CHINESE PEPPER STEAK
A delicious meal, served with boiled white rice, that's easy and made from items that I've already got in my cupboards! My mother clipped this recipe from somewhere and it became a specialty of mine; however, I've been unable to find the original source.

Steps:
- Slice the steak into 1/2-inch thick slices across the grain.
- Whisk together soy sauce, sugar, cornstarch, and ginger in a bowl until the sugar has dissolved and the mixture is smooth. Place the steak slices into the marinade, and stir until well-coated.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat, and place 1/3 of the steak strips into the hot oil. Cook and stir until the beef is well-browned, about 3 minutes, and remove the beef from the wok to a bowl. Repeat twice more, with the remaining beef, and set the cooked beef aside.
- Return all the cooked beef to the hot wok, and stir in the onion. Toss the beef and onion together until the onion begins to soften, about 2 minutes, then stir in the green pepper. Cook and stir the mixture until the pepper has turned bright green and started to become tender, about 2 minutes, then add the tomatoes, stir everything together, and serve.

QUICK PORK STEW WITH PEPPERS AND TOMATOES
This is a pretty, quick and tasty stew. I like to serve it over egg noodles and topped with parmesan cheese. If I'm in the mood for spicy and smokey, I add one or two finely chopped chipotles with some of the adobo sauce when I add the tomatoes.

Steps:
- Trim fat from pork and season with salt and pepper.
- Heat olive oil in a heavy bottomed pot over medium high heat.
- Add the pork and cook for about 3 minutes, turning until browned on all sides.
- Reduce the heat to medium, add the onion and peppers and cook for about 5 minutes, or until onions have softened.
- Add the garlic after the onions and peppers have cooked for 2 minutes.
- Stir in the tomatoes and bring to a boil.
- Reduce heat to low, cover and simmer for 30 minutes.
- Taste it once simmering and adjust the salt and pepper to suite you taste.
- Add the chopped basil and parsley, stir once and serve.
- Note: If using dried basil and parsley, add to the pot when you add the tomatoes.
- Enjoy!
PEPPER STEAK WITH ONIONS & TOMATOES
Delicious-ness in a crockpot! When I came home from work my house smelled so good and dinner was done and that is a great thing! All I had to do was make the rice! We loved this! So much flavor and even my green pepper hating DH ate every bite, no picking out the peppers! This recipe is definitely going into my dinner rotation!

- 1. Cut round steak in serving size pieces. Roll in flour that has been seasoned with the pepper and garlic powder. Brown in oil on each side. You don't have to completely cook the meat just brown it good. Place browned meat in slow cooker and put the rest of the ingredients on top of the meat. Cook on high for 4 hours or low for about 6 hours. I served over rice but noodles or mashed potatoes would be good too!
CHINESE STEWED TOMATOES AND PEPPERS

Steps:
- Coarsely chop the garlic, scallions and cilantro in a food processor. Scrape into a 14-by-11-by-2-inch ceramic dish. Stir in peanut oil. Cook, uncovered, at 100 percent for three minutes.
- Add the peppers. Cover tightly with microwave plastic wrap. Cook at 100 percent for five minutes.
- Uncover carefully and add the tomatoes. Re-cover tightly and cook at 100 percent for eight minutes.
- Uncover. Stir in the tamari soy, rice-wine vinegar and cornstarch mixture. Cook, uncovered, at 100 percent for four minutes. Stir in the sesame oil. Serve hot or cold.
