CHINESE ROAST PORK (CHAR SIU)

Chinese Roast Pork (Char Siu) image

Sweet, delicious roast pork. Recipe adapted from my chef's version at culinary school. If you follow all the steps, it's the best char siu you'll ever have. I am usually "lazy" and use the marinade on a pork roast, then glaze it at the end.

CHINESE ROAST PORK ON GARLIC BREAD

Chinese Roast Pork on Garlic Bread image

Chinese roast pork on garlic bread is one of the great New York sandwiches, a taste of the highest peaks of Catskills cuisine: thinly sliced, Cantonese-style char siu married to Italian-American garlic bread beneath a veil of sweet-sticky duck sauce. It's been around since the 1950s, a favorite of the summertime borscht belt crowd. You can make the sandwich with store-bought char siu if you like, but I prefer the homemade variety because I can make it with fancy pork from the farmers' market. It's also juicier and more flavorful. Then, layer the meat onto garlic bread, and add a drizzle of duck sauce - for that, I use leftover packets from Chinese takeout orders or make my own with apricot preserves cut through with vinegar. Some people add a slash of hot mustard; others fresh pickles, or coleslaw. "It's the ultimate assimilation crossover food," the food writer and erstwhile restaurant critic Arthur Schwartz told me. "That sandwich is a symbol of acculturation."

Categories     dinner, lunch, weeknight, sandwiches, main course

Time 1h15m

Yield 4 sandwiches

Number Of Ingredients 15

2 pounds boneless pork shoulder or butt
1/4 cup honey
3 tablespoons low-sodium soy sauce
2 tablespoons Shaoxing wine, dry sherry or sake
2 tablespoons hoisin sauce
1 tablespoon oyster sauce
1 teaspoon five-spice powder
2 jarred red fermented bean curd cubes, plus 1 tablespoon of the liquid from the jar (optional)
4 tablespoons unsalted butter, softened
8 garlic cloves, peeled and minced
4 large sub rolls, not too crusty or firm, or Italian- or French-style bread, cut into 4 (6-to-8-inch) sections, split lengthwise
1/2 cup apricot jam
Red- or white-wine vinegar, to taste
Chinese mustard, for serving
1 bunch scallions, trimmed and sliced on an angle (about 1 cup), for serving

Steps:

  • Cut the pork into 1-by-4-inch pieces (each about the size of a stick of butter).
  • Make the marinade: In a large bowl, whisk together the honey, soy sauce, wine, hoisin sauce, oyster sauce, five-spice powder and, if using, the bean curd and its liquid. Add the pork, and mix thoroughly, then cover, and refrigerate for a few hours or up to 1 day.
  • When you're ready to cook the pork, heat the oven to its highest temperature (not the broil setting). Line a large sheet pan with aluminum foil, and put a metal rack on top. Take the pork out of the marinade, and place it on the rack in an even layer. Reserve remaining marinade.
  • Slide the pan into the top third of the oven, and roast for 20 minutes. Turn the pieces, and roast until each piece is deeply caramelized on all sides and fall-apart tender, another 20 to 25 minutes, basting with the remaining marinade. (If the pork isn't as caramelized as you'd like, turn on the broiler to crisp the meat's exterior, 1 to 2 minutes.)
  • Turn off the oven, and transfer pork to a cutting board. Let the pork rest for 10 minutes, then slice about half the pieces lengthwise into thin strips about the size of thick-cut bacon. (Reserve the uncut pieces for future use, over rice, in stir-fries, etc.)
  • Make the garlic bread: Mash together the butter and garlic, and then spread across the sliced sides of the rolls or bread. Place bread directly onto middle rack in the still-hot oven to toast for 3 to 5 minutes. While your bread is toasting, prepare your homemade duck sauce by stirring together the apricot jam with vinegar, to taste.
  • Assemble the sandwiches: Spread mustard on one side of toasted bread, then duck sauce on the other. Add the sliced roast pork, garnish heavily with sliced scallions and serve.

CHINESE ROAST PORK (CHAR SIU)

Chinese Roast Pork (Char Siu) image

Provided by Robert Farrar Capon

Categories     dinner, weekday, main course

Time 6h45m

Yield Enough for several meals serving 3 to 4 people

Number Of Ingredients 10

2 pounds boneless lean pork (pork tenderloin, boned butt or shoulder, or boned fresh ham)
1 tablespoon brown bean sauce
1 clove garlic, minced
1/2 cup chicken stock or water
1 teaspoon salt
4 tablespoons sugar
1 tablespoon light soy sauce
1 teaspoon tomato paste
1/2 teaspoon five-spice powder
1 teaspoon sherry

Steps:

