Chipotle-Glazed Meatloaf with Sweet Potatoes image

Instead of the usual ground beef or red meat blend, this meatloaf recipe is made with ground turkey. It gets plenty of flavor from minced chipotle chiles, Worcestershire sauce, and adobo sauce. Serve alongside sweet potatoes for a complete and healthy meal.

2 1/4 pounds ground dark turkey meat
2 slices white bread, torn into small pieces (about 1 1/2 cups)
1 small red onion, minced (about 3/4 cup)
1/2 cup cilantro leaves, finely chopped
1 large egg, lightly beaten
2 teaspoons Worcestershire sauce
2 teaspoons minced chipotle chiles
2 teaspoons adobo sauce
Coarse salt and freshly ground pepper
1/2 cup ketchup
6 small sweet potatoes (about 7 ounces each)
2 tablespoons extra-virgin olive oil
Watercress and lime wedges, for serving

Steps:

  • Preheat oven to 375 degrees. Combine meat, bread, onion, cilantro, egg, Worcestershire, adobo sauce, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a bowl. Transfer mixture to a 5-by-9-inch nonstick loaf pan. Stir together chiles and ketchup; brush onto top of loaf.
  • Prick potatoes with a fork. Set loaf pan on a rimmed baking sheet; surround with potatoes. Bake until a thermometer inserted in center of loaf reads 160 degrees, 1 hour, 15 minutes. Peel potatoes; add oil, season with salt and pepper, and mash. Reserve half of loaf for next day; serve remainder with potatoes, watercress, and limes.

1 ounce dried chipotle chilies, stemmed
2 ripe Italian Roma tomatoes, cored
3 garlic cloves, peeled
2 cups water
2 tablespoons olive oil
1 onion, diced
3 celery stalks, diced
1 teaspoon ground cumin
1/8 teaspoon ground nutmeg
11/4 pounds ground beef
11/4 pounds ground pork
1/2 cup fresh white bread crumbs
11/2 teaspoons salt
3 large eggs, beaten to blend

Steps:

  • Combine chipotles, tomatoes, garlic and water in medium saucepan. Season with salt and pepper. Bring to boil. Reduce heat and simmer until reduced by 1/3, about 20 minutes. Cool. Transfer to processor. Puree until smooth. Strain.
  • Heat oil in heavy large skillet over medium high heat. Add onion and celery and saute until tender, about 10 minutes. Add cumin and nutmeg and stir 1 minute. Remove from heat. Transfer to large bowl. Cool.
  • Preheat oven to 375 degrees F. Add beef, pork, bread crumbs and salt to onion mixture. Add 1/2 cup chipotle sauce. Mix until well blended. Add eggs and mix well. Press mixture into 9x5-inch loaf pan. Brush top with some of remaining chipotle sauce. Bake meatloaf until thermometer inserted into thickest part registers 160 degrees F, about 1 hour. Transfer to rack. Cool slightly. Drain off any oil. Turn meatloaf out onto platter. Serve with remaining salsa.

  • Chop chile. Combine chile, adobo sauce, onion, and next 14 ingredients (through ground turkey breast) in a large bowl, stirring to combine.
  • Place turkey mixture in a 9 x 5-inch loaf pan coated with cooking spray.
  • Bake, uncovered, for 30 minutes.
  • While loaf bakes, combine sauce ingredients in a small bowl; brush over meat loaf.

1 large onion, chopped
2 tablespoons tomato paste
2 tablespoons olive oil
3/4 cup dark brown sugar
1/2 cup apple cider vinegar
1 chipotle pepper, chopped
2 tablespoons chipotle sauce
1 tablespoon Worcestershire
1/2 teaspoon freshly ground black pepper
1 tablespoon lime juice
24 slices wheat bread
12 slices pepper jack cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • For the meatloaf: In a large mixing bowl, combine the ground beef, eggs, marinara, parsley, salt, pepper and breadcrumbs. Mix thoroughly and put on a baking dish. Shape the meat into a loaf and cover the baking dish. Bake in the preheated oven for 60 to 90 minutes. Uncover the last 15 minutes of bake time. Remove the meat from the oven and let it sit for 15 minutes before slicing. Slice and keep warm.
  • For the chipotle ketchup: Puree the tomatoes until smooth in a blender. Cook the onions in a heavy pan, over medium heat until softened. Add the pureed tomatoes to the onions, then add all the remaining ingredients except the lime juice. Simmer uncovered, stirring frequently, until thick, about 1 hour.
  • Remove from heat and let the mixture cool down a little before adding it to a blender. Add the lime juice and puree again.
  • Put 1 piece of sliced meatloaf on half of the wheat bread slices, add a slice of pepper jack cheese and top with chipotle ketchup. Cover with remaining bread slices and serve.

