These roasted Chipotle Candied Pecans have a crispy maple brown sugar coating with a kick of spice from the addition of chipotle pepper. An amazing topping for salads or just as a tasty snack!

1 cup unsalted pecan halves
1 tablespoon brown sugar
1 tablespoon maple syrup
1/2 teaspoon ground chipotle pepper or smoked paprika*
pinch salt

Steps:

  • Preheat the oven to 375℉. Line a baking sheet with parchment paper.
  • Stir together the brown sugar, maple syrup, chipotle, and salt in a mixing bowl. Add the pecans and fold until the pecans are evenly coated. Pour onto the prepared baking sheet and spread out.
  • Bake in the preheated oven for 8-12 minutes or until roasted and nutty in aroma. Be very careful not to burn the pecans. Let cool on the baking sheet.
  • These candied pecans can be served as is or I also love them served on top of a salad. Enjoy!

2 tablespoons dark molasses
2 teaspoons vanilla
1/2 teaspoon salt
3/4 cup Splenda granular
1/2 cup dry roasted peanuts

Steps:

  • Preheat oven 325°F; spray an 11x13 inch pan with nonstick cooking spray or line with release foil and set aside.
  • Place popcorn in a large bowl.
  • In a small bowl, add egg white, molasses, vanilla, salt and splenda; whisk well.

12 cups plain popped popcorn
1 cup pecans, roughly chopped
1 cup packed dark brown sugar
4 tablespoons unsalted butter
1/4 cup honey
1 teaspoon chipotle chile powder
1/4 teaspoon baking soda Salt

Steps:

  • Preheat the oven to 250 degrees F. Generously coat a baking sheet with cooking spray. Toss the popcorn and pecans on the prepared baking sheet. Transfer to the oven while preparing the syrup.
  • Combine the brown sugar, butter and honey in a medium saucepan over medium-low heat; cook, stirring occasionally, until the sugar is dissolved and the butter is completely melted. Increase the heat to high and boil, stirring constantly, until thickened, about 4 minutes. Remove from the heat and stir in the chile powder, baking soda and 1 teaspoon salt. Remove the popcorn mixture from the oven; slowly pour the syrup over the top and gently stir to coat.
  • Return the popcorn to the oven and bake until the caramel is dry and hardened, stirring halfway through, about 1 hour. Let cool on the baking sheet.

10 cups warm freshly popped popcorn
2 cups pecan pieces, roasted
1 1/4 cups packed brown sugar
1/2 cup unsalted butter
1/4 cup light corn syrup
2 teaspoons vanilla
1/2 teaspoon salt
1/4 teaspoon baking soda

Steps:

  • Grease large rimmed baking sheet; mix warm popcorn with pecans on sheet. Set aside.
  • In saucepan, whisk together sugar, butter and corn syrup over medium-low heat until sugar dissolves. Increase heat to high; boil, without stirring, until candy thermometer registers hard-ball stage of 255°F (124°C), or 1/2 tsp (2 mL) syrup dropped into very cold water forms rigid ball that is still a little pliable, about 4 minutes. 1/2 teaspoon salt
1/2 cup popcorn kernels
2 tablespoons chile lime powder, such as Tajin
1/3 cup Chile Lime Pumpkin Seeds, recipe follows
1 cup raw pumpkin seeds
1 tablespoon chile lime powder, such as Tajin
1 tablespoon olive oil

Steps:

  • Heat the oil and salt in a 4-quart pan (with lid) on medium-high heat. Add the popcorn, cover and reduce the heat when it starts to pop. Shake occasionally during popping, and remove from the heat when almost all of the kernels are popped.
  • Season with the chile lime powder, stir in the Chile Lime Pumpkin Seeds and serve.
  • Toss the pumpkin seeds with the chile lime powder and olive oil, making sure every single seed is coated.
  • Heat a small saute pan on medium-high heat. Toast the pumpkin seeds until crispy, making sure not to burn them, about 3 minutes. Cool and serve. Yield: 1 cup