  • Cut pork into neat billets about 6 by 3 by 1 1/2 inches and place in bowl. Put brown bean sauce, garlic, stock, salt, sugar, soy sauce and tomato paste in small saucepan and warm, stirring until everything is well blended. Remove from heat and stir in five-spice powder and sherry. Pour sauce over pork; mix to coat all pieces, cover and allow to marinate in refrigerator for at least 6 hours, turning a few times.
  • Preheat oven to 450 degrees. Place a large shallow pan half full of hot water on the bottom of the oven (or on the lowest rack). Wipe top rack, which should be at least 7 inches above the water, with paper towel dipped in vegetable oil. Turn pork once more in marinade to coat well and place pieces directly on the rack, leaving spaces between them but arranging them so that the drippings will fall into the water (the water will also provide moisture during cooking). Bake 20 minutes.
  • Lower heat to 350 degrees and bake 10 minutes more. (For sweeter pork, brush pieces lightly during the last 10 minutes with 2 tablespoons honey mixed with 2 tablespoons marinade.)
  • Remove pork pieces from oven; if it will not be used immediately as an ingredient in one of the following dishes, cool, wrap and refrigerate or freeze until needed. To use, cut into pieces to match the dish you have in mind; for example, dice pork if dish contains diced vegetables.

CUBAN CHINESE ROAST LOIN OF PORK

Cuban Chinese Roast Loin of Pork image

Provided by Food Network

Categories     main-dish

Yield 6 to 8 servings

Number Of Ingredients 13

4 to 5 pound boneless pork loin, trimmed
1 bottle beer
Salt and freshly ground black pepper
1/4 cup orange juice
1/4 cup honey
3 tablespoons soy sauce
3 tablespoons sherry
2 tablespoons hoisin sauce
1/4 cup cooked back beans, mashed with a fork
2 tablespoons FiveSpice powder
4 cloves garlic, finely chopped
4 mandarin oranges or tangerines, peel and pith removed and cut into supremes
1/2 small bunch watercress, coarse stems removed

Steps:

  • Preheat the oven to 425 degrees. Place the pork loin on a rack over a roasting pan and fill the bottom with about 1-inch of beer. Season the pork generously with salt and pepper.
  • In a mixing bowl, combine the orange juice, honey, soy sauce, sherry, hoisin sauce, mashed black beans, fivespice powder, and garlic. Mix together well and coat the pork loin with this paste, rubbing it in well and using up all the mixture. Roast the pork for 15 minutes, then reduce the heat to 325 degrees and cook for 45 to 60 minutes more, basting every 15 to 20 minutes with the orange honey mixture. When the pork is thoroughly cooked (it should register 165 degrees on a meat thermometer, and the juices run clear rather than pink), remove from the oven and rest for 5 minutes. Transfer to a warmed serving platter and surround with orange segments and watercress sprigs. Serve immediately, slicing the loin at the table.

BONNIE'S CHINESE PORK ROAST AND DUMPLINGS

BONNIE'S CHINESE PORK ROAST AND DUMPLINGS image

I was craving Chinese food, so I thought I would try my hand at making a pork roast with all my favorite Asian flavors. I also wanted to make it in the crockpot. I paired the roast with steamed white rice, vegetables and pork dumplings. It turned out really good, and I am happy to share this recipe with my JAP friends! ...

Provided by BonniE !

Categories     Roasts

Number Of Ingredients 16

1 1/2 to 2 pound lean pork roast, trim any fat
6 large carrots cut into chunks
1 large onion cut into thick slices
1 cup snow peas
1/2 cup soy sauce
1 can vegetable broth
1/2 teaspoon chinese 5 spice powder
1/2 teaspoon red pepper flakes
1/4 cup dark brown sugar
2 tablespoons minced garlic from jar
1 tablespoon grated ginger
2 tablespoons sesame oil
1 can drained mushrooms or fresh sliced
1/4 cup chopped cilantro
12 to 14 frozen dumplings (also called pot stickers)
1/4 cup chopped green onions (garnish)

Steps:

  • 1. Wash and prepare the carrots and onions and place in the bottom of the crockpot and pour one can of vegetable broth over the vegetables. Add grated ginger, cilantro and garlic to the vegetables. Add mushrooms to the vegetables if desired.
  • 2. Place the meat on top of the vegetables. You may brown the meat if you wish. I chose not to. Pour 1/2 cup of soy sauce over the meat. Sprinkle the top with 2 tablespoons sesame oil. Sprinkle the Chinese 5 spice powder and the red pepper flakes evenly over the top of the meat, then do the same with the brown sugar. The meat will not be covered with liquid. (Don't wash off the spices or sugar) Cook on high about 4 hours, and low 1 to 2 hours. Test with meat thermometer. Time will depend on your crockpot and size of the roast. You don't want to overcook the meat. You want it just done enough so it will be firm enough to slice, or it will fall apart. Add the snow peas in the last hour of cooking.
  • 3. Fry 14 frozen dumplings (or pot stickers) in a little olive oil and sesame oil until golden brown, add 2/3 cup of water and put the lid on to steam them according to package directions. Set aside.
  • 4. Remove the meat to a platter and slice it in thick slices.
  • 5. Push the vegetables to the side of the crockpot and carefully put the cooked dumplings in the juices. Handle them carefully so as not to tear them. Then add the sliced pork. Let the dumplings and meat rest in the juices about 10 minutes on low to warm up and absorb the flavors, then serve immediately. Serve the sliced pork with the dumplings, white rice and the vegetables from the crockpot. Garnish with chopped onions.
  • 6. Dinner is served! Enjoy!

