3 cups water
7 dried chipotle chiles, stemmed and seeded
⅓ cup sliced onion
5 tablespoons cider vinegar
¼ cup ketchup
2 garlic cloves, crushed
¼ teaspoon salt
¼ cup heavy whipping cream
12 eggs
4 thick slices maple-cured bacon, cut into 1-inch pieces
½ cup mayonnaise
2 tablespoons shredded Cheddar cheese

Steps:

  • Place water, chiles, onion, vinegar, ketchup, garlic, and salt in a saucepan; bring to a simmer, and cook, stirring occasionally, until reduced and very thick, about 1 hour.
  • Pour chile mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend until smooth. Stir cream into chipotle sauce; refrigerate until ready to use.
  • Place eggs in a saucepan; cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
  • Place bacon in a large skillet; cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Crumble half the bacon; reserve remaining bacon for garnish.
  • Cut each egg in half lengthwise; place egg yolks into a bowl. Mash egg yolks with a fork; stir in mayonnaise, crumbled bacon, and Cheddar cheese. Stir 1 tablespoon chipotle sauce into yolk mixture, or more to taste.
  • Place egg whites cut-side up on a serving plate. Spoon yolk mixture into egg white halves. Sprinkle remaining bacon over filling; drizzle with chipotle sauce.

These are always the first thing to go at our family gatherings :) No matter how many times I've made these, I ALWAYS have to look up how to hard-boil an egg, LOL so I'm including that part in the directions for future reference.

4 slices bacon, crisped up and crumbled
6 eggs
1/4 cup olive oil mayonnaise
2 tablespoons sour cream (optional)
1 chipotle chile in adobo, minced
1 teaspoon adobo sauce
1/4 red onion, finely minced
1/2 teaspoon garlic salt
fresh ground pepper
1 pinch sea salt

Steps:

  • Put eggs in a saucepan and cover them with water until waterline is about 1" above eggs. Heavily salt the water (I don't know why, but my Dad says it makes the peeling process easier and it seems to work). Bring water to a boil, then reduce heat to a simmer. Set time for 15-mins.
  • When timer goes off, drain off hot water and run cold water over eggs in pan.
  • When eggs are completely cooled, crack and carefully peel eggs running them under cold water. Pat dry. Cut in eggs in half, carefully removing yolks, and set aside white halves. Put yolks in a bowl and mash with a fork.
  • Add mayonnaise, sour cream, chipotle and adobo sauce to yolk mixture and mix together with fork to form a smooth paste, then stir in onion until well combined.
  • Season to taste with garlic salt, pepper, and sea salt.
  • Scoop about 1 tbsp of the yolk filling into each white halve. Cover and refrigerate until chilled.
  • Sprinkle deviled eggs with bacon crumbs.
  • Enjoy!

1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Chipotle Cream Cheese Spread
2 tsp. finely chopped fresh cilantro
1 tsp. milk
4 slices cooked OSCAR MAYER Bacon, finely chopped
1/2 tsp. smoked paprika

Steps:

  • Cut eggs lengthwise in half. Remove yolks; place in medium bowl. Mash with fork. Add cream cheese spread, cilantro and milk; mix well. Stir in bacon.

1 dozen hard-boiled large egg, peeled
1/2 cup mayonnaise
2 tablespoons finely minced pickled jalapeno peppers, drained
2 tablespoons chipotle chiles in adobo
1/2 teaspoon emeril's southwest seasoning, recipe follows
1 pinch salt
1/4 teaspoon smoked hot paprika, for garnish

Steps:

  • Slice the eggs in half lengthwise and carefully remove the yolks. Press the yolks through a fine-mesh sieve into a mixing bowl. Add the mayonnaise, jalapenos, chipotle in adobo, Southwest Essence, and salt to taste. Stir to blend well. Spoon (or pipe with a pastry bag) the mixture into the egg whites. Cover and chill for at least 1 hour. Sprinkle with the paprika just before serving. (If the paprika is added too early it will stain the eggs.)
  • Emeril's Southwest Seasoning:
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 tablespoons paprika

2 teaspoons Dijon mustard
2 teaspoons white wine vinegar
1 teaspoon chipotle chile powder
1/4 teaspoon garlic powder
salt, to taste (optional)
6 slices thick-cut bacon, cooked and chopped
smoked paprika for garnish

Steps:

  • Cut eggs in half. Arrange egg whites cut side up on a serving plate and put the yolks in a small mixing bowl. Mash yolks with a fork then stir in mayonnaise, mustard, vinegar, chipotle chile, and garlic powder. Mash and stir all ingredients together well. Stir in chopped bacon, reserving some pieces to garnish the top of the eggs if desired. Taste and add salt if necessary. I found that these were salty enough with the bacon added, but it depends on your taste. Spoon some of the filling into each egg white half, dividing the mixture as evenly as possible between the eggs. Sprinkle eggs with smoked paprika and garnish with bacon pieces. Serve immediately or refrigerate until ready to serve.

CHIPOTLE DEVILED EGGS
I’ve been making these for years and they have become a cocktail-party staple. The spicy tomato topping adds textural and visual pizzazz. Serve these with your favorite margarita for a perfect pairing.
Makes 24
1 dozen hard-cooked eggs
Filling
3 tablespoons mayonnaise
3 tablespoons regular or low-fat sour cream
1/2 teaspoon Dijon mustard
1 to 2 tablespoons chipotle chile purée (see tip)
1 teaspoon minced fresh garlic
1/4 teaspoon salt
2 tablespoons thinly sliced green onion

Steps:

  • Topping 1/2 cup small-diced tomatoes 1 tablespoon minced white onion 2 tablespoons chopped fresh cilantro 1 to 2 teaspoons chipotle chile purée (see tip) Halve the eggs lengthwise and transfer the yolks to a mixing bowl. Set the egg white halves on a platter, cover, and refrigerate. With a fork, mash the yolks to a smooth consistency. Add the mayonnaise, sour cream, mustard, chipotle purée, garlic, and salt, and mix until smooth. (You can also do this in a mixing bowl with a whip attachment.) Stir in the green onion. Spoon the mixture into a pastry bag fitted with a plain or large star tip, then pipe the mixture evenly into the egg white halves. Or fill the eggs with a spoon, dividing the filling evenly. To make the topping, in a small bowl, mix together the tomatoes, onion, cilantro, and chipotle purée. Top each egg half with about 1 teaspoon of the topping. Tip: To make chipotle chile purée, place canned chipotle peppers in adobo sauce, with the sauce, in a food processor or blender and purée until smooth. Freeze any extra purée for another use.

I really learned to appreciate Chipotles in adobo sauce during the ZWTII. I found this recipe in Bon Appetite Oct. 2006. It's a great take on your typical deviled eggs. Here's a "grate" trick I learned for grating the egg yolks...get a fine mesh sieve (not the very very finest, but a "regular" fine), put the yolks in the sieve and push through the sieve with a spatula. As the yolk pushes through, scrape the bottom of the sieve...continue until all the yolk is pushed through. Gently stir in rest of ingredients. It really made a difference! Enjoy!
