MILK CANDY NOUGAT
Chinese Milk Candy 牛轧糖 is a popular Lunar New Year treat. Just three ingredients easily makes this chewy nougat candy in minutes.

Steps:
- Use a rolling pin to crush the peanuts inside a ziplock bag.
- Thoroughly grease the inside of a large mixing bowl.
- Add the marshmallows to the bowl and microwave for 1 minute.
- Working quickly, mix the whole milk powder completely into the melted marshmallows with a silicone spatula.
- Add the crushed peanuts and mix until incorporated. The mixture is hot and sticky. Vegan marshmallows may require kneading the peanuts into the marshmallows by hand.
- Transfer the mixture onto one half of a sheet of parchment paper. Fold the parchment in half over the nougat.
- Use a rolling pin to flatten the candy to ¼- ½" thickness.
- Firm at room temperature overnight or in the refrigerator for about an hour.
- Cut into rectangles (about ¾" x 1 ½") and wrap in candy paper or foil.
- Store at room temperature in an airtight container for up to 2 weeks.

- In a heavy saucepan, combine chocolate and butterscotch chips. Melt, stirring constantly over low heat.
- Remove when melted and add chow mein noodles. Add cashews or peanuts. Mix quickly to coat Dip out tablespoons onto wax paper. Cool. (Can also melt chips in the microwave.)

- In a medium bowl, cream together the sugar and shortening. Stir in the egg and vanilla, beat until light and fluffy. Combine the cake flour, baking soda and salt, stir into the creamed mixture. Dough will be stiff, you may need to use your hands to mix. Roll dough into a log about 15 inches long, and roll in the ground nuts. Wrap and chill dough for at least an hour or until firm.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Unwrap dough and cut into 1/2 inch slices. Place cookies 1 1/2 inches apart on the prepared cookie sheets.
- Bake for 10 to 15 minutes in the preheated oven. Allow cookies to cool for a few minutes on the baking sheets before removing to cool completely on wire racks. When cool, place a dollop of fudge icing onto the center of each cookie.

- Preheat oven to 350°F. Butter a 10- by 2-inch round cake pan. Line bottom with a round of parchment paper and butter the paper.
- Put chocolates in a large shallow bowl. Bring water, 1/2 cup sugar, and spice to a boil, stirring until sugar is dissolved, then pour through a fine sieve set over chocolates. Stir until smooth, then stir in butter until smooth.
- Beat eggs with remaining 3/4 cup sugar until increased in volume and pale and beaters leave a distinct trail (4 to 5 minutes in a standing mixer or 15 to 20 with a hand-held). Stir 1/4 of eggs into chocolate to lighten and fold in remainder gently but thoroughly (fold 1 to 2 minutes).
- Pour batter into pan and smooth top. Put pan in a water bath and bake in middle of oven 40 to 45 minutes, or until a tester inserted in center comes out with moist crumbs adhering. Remove from water bath and cool 2 hours in pan on a rack.
- Unmold cake by running a thin knife around edge, then heating pan 5 to 10 seconds on burner set at moderately low. Invert cake plate over pan and flip cake onto plate. (If cake sticks, tap bottom of pan with a knife handle. If that doesn't work, heat pan again.) Peel off paper.
- Serve cake in thin slices.
