Number Of Ingredients 6

1 medium orange
1 package (12 ounces) fresh or frozen cranberries
1/2 cup packed brown sugar
1 cinnamon stick (3 inches)
1/4 to 3/4 teaspoon ground chipotle pepper
1/4 teaspoon pepper

Steps:

  • Finely grate zest from orange. Cut orange crosswise in half; squeeze juice from orange. Place zest and orange juice in a large saucepan. Add remaining ingredients., Bring to a boil, stirring to dissolve sugar. Reduce heat to a simmer; cook, uncovered, until berries pop, 5-7 minutes, stirring occasionally. Remove from heat., Transfer to a small bowl; cool slightly. Refrigerate, covered, until cold.

Yield Makes about 2 cups

Number Of Ingredients 7

2 dried chipotle chiles*
1 12-ounce package fresh or frozen cranberries
1 1/3 cups sugar
3 tablespoons fresh lemon juice
1 small garlic clove, chopped
1/4 teaspoon (generous) ground cinnamon
1/4 teaspoon (generous) ground cumin

Steps:

  • Place chiles in medium saucepan filled with water; bring to boil. Reduce heat to medium and simmer until chiles are tender, adding more water if needed to keep chiles submerged, 1 to 11/2 hours, depending on dryness of chiles. Drain.
  • Combine softened chipotles, cranberries, sugar, and lemon juice in heavy medium saucepan and stir over medium heat until sugar dissolves. Continue cooking until cranberries begin to pop, stirring occasionally, about 5 minutes. Stir in garlic, cinnamon, and cumin. Simmer until sauce thickens slightly and flavors meld, stirring often, about 5 minutes. Cool.
  • Remove chipotles. Stem and seed. Mince chiles and return to cranberry sauce; stir to distribute. Cover and chill. DO AHEAD: Can be made 1 week ahead. Keep chilled.
  • Can be found at specialty foods stores, natural foods stores, and Latin markets.

TURKEY TOSTADAS WITH CRANBERRY CHIPOTLE SAUCE

1 cup fresh or frozen cranberries
1/4 cup packed brown sugar
1 tablespoon chopped chipotle chili and adobo sauce
1/2 cup water
1 tablespoon vegetable oil
4 cups shredded cooked turkey
1 tablespoon ground cumin
1 teaspoon dried oregano leaves
1/2 teaspoon chipotle chili powder
2 cups shredded lettuce
8 Old El Paso™ tostada shells (from 4.5-oz box)

Steps:

  • In 1-quart saucepan, heat Sauce ingredients to boiling over medium heat. Cook 10 to 15 minutes or until cranberries have popped and sauce has thickened.
  • Meanwhile, in 10-inch skillet, heat oil over medium heat. Add turkey, cumin, oregano and chili powder; stir to mix. Cook 5 to 7 minutes or until turkey is thoroughly heated.
  • Heat refried beans as directed on can.
  • To assemble tostadas, spread each tostada shell with warm refried beans. Top with turkey, lettuce and sauce.

1 tablespoon adobo sauce, from chipotle chilies
1/2 chipotle chile, seeded,minced,to taste
1 cup sun-dried cranberries
1/4 cup brandy or 1/4 cup Bourbon
1/4 cup brown sugar
1/4 cup lemon juice
1 cup water
1/2 cup unsalted butter (for chip cra butter) (optional)

Steps:

  • Combine all ingredients in a saucepan and simmer 15 minutes, covered.
  • Turn off heat and let sit, covered for 15 more minutes.
  • Put ingredients in a food processor and pulse until desired consistency.
  • Texture may range from somewhat coarse to smooth.
  • Serve with turkey.
  • for chipotle cranberry butter: mix with 1 stick of butter and spread on your favorite cornbread or rolls.

3 tablespoons brown sugar
4 teaspoons ground cumin
4 teaspoons paprika
1 teaspoon salt
3 pounds pork baby back ribs, cut into serving-size pieces
SAUCE:
1 small onion, chopped
1 small garlic clove, minced
1 tablespoon canola oil
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/8 teaspoon salt
1/8 teaspoon pepper
3/4 cup fresh or frozen cranberries
1/3 cup water
1/4 cup orange juice
2 tablespoons brown sugar
1 tablespoon red wine vinegar
1 tablespoon molasses
1/2 teaspoon chipotle peppers in adobo sauce
1/2 teaspoon adobo sauce

Steps:

  • In a small bowl, combine the brown sugar, cumin, paprika and salt; rub over ribs. Transfer to a shallow roasting pan. Cover and bake at 350° for 1-3/4 hours. Drain fat from ribs., Meanwhile, in a large saucepan, saute onion and garlic in oil until tender. Add the ginger, cloves, salt and pepper; cook for 1 minute. Stir in remaining sauce ingredients. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until berries have popped, stirring occasionally. Transfer to a blender; cover and process until blended., Brush 1/2 cup sauce over ribs; bake 25-35 minutes longer or until tender. Serve with remaining sauce.

Notes: * I used dried chipotles from Central Market. I understand that you can probably use the canned Chipotles in adobo sauce if you rinse off sauce and obviously skip the rehydration step.

Steps:

  • Place chiles in medium saucepan filled with water; bring to boil. Reduce heat and simmer until chiles are tender, adding more water if needed to keep chiles submerged, 1 to 1-1/2 hours, depending on dryness of chiles. Prick skin if needed to submerge. Drain. Save liquid to thin out sauce if it is too thick for your taste. Combine softened chipotles, cranberries, sugar, and lemon juice in heavy medium saucepan and stir over medium heat until sugar dissolves. Continue cooking until cranberries pop, stirring occasionally, about 5 minutes. Stir in garlic, cinnamon, and cumin. Simmer until sauce thickens slightly and flavors meld, stirring often, about 5 - 10 minutes. Cool. Remove chipotles. Stem and seed. Mince chiles and return to cranberry sauce; stir to distribute. Cover and chill. DO AHEAD: Can be made 1 week ahead. Keep chilled. Taste the sauce before serving to adjust seasoning to your taste. I added a bit more cinnamon the next day when I served and thinned a bit with chipotle water.