1 TBS adobo sauce(from the above canned chilis)
2 large eggs
1 TBS worcestershire sauce
1/2 teas. salt
1/4 teas. cloves garlic minced
1 small onion finely chopped
1 1/2 lb lean ground beef or turkey
1 c quick-cooking oats
3 TBS ketchup

Steps:

  • 1. Heat oven to 350 degrees. spray a 9 x 5 loaf pan with cooking spray. combine bbq sauce, chipotles, adobo sauce, eggs, worcestshire sauce, salt and pepper in a food processor until smooth. Put in a large bowl and add oats, onion, garlic, meat,and oats and mix well, I use my hands. lightly pack into the loaf pan.
  • 2. Bake for 45 minutes, Spread Ketchup on top and then bake for another 10 minutes. (meat thermometer 160 degrees) let sit for 5-10 minutes then serve.
  • 3. Leftovers (if you have any) make great sandwiches!!!

CROCK POT CHIPOTLE MEATLOAF

This is a recipe I came up with the other evening to satisfy my craving for comfort food. I needed a one-dish meal, as my crock-pot is the only cooking apparatus I have left after kitchen fire. Great for getting your veggies without extra work or dishes (I love to use spinach and mushrooms whenever I can!). Makes fantastic sandwiches next day (also makes yummy meatballs!)

2 lbs ground meat (I use 1 lb beef, 1 lb turkey)
2 -3 tablespoons italian seasoning
1 onion, grated (with juice)
1/4 cup carrot, grated
2 fresh garlic cloves, pressed
1/3 cup portabella mushroom, minced
2/3 cup frozen spinach
2 eggs
1/4 cup ketchup
1/3 cup sour cream
1 tablespoon sriracha sauce (Asian hot chile sauce)
1 cup cracker, crushed (I use Cheez-its and Triscuits)
1/3 cup Italian breadcrumbs
1/4 cup cheese, shredded (I use Sargento's Shredded Chipotle, yum!)
1/4 cup tomato sauce
1 chipotle pepper, pulverized

Steps:

  • Mix first 7 ingredients in a bowl. Be careful not to overwork, otherwise your loaf will be tough (hint for any meatloaf!).
  • In another bowl, beat eggs with ketchup, sour cream and sriracha sauce. Add to meat mixture.
  • Stir in cracker/breadcrumbs and cheese until just mixed inches.
  • Shape into two loaves, place in crock pot.
  • Mix tomato sauce and chipotle pepper, spread on top of loaf.
  • Cook on med-low for 5 hours or until done.
  • If desired, sprinkle some shredded Chipotle cheese on top of loaf about 10 mins before serving. You can also make a gravy out of the "juice" that results in bottom of pan by adding some beef broth and thickening with cornstarch.

Meatloaf
3 tablespoons of avocado oil (or cooking fat of choice)
1 carrot, chopped about 1/4 inch thick
.5 red pepper, chopped
1 small onion, chopped
1 stalk celery
1 cup of oven roasted sweet potato
2 pounds ground beef
1 egg lightly beaten
.5 cup parmesan cheese, grated
.2 cup parsley, minced
.5 teaspoon garlic, minced
1 teaspoon dried thyme leaves
Salt and pepper
Glaze
.5 cup ketchup (TJs has an organic ketchup with no added sugar)
1.5 tablespoon chipotle puree
2 tablespoon Dijon mustard
3 tablespoons honey

Steps:

