ROAST BEEF ROLL-UPS:
4 ounces cream cheese, softened
1/4 cup minced fresh cilantro
2 to 3 tablespoons minced banana peppers
1 garlic clove, minced
1/2 pound thinly sliced cooked roast beef
HAM AND TURKEY ROLL-UPS:
12 ounces cream cheese, softened
1/2 cup shredded carrot
1/2 cup shredded zucchini
4 teaspoons dill weed
1/2 pound thinly sliced fully cooked ham
1/2 pound thinly sliced cooked turkey

Steps:

  • In a small bowl, combine the cream cheese, cilantro, peppers and garlic. Spread about 2 tablespoons on each slice of beef. Roll up tightly and wrap in plastic. , For ham and turkey rolls, in another bowl, combine the cream cheese, carrot, zucchini and dill. Spread about 2 tablespoons on each slice of ham and turkey. Roll up tightly; wrap in foil. Refrigerate overnight. , Slice the roll-ups into 1-1/2-in. pieces.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 tsp. finely chopped chipotle peppers in adobo sauce
1 cup KRAFT 2% Milk Shredded Cheddar Cheese
1/4 cup chopped red peppers
2 Tbsp. chopped fresh cilantro
4 flour tortillas (8 inch)

Steps:

  • Beat cream cheese, sour cream and chipotle peppers until well blended.
  • Stir in cheddar, red peppers and cilantro; spread onto tortillas. Roll up tightly.
  • Cut each into 8 pieces to serve.

For chipotle sauce:
1 cup fresh raspberries or frozen unsweetened raspberries, thawed
2 tablespoons sugar
1/4 cup Ruby Port
1 drained canned whole chipotle chile in adobo
For Zuni rolls:
2 scallions
two 9- to 10-inch flour tortillas
2/3 cup coarsely grated Havarti (about 2 ounces)
1/4 pound thinly sliced smoked turkey breast
6 slices crisp-cooked bacon

Steps:

  • Make chipotle sauce:
  • In a small saucepan combine sauce ingredients and simmer, stirring occasionally, until sugar is dissolved. In a blender or food processor puree sauce and strain through a fine sieve into a bowl.
  • Make Zuni rolls:
  • Finely chop scallions. Arrange tortillas on a work surface and divide Havarti, turkey, bacon, and scallions evenly between them. Drizzle some chipotle sauce over filling and gently roll up tortillas.
  • In a lightly oiled skillet toast rolls, starting with seam sides down, over moderately high heat, turning them, until golden on all sides, about 3 minutes. Diagonally halve tortillas crosswise and serve remaining sauce separately.

I'm super addicted to anything chipotle, so I guess I shouldn't be surprised at myself for filling crescent rolls with it! I just had these for lunch and really enjoyed them. I hope you do, too!

8 ounces cream cheese, softened
1 medium chipotle chile in adobo, chopped very finely (from a can with adobo sauce)
2 tablespoons finely chopped fresh cilantro
2 green onions, thinly sliced or 2 red onions, would also be good
1 garlic clove, minced
1 (8 ounce) can crescent roll dough

Steps:

  • Mix together all ingredients for the filling.
  • Spoon approximately one tablespoon of filling in the center of the larger side of a crescent roll, and spread out just a bit. Roll up crescent roll beginning with large end, and press any seams together to keep in filling. Repeat with remaining crescent rolls.
  • Bake at 375 degrees Farenheit for 11-13 minutes, or until rolls are browned.
  • NOTE: A bit of cooked and chopped chicken added to the filling would be great! I had a tiny bit of filling left which I scrambled with eggs for breakfast -- you could also use two cans of crescent rolls and a bit less filling, or make a quesadilla for lunch tomorrow!