CHINESE CRISPY ROAST PORK (SIEW YUK)

Chinese Crispy Roast Pork (Siew Yuk) image

This can be served with a dipping sauce out of scallions, ginger, garlic, sesame oil and salt along with a side of rice. One other thing... the skin doesn't stay crisp in the fridge, so enjoy it all the night you make it.

Provided by Member 610488

Categories     Pork

Time 9h15m

Yield 4-8 serving(s)

Number Of Ingredients 7

1 (2 -3 lb) skin-on picnic-style pork roast or 1 (2 -3 lb) skin-on pork belly
3 garlic cloves, grated
2 inches ginger, grated (should be same amount as garlic)
1/4 teaspoon finely ground white pepper
2 teaspoons five-spice powder
1 teaspoon kosher salt
2 teaspoons oil

Steps:

  • Wash and dry your meat thoroughly. Score the skin in vertical lines about 1 inch apart as they will become the guidelines where to chop the meat once cooked.
  • Mash all the other ingredients together to make a paste. Smear the paste all over the roast working it into the skin and meat. Put the roast in a pan that will let the fat drain through (a wire rack over a baking sheet will do in a pinch), and place in refrigerator covered overnight.
  • When ready to cook, preheat your oven to 450 degrees F, and when hot enough, stick the pan in the over for 30 minutes.
  • After 30 minutes, the skin should just be turning brown (if it's getting too dark, turn down the heat sooner). Reduce the heat to 250 degrees F and let it roast for about 8 hours. You'll know it's ready when most of the fat has rendered out and the meat has started pulling away from the bone.
  • When it's ready, take it out of the oven, transfer it to a different pan (you could do it in the same pan, but the fat that's collected in this pan will smoke and set your smoke alarms off). Put it back into a 450 degree F oven to crisp the skin for 15-20 minutes. The skin should be puffed up, crisp and golden brown.
  • Take it out of the oven and let it rest for a bit. You'll probably want to take the skin off and break it up by hand, slicing the slabs of tender pork separately.

CHINESE ROAST PORK

Chinese Roast Pork image

This is a very easy dish to throw together, as once you have combined all the ingredients, it is just the marinating of the pork that takes the time. I tend to marinade mine in the morning before work but it can also be marinated overnight if preferred. I served ours with vegetable and egg fried rice but feel free to serve it with whatever you like. Prep Time does not include marinating time.

CHINESE-AMERICAN PORK ROAST

CHINESE-AMERICAN PORK ROAST image

Categories     Pork

Yield 8

Number Of Ingredients 11

1/4cup vegetable oil
4 ginger slices
3tablespoons brown sugar
4 1/2pounds pork shoulder (boneless, trimmed of skin and fat)
1 onion, sliced thinly
1 shallot, sliced thinly
2 green onions
4 garlic cloves, chopped
6-8 shiitake mushrooms (other types can be substituted)
1/4cup sweet rice wine (shao-xing wine, dry sherry or sake can be substituted)
1cup soy sauce

Steps:

  • An important first step is to tie the pork shoulder roast. This will help keep the meat from falling apart. You can ask your butcher to do this for you. Using a long knife, insert knife into pork shoulder in several places all around roast. This will help the marinade penetrate the meat. 2. In a large Dutch oven (or heavy oven-proof pot with a lid) heat the cooking oil. Add ginger and brown sugar and sauté for 1-2 minutes. This flavors the oil and melts the sugar. Add the pork shoulder and brown it on all sides. Remove pork from pot. 3. Add onion and mushrooms to pot. Saute until onions are soft and slightly browned. Add garlic and sauté briefly, then wine and soy sauce. Heat and stir to mix. 4. Return the browned pork shoulder to the pot. Turn pork over to coat well with marinade. Pile mushrooms and onions on top. 5. You can continue straight to roasting here, but letting the pork sit in the refrigerator 3 hours to overnight will help the flavors penetrate the meant. Turn occasionally if you can. Let refrigerated pork roast sit at room temperature for 1 hour. Preheat oven to 300 degrees. 6. Cover top of pot with foil and cover with lid. Roast for 3-3 ½ hours. Check the roast once every hour and turn it over. Baste the roast with juices that accumulate in pot. 7. For a crustier outside layer, remove pot from oven and turn up the oven to 400 degrees. Transfer roast fat side up to sheet pan lined with foil. Take 3 Tbsp of juices from pot and combine with 2 Tbsp brown sugar. Spread all over top of roast and return to oven for 15 minutes until sugar has caramelized, but not burned. 8. Let roast rest out of the oven for 15 minutes before serving. Decant sauce to fat separator or smaller bowl to remove fat, if desired. Remove roast to serving platter, cut and remove strings, then cut meat into thick slices across the grain of the meat. Drizzle roast pork with sauce and serve extra sauce along side. Serve with white rice.
