spacing the mounds about 2-inches apart.
- Bake until the biscuits are golden brown on top, about 15 to 20 minutes or until a tester comes out clean. Serve the biscuits warm with melted butter.

- Position rack just above center of oven and preheat to 425°F. Line heavy large baking sheet with parchment paper. Cook bacon in heavy large skillet over medium heat until crisp and brown. Transfer bacon to paper towels to drain, then chop coarsely.
- Combine flour, baking powder, baking soda, and salt in processor; blend 5 seconds. Add butter cubes. Blend until coarse meal forms, about 30 seconds. Transfer flour mixture to large bowl. Add cheddar cheese, fresh chives, and chopped bacon; toss to blend. Gradually add buttermilk, stirring to moisten evenly (batter will feel sticky).
- Using lightly floured hands, drop generous 1/2 cup batter for each biscuit onto prepared baking sheet, spacing batter mounds about 2 inches apart.
- Bake biscuits until golden and tester inserted into center comes out clean, 18 to 20 minutes. Brush biscuits lightly with melted butter. Let cool 10 minutes. Serve biscuits warm or at room temperature with honey, if desired.

- Preheat oven to 450-degrees F.
- In a large bowl combine dry ingredients together (flour - baking soda).
- Cut in butter using two knives or a pastry cutter until mixture is about the size of peas.
- Stir in buttermilk, cheese and chives, stirring with a fork to form a loose dough.
- Turn dough out onto a floured board, kneading dough a few times (about 10) and then pat into a 6-inch x 9-inch rectangle; fold into thirds like a letter and then pat into a 6 x 9 inch rectangle again.
- Dip edges of 3-inch biscuit cutter into flour (I used a coffee mug) and cut out 6 biscuits; transferring biscuits to a cookie sheet that has been sprayed with Pam or lined with parchment paper. Form and cut dough for another biscuit or two (I ended up whit 7 biscuits).
- Brush tops of biscuits with cream.
- Bake for 14-16 minutes or until biscuits are browned.

- Ingredients 2 cups all-purpose flour 1 tablespoon sugar 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 6 tablespoons cold butter, cut into small bits 1 1/4 cups shredded sharp Cheddar cheese, 5 ounces 1 cup buttermilk 1/4 cup fresh chives, chopped Preparation Place a rack in the center of the oven and preheat to 425°F. Grease a baking sheet with butter, oil, or cooking spray. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Cut in the butter with a pastry blender, your hands, or two knives until the mixture resembles a coarse meal. Add 1 cup of the Cheddar and the chives to the flour mixture and toss to combine. Using a rubber spatula, fold the buttermilk into the flour mixture until all of the flour is moistened. - Got 9 big biscuits with #12 scoop. Baked 16 min. Didn't use all of 1/4 cup cheese, though could have.

Steps:
- Mix flour, baking powder, salt and cayenne together.
- Cut shortening and butter into the flour but don't overwork - small butter pieces are fine.
- Toss in chives and cheddar.
- Toss in cream until it starts to come together but don't mix too much.
- Bake at 375°F for 15 - 17 minutes and serve with sea salted butter and maple syrup.
