CHINESE CHICKEN BITES WITH DIPPING SAUCE

Steps:
- Combine ingredients-chicken through pepper- and mix well. Pour about 1/2" peanut oil in a heavy skillet. Heat to medium high heat. Drop chicken mixture by teaspoonfuls into hot oil. Reduce heat to medium-low and fry the chicken bites for 5 to 6 minutes or until golden brown, turning once. Drain on paper towels and serve immediately.
- In a small saucepan, saute scallions in the sesame oil for 2 to 3 minutes. Add the rest of the ingredients and simmer until flavors are incorporated. Simmer for about 5 to 10 minutes. Sprinkle in the flour and stir well. Adjust seasonings to taste. If the mixture is too thick, add a little hot water to make desired consistency.

- Mix soy sauce, sesame oil and garlic; toss with chicken. Refrigerate, covered, at least 1 hour., Spread cream cheese onto a large serving plate; top with sweet-and-sour-sauce, spinach and chicken. Sprinkle with green onions and peanuts. Refrigerate, covered, at least 2 hours. Serve with crackers.

CHINESE CHICKEN DUMPLINGS WITH DIPPIN' SAUCE
These are time consuming but so yummy. The recipe makes a lot. You can freeze the dumplings and cook them at a later time. I could not find round wrappers so I used egg roll wrappers and cut them into rounds with cookie cutter.

Steps:
- 1. Place first four ingredients in food processor and process until fine. Drizzle in the olive oil.
- 2. Mix the ground chicken with the mushroom mixture and add soy sauce and sugar.
- 3. Put some water in a small bowl. Lay our dumpling wrappers and wet the edges. Place a small amount of chicken mixture in center fold in half and pinch to close. Repeat until all dumpling wrappers are used.
- 4. Boil a large pan of water. Carefully drop the dumplings in the water. When they float to the top carefully remove with slotted spoon.
- 5. Place canola oil in large skillet. Brown each dumpling in oil and remove to a serving plate.
- 6. For the sauce mix all ingredients together. Taste and adjust seasonings. Serve with dumplings .
- 7. Tip. I couldn't find round dumpling wrappers so I used egg roll wrappers and cut out circles with cookie cutter.
CHINESE MINUTE CHICKEN BITES
This is a similar recipe that our local Chinese restaurant has on their menu. It is so delicious over cake noodles.

Steps:
- 1. Cut chicken into bite-sized pieces.
- 2. Coat with flour, let stand for 15 minutes.
- 3. In a large skillet, heat oil and garlic, do not burn the garlic or it will be bitter.
- 4. Add the chicken pieces and stir-fry until browned.
- 5. Lower the heat and add the remaining ingredients.
- 6. Garnish with additional Chinese parsley.
MANDARIN CHICKEN BITES
A very impressive cold appetizer. The color of the oranges and spinach really brighten up a buffet table. My guests loved this appetizer and devoured them all. Adapted slightly from a Creme de Colorado cookbook.

Steps:
- Cut chicken into 1-inch cubes.
- In a 10-inch skillet, combine chicken cubes, broth, soy sauce and Worcestershire.
- Heat to boiling over medium heat; cover, reduce heat, and simmer until chicken is fork-tender (about 10-15 minutes).
- With a slotted spoon, remove chicken from broth and let cool slightly.
- Place spinach leaves in a colander.
- Pour boiling water over leaves.
- Drain and set aside to cool.
- Place a cube of chicken at stem end of a spinach leaf and wrap leaf around chicken so that chicken still shows on sides.
- Secure end of leaf with a wooden pick.
- Refrigerate at least 1 hour.
- (Recipe can be prepared up to this point one day ahead.) To serve, place one mandarin orange at the end of each wooden pick.
- Serve with Curry Mayonnaise Dip (recipe follows).
- Curry Mayonnaise Dip: Blend all ingredients and refrigerate to allow flavors to mature.