  • 1. Preheat the oven to 350. 2. Chop carrots add to large skillet with 3 tablespoons of oil and saute (they are going to take the longest to soften). 3. Chop red pepper and add to pan. 4. Chop celery and onion and add to pan. Season and saute for about 10 minutes until the vegetables are soft and have just hint of color. 5. Move the vegetables to a food processor until the vegetables are a fine mince, but not pureed. 6. In a large bowl, add Parmesan cheese, parsley, egg, garlic, sweet potato, thyme, pureed vegetables, ground beef, salt and pepper and 2/3 of the glaze. Mix well. 7. In batches, add to food processor and give it a couple of pulses to loose up the ground beef. 8. Press into a loaf pan and then turn the pan upside down on a baking sheet and remove the loaf pan. 9. Bake for 45 minutes. 10. After 45 minutes, coat with remaining glaze and increase the oven temperature to 425 and cook until internal temperature is 155 and glaze is golden brown and delicious (about 20 minutes). 11. Remove from oven and let it rest for 10 minutes.

From Cooking Light- can use all ground turkey instead of turkey and breast-even sub ground beef or pork for that matter. I always soften my onions before adding them to meatloaf or meatballs. When I make this, I omit the basil, and up the chipotle, cumin and pepper. I also add black pepper and dried chipotle pepper to the sauce.

1 teaspoon adobo sauce, from can of chipotles
1/2 cup onion, finely chopped
1/2 cup fresh cilantro, coarsely chopped

1/4 cup dry breadcrumbs
1/4 cup tomato sauce
2 teaspoons fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon dry oregano
1/4 teaspoon dried basil

2 garlic cloves, minced
2 egg whites
1 lb ground turkey
1 lb ground turkey breast
1/4 cup tomato sauce
1 tablespoon ketchup

Steps:

  • Preheat oven to 350°F.
  • To prepare meat loaf, chop chile. Combine chile, adobo, onion, and next 14 ingredients in large bowl, stirring to combine. Place turkey mixture in a 9x5 inch pan coated with cooking spray. Bake, uncovered, at 350°F for 30 minutes.
  • To prepare topping, combine 1/4 c tomato sauce, 1 T ketchup, and 1/2 t hot sauce in a small bowl; brush mixture evenly over meat loaf. Cover and bake an additional 30 minutes or until thermometer reaches 160°F
  • Let stand 10 minutes before slicing.

1 1/2 lbs ground chuck
1/2 pound ground pork (or pork sausage)
1 red pepper, diced
1 onion, diced
3 green onions, sliced
3 T chopped garlic
1 chipotle pepper, canned in adobo sauce, chopped fine
1 T adobo sauce
1 T worcestershire sauce
3 eggs
1/2 cup tequila
1/2 cup bread crumbs
salt and pepper to taste
1 tsp ground chipotle powder

Steps:

  • 1. preheat oven to 325F. Mix all the ingredients in a large bowl (whiske the egg and tequila together to incorporate them, then add to the mixture). 2. Place the meat mixture in a loaf pan and bake for about one hour 3. Remove the meatloaf from the oven and let it rest for 10 to 15 min before slicing.

1 pound each turkey, beef and pork ground.
2-3 toes minced garlic
1 medium minced onion
1/2 cup catsup
2 or 3 canned chipotle peppers in sauce
2 tsp steak seasoning
2 large eggs
1/2 sleeve of saltine crackers.
salt and pepper to taste. remember the crackers have salt on them
small can tomato paste
molasses or brown sugar to taste.

Steps:

  • 1. mix the pounds of turkey, beef and pork together. Add in the half cup of catsup, minced garlic, minced onion, two eggs, two to three mashed up chipotle peppers from a can of peppers in sauce, completely crushed crackers add about 2 table spoons of the sauce. Pick out stems if they have any. salt and pepper and steak seasoning. Mix thoroughly. I wear latex gloves while mixing so it's not so hard to wash your hands.
  • 2. put paper cups into a muffin tin and spray with vegetable spray. Form the mix into balls that fit into the muffin cups. Not too far over the top of the tin because the juices may cook over.
  • 3. Bake at 350 for twenty to thirty minutes. But check them regularly note: if you want to mix some brown sugar or molasses with tomato paste to top the muffins before you bake them that is delicious too. Depends on how sweet you like the topping as to how much sugar you want in it. I also make it into a loaf. cook until nearly done and top with the tomato paste and brown sugar or molasses mixture

  • •Preheat oven to 400°. Coat the bottom and sides of a 13x9x2" baking pan with nonstick spray. Pulse bacon in a food processor until coarsely ground. Transfer to a large bowl.
