2 tablespoons olive oil
1 medium white onion, chopped
Coarse salt and ground pepper
2 teaspoons ground cumin
2 garlic cloves, minced
4 medium sweet potatoes (2 pounds total), peeled and cut
1/2 to 1 chipotle chile in adobo, chopped
7 cups low-sodium chicken broth
Sour cream, for serving
Toasted flour tortilla wedges, for serving (optional)

Steps:

  • In a large Dutch oven or heavy pot,heat 1 tablespoon oil over medium-high.Add onion, season with salt andpepper, and cook until beginning tobrown around edges, about 7 minutes.Add cumin and garlic and cook, stirring,until fragrant, about 1 minute. Stirin sweet potatoes, chile, and broth.Bring to a boil; reduce to a rapid simmer,partially cover, and cook until sweetpotatoes can be mashed easily with aspoon, 20 to 25 minutes.
  • Let soup cool slightly. Working inbatches, transfer soup to a blenderand puree until smooth (use cautionwhen blending hot liquids). Returnpureed soup to pot over low heat andseason with salt and pepper. Topsoup with sour cream and serve withtortilla wedges, if desired.

1 large yellow onion, chopped
3 ½ pounds sweet potatoes, peeled and cut into 2-inch chunks
4 ½ cups vegetable broth, or as needed
1 (7 ounce) can chipotle peppers in adobo sauce, drained
½ cup heavy cream
2 limes, juiced
salt to taste
1 cup sour cream
½ cup chopped fresh cilantro, or to taste

Steps:

  • Heat olive oil in a large saucepan or Dutch oven over medium heat; cook and stir onion in the hot oil until softened, 3 to 5 minutes. Add sweet potatoes and enough vegetable broth to cover sweet potatoes; bring to a boil. Reduce heat, partially cover saucepan, and simmer until sweet potatoes are tender enough to easily pierce with a fork, about 30 minutes.
  • Stir chipotle peppers into the sweet potato mixture.
  • Blend sweet potato mixture with an immersion blender until soup is smooth. Whisk heavy cream and lime juice into soup until smooth and heated through; season with salt.
  • Serve each portion of soup topped with 2 tablespoons sour cream and a sprinkle of cilantro.

2 large leeks, white and light green parts, chopped, or more to taste

Roasted Sweet Potato, Lime and Chipotle Soup with Sweet Potato Chips image

3 pounds yams or sweet potatoes, peeled and cut into 1inch pieces
1 yellow onion, peeled and quartered
1/2 bunch chopped fresh thyme
1/4 bunch chopped fresh sage
2 tablespoons olive oil
1 teaspoon coarse salt
4 to 5 cups chicken stock
4 dried chipotle chiles, stemmed and seeded
Juice of 2 limes
1 tablespoon brown sugar
Pinch nutmeg
Cracked black pepper to taste
1/2 cup cream
1 bunch green onions, sliced thin (optional garnish)
12 sweet potatoes
1 pint peanut oil
Salt to taste
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • Preheat an oven to 425 degrees F. Mix sweet potatoes, onions, thyme and sage in large bowl. Drizzle with olive oil and salt, and toss to coat. Spoon mixture onto a baking sheet, spreading vegetables out in a single layer. Place baking sheet in oven and roast until vegetables are caramelized, stirring occasionally, about 25 minutes.
  • Remove vegetables from oven and process in a blender until pureed. Slowly add chicken broth and process until smooth. Pour soup into a large saucepan and add chiles, lime juice, sugar, nutmeg and pepper. Bring soup to a boil, reduce to a simmer and cook for 15 minutes. Remove and discard the whole chipotle chiles, stir in cream and adjust seasonings. Ladle into soup bowls and garnish with green onion, fried sweet potato chips and crema.
  • Make the sweet potato chips: Peel sweet potato. Using a mandoline or food processor fitted with the 2 millimeter slicing blade, cut into 1/1-6 inch slices, lengthwise.
  • Heat oil in a large stock pot or saucepan to deep-fry temperature (350 degrees F). Fry sweet potatoes, a handful at a time, until pale golden and crisp. Remove with a slotted spoon, drain on paper towels, and sprinkle with salt. Reserve a day or two in plastic bags.
  • For the crema: Whisk the cream and buttermilk together. Cover and set in a warm place (a gas oven with just the heat from the pilot is fine) for 8 hours. Crema may be kept in the refrigerator as long as a week.

½ cup fresh orange juice
⅓ cup heavy cream

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function; heat olive oil. Saute onion and garlic for 1 to 2 minutes. Add sweet potatoes, smoked paprika, chipotle pepper, and salt. Stir for 1 minute then turn cooker off.
  • Dissolve vegetable bouillon in hot water. Pour into the pot with orange juice and scrape up any browned bits from the bottom of the pot. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.

3 lb butternut squash (1 large), halved lengthwise and seeds discarded
1 tablespoon olive oil
2 lb sweet potatoes (2 large)
1 large onion, chopped
White part of 1 leek, chopped
2 teaspoons chopped peeled fresh ginger
8 to 10 cups light vegetable stock or broth
White pepper to taste
2 to 3 tablespoons fresh lemon juice, or to taste
1 tablespoon honey (optional)
Chipotle sauce

Steps:

  • Preheat oven to 400°F.
  • Brush cut sides of squash with 1/2 teaspoon oil and arrange, cut sides down, in a shallow baking pan. Prick sweet potatoes all over with a fork and roast with squash until very tender, about 50 minutes for squash and about 1 1/4 hours for sweet potatoes.
  • Cool vegetables and scoop flesh from squash into a bowl. Peel sweet potatoes and add to squash.
  • Cook onion in remaining 2 1/2 teaspoons oil with salt to taste in a 6-quart heavy pot over moderately high heat, stirring occasionally, until golden brown, about 10 minutes. Stir in squash and sweet potato, leek, ginger, and 8 cups stock and simmer, uncovered, stirring occasionally, 30 minutes.

2 cubes of chicken bouillon
1 tsp. of ground black pepper

Steps:

  • Start by placing the sweet potatoes in a pot and add the eight cups of water; cover with a lid. Let the sweet potatoes simmer for 30 min. on medium heat. When tender strain and reserve the cooking water. Using a masher, mash the sweet potatoes and add 6 cups of the cooking water. Place the pot on the stove and add the chicken bouillons and the black pepper. Stir and simmer 5 min. or until velvety consistency. Make sure you don't leave out the squash though, that's what gives it such a creamy texture without all the calories. It's a really versatile, vegetarian soup that's guaranteed to warm you up on a cool day. :0)

1 medium onion, diced
3 carrots, peeled and diced
2 yellow squash, diced

10 cups water
8 ounces 2% cheddar cheese
4 cups 2% low-fat milk
1/3 cup chipotle chile in adobo, crushed
6 tablespoons cornstarch
3/4 cup cold water
salt and pepper
1 bunch green onion, diced

Steps:

  • Put all the vegetables in a large pot. Cover with water (about 10 cups) and cook on high til the vegetables are soft.
  • Shred the cheese and add to the pot. Stir until the cheese is melted.
  • Reduce heat to low and add the milk and chipotle.
  • In a seperate bowl mix the cornstarch and cold water with a whisk until smooth. Pour mixture into the pot and stir. Simmer for about 20 minutes. Salt and pepper to taste.
  • Ladle into bowls. Garnish with sour cream, croutons (I like to make my own cornbread croutons) , and green onions.

1 meaty smoked ham bone
2 cups diced onions
1/2 cup diced celery
1/2 cup diced bell pepper
2 teaspoons roasted garlic or 3 minced fresh garlic cloves
4 cups diced potatoes
1/2 tablespoon adobo sauce
1 chipotle chile in adobo, seeded and diced
2 cups water
2 cups low-fat milk
2 tablespoons flour
2 cups shredded cheddar cheese

fresh parsley

Steps:

  • In a large heavy bottom pot, heat oil add bone,onions,celery, and pepper sautee 5 minutes.
  • Add garlic,potatoes, sauce,chipotle,water and milk bring to boil then lower heat to simmer, cover and cook for 20 minutes till potatoes are tender.
  • Remove ham and cool when cool enough to handle dice meat set aside.
  • Remove 1-2 cups soup and place in blender with flour and blend till smooth. Return to pot with the cheese. Cook 5 minute and stir till melted.

1 c chopped celery
3/4 tsp salt
ground black pepper, to taste

1 chipotle pepper, in adobo (canned) minced
1 1/2 c shredded extra sharp cheddar cheese
2 sliced green onions, for garnish (or use chopped chives)
4 slice thick bacon, cooked and crumbled (for garnish)

Steps:

  • 1. Heat oil in large heavy-bottomed pot over medium-high heat. Add onions, celery and salt and cook, stirring occasionally, until onion is softened and starting to brown, about 7 minutes.
  • 2. Stir in pepper and cumin and cook about 30 seconds.

Steps:

  • Sauté onions, bell pepper and chipotle pepper with butter in a large stock pot until onions turn clear. Add next 10 ingredients, bring to a boil. Cover, reduce heat, and simmer 20 minutes. Take potato masher and mash potato mixture (being careful not to burn yourself) for a smoother consistency. Be sure to leave plenty of chunks. In a large skillet, heat the olive oil. Potato, Garlic, and Chipotle Soup image

1 head garlic
1 tablespoon olive oil
1 tablespoon unsalted butter
1 onion, chopped
3 medium potatoes (1 pound), peeled and thinly sliced
3 cups canned fat-free reduced-sodium chicken broth
1 , canned chipotle chile kimmy, , en adobo, seeded and chopped
1/2 teaspoon Maggi seasoning extract or Worcestershire sauce
1/2 teaspoon salt, or to taste
Chopped fresh cilantro

Steps:

  • 1. Preheat the oven to 350°. Slice the top off the garlic head, and put the garlic, cut side up, in a small ovenproof bowl. Drizzle with the olive oil, cover with foil and bake 40 minutes, or until soft. When cool enough to handle squeeze the garlic out of the skins and reserve. 2. Melt the butter in a large saucepan over medium heat and cook the onion, covered, stirring frequently, until limp, about 4 minutes. Add the potatoes, broth, chipotle chile, and the reserved roasted garlic. Cook until the potatoes are soft, about 20 minutes.
